My mom cooked southern dishes all my life, holidays dinners were huge and wonderful! Back in 70s we were invited to my brother's new inlaws for Christmas & I've never forgotten it. They made lamb leg with rice dressing. The lamb was gamey, greasy and tasted horrible & the rice had a musty flavor and dry. I tried to slip my plate under the table for their dogs 🐕. They sniffed it & backed away lol! Since mom didn't cook that day, she made Christmas dinner on the 26th... that was the year my mom saved Christmas 🎄! IMHO you can't beat good ole down home southern cookin... the more butter the merrier! 🧈 Luv ya Ma! ❤

I love this variation of broccoli casserole because it's out of the ordinary. There are hundreds of recipes for broccoli casserole but this one stands out and has become one of my favorites. Served it for Thanksgiving and it was a hit! Thanks for sharing Jill's recipe, Paula! ❤

I love the crisp bite that water chestnuts give to a dish, but no one else in my family will eat them, so I'm going to make this casserole and slip some in one corner just for me! lol If Paula can sneak a bit out, I can sneak a bit in!

I like my mushrooms raw and crunchy if possible. I would probably add it at the end prior to baking. I like more substance like breading or eggs added and a topping of fried crunchy onions

The thing in velvetta that keeps sauces and cream sauces from breaking is sodium alganate... derived from seaweed.....I learned this from a mac and cheese recipe in my times..I used to buy the 1 oz blocks cant get it anymore ..even for chowders or cream soups ..it is processed cheese but its creamy and a good addition I think. Plus it stays good forever.

I sort of made Paula's broccoli casserole from a few days ago. Except I didn't have broccoli and I didn't have canned cream of mushroom soup. Instead I had a package of frozen kale that had been in the freezer for a some weeks that needed to be used up. I used that and canned cream of chicken soup instead. It turned out really good.

Velveeta actually savealot brand and cream cheese can of cream of chicken minus the chicken chunks. And shredded cheese mixed in rice lots and lots of broccoli finally chopped. Every family has their own spin on recipes. That is why cooking is so fun. Loved this video of u talking and cookin

I am shocked Paula does not know how to steam broccoli. She boiled her broccoli it was not steamed like she said. Steamed means putting it in a steamer container with boiled water under the basket. She boiled away all the nutrients. And her digging in her ears is disgusting.
