I have been making this for years, but a little differently. 8 eggs, 1/2 cup milk. Butter bottom and sides of 9 x 13. Pat In the 18 oz. hash browns; 1 cup mild cheddar, spread evenly; veggies and sausage over that; another 1/2 cup mild cheddar and 1 cup mozzarella on top; pour beaten eggs and milk over evenly. Bake 350° for 45 - 60 min. The butter makes a crispy hash browns crust, the additional eggs makes it raise higher and it can be cut in squares. Make the day before, cover and fridge. Put in oven, then turn it on. When it comes to temp, start timing. Center is set, it is done.

I've made something similar to this. I use a cast iron skillet (was my Grandmother's). Yes! agree about the peppers, green ones are not near as sweet as the yellow, orange and red. I have not tried it yet, but have often wondered about adding small drop biscuits to the top.

I do this every Christmas morning I have a large family so do 2 9x13 pans one with bacon and one with sausage use hash browns in one and tater tots in the other a pan of biscuits to go with it and everyone is happy , Merry Christmas to you and your family

For this casserole, I would use ground beef instead of sausage. I would also add some chopped bacon with the cheeses.

Made this today! Will not make it any other way now. Out with the bread bottom and on to hashbrowns! I put half a stick of butter in my dish and melted it (like the peach cobbler) I really think that gave the hash browns a kick..also no rolled sausage to be found right now so i use kielbasa and it was just fine. 🤗🤗🌞🌞

Yes, on the peppers the red and yellow are better than green, the green bell peppers are too strong.

I'm surprised that this recipe only contains 4 eggs.. I was thinking that 6 would be reasonable for this dish. You don't have a weird mouth when it comes to the cilantro! My daughter loves it, but whenever she used it I couldn't eat because I tasted soap too. Did some research and found out that there are certain people that have the same reaction. Seems that we have a genetic chemical reaction to it and it's fairly rare. I am able to tolerate the freeze dried cilantro in small amounts. So now whenever my daughter wants to use cilantro she either uses freeze dried or I plan on eating something different.

i am making my own on my own....I used garlic and salt and pepper and mild cheddar....I am just hoping my potatoes don't taste like green beans. I had to use the small potatoes out of my Easter green beans frozen in the freezer. I thawed them out and peeled the peelings off.. Then, I chopped them up. I just hope I have masked the green bean taste. Lol

I love green peppers. I also love cilantro. I have heard people say cilantro taste like soap. It doesn't taste like soap to me at all. I don't eat soap but what I think soap tastes like. 😀 I wonder do people who don't like cilantro also not like green peppers. 🤔

Personally, I would use diced potatoes for this dish because I feel that the shredded would just melt and disappear. I would like to see the potato. If using fresh, parboil for five to eight minutes, drain well, and continue on with recipe.

Fun fact.... green bell peppers are peppers that have not turned into red or yellow peppers, which are sweeter. Green bell peppers are more abundant in stores, because they're more abundant. That's a huge 1lb of sausage!!! Yah

I'm with you! I hate green bell peppers! But I love the yellow, red, & orange ones! There is definitely a difference in taste! The green is picked before maturity & is bitter. The flavor & color change as they mature!
