I use BBQ gloves while getting jars in and out of the canner. The one's I have are black with red silicone stripes for having a great grip. They're really fantastic when you're hot packing your jars. I found mine at Lowe's.

I was in the process of de-boning 20#'s of chicken breast when I came across this video. Found them for$4.59 per 10# bag. Boiling the bones, will strain, defat and can that for broth. Love home canned chicken thighs, tastier than breasts.

I canned whole b/s thighs in quart jars. I opened a jar that siphoned a little. I had stuck it in the icebox. It’s so good! I took a little out and put it on top of my salad. 🤤🤤

WOW! That was a great price for b/s thighs! I got some bone-in thighs and legs for $.79/lb, as well as pork butts for &.88/lb, so will be canning those. Hopefully, bscb will go on sale for $.99/lb soon. It's been a while since they have been below $1.99, which is still a good price.. That mustard broth sounds divine! Thanks for all you do and share with us!

It is now recommended to allow 1 1/4" headspace for raw packed chicken. This may help the siphoning problem.

Just because I'm learning.....question.. does the gasket HAVE to be written side down or up? Does it matter? I use Harvest Guard lids and gaskets and love them. Using your method of marking the gasket with each use and love it as well.

I put it facing towards the jar down so when I take the lid off I can see how many times it's been used it really doesn't matter though

Yes Homestead Heart…Mrs H….she gives a fabulous recipe for Hawaiian Teriyaki Chicken Thighs bone-in…..I made the Teriyaki Sauce and canned six pints last week……and with some sauce left over I mixed it with a Turkey Breast that I baked in my Instant Pot and sliced up into sandwich portions and froze…..so do look up her videos, she is so knowledgeable and funny as h-_ll….🥰👵🏻

I do this, down and dirty. Shove them in the jar, salt maybe, liquid maybe. Done. I don't cut up the thighs at all unless absolutely necessary. They are so good. We use them at triple the rate of breasts.

I tried to post a video to Sutton's Daze Friends. Only the second part posted. So the information I wanted to really say was lost. But I learned years ago from Katzcradle if you have protein stuck to glass use cold water to release it. So when I empty my Ungly Chicken jar I run super cold water in the jar. Then I come back after I have fixed my meal, empty the jar, run a little hot water in and rub a bottle brush around and the jar is clean is seconds. Maybe you could do this is one of your viedo and show people how easy it is.

Have the tatters lasted and worked well? I bought harvest guard lids ,I guess he was son of rattler guy , I ordered when it got so hard to get jars and lids..so I'm hoping they work as good as it's said.. I bought a Pry-a-'lid I bought off ebay, love that thing ,it saves your lids and keeps them in shape.

Can you show the inside of the canner. I put 3 inches of water yesterday and then put in my jars. It seemed like it was too much water so I took water out. Then it took an hour to get steam. It was my first time to can ever. I’ve been watching you for years.

It is 2023 would you believe I just bought 6o lbs of legs and thighs for .69 cents per lb. I had it before so I knew it was delicious. It came with the backs, but I love cutting the backs off and two are a meal for me I am a bone picker. I eat every morsel of meat the poor animal gave to me. I am a Cherokee and we revere every ounce of meat for the animal. If I knew how delicious canned chicken was, I would not have waited so long to start. As always GREAT video. Thank you.

Im a little confused. If you raw pack and you put broth in until 1inch headspace, wont the headspace be off when the meat gives off its own juice?

You might have a little syphoning but very often you don't have any on the chicken breast I had no syphoning on the thighs I had very little

I cut up chicken and most meats with kitchen scissors and don’t have to use a knife. The ones at Walmart that come apart for cleaning are wonderful

I am learning. I have an All-American Canner. I have and will be watching your videos as well as the other ladies. I wonder if your "jiggler" is moving a lot through the canning process or just 4 or 5 times a minute? Sometimes my jiggler is just a movin'. Is that ok? I always have pressure. I tried canning chicken thighs one time. I did 4 pint jars with a little broth added. 2 of them sealed, 2 didn't. There was grease all over the jars and inside the canner. What a colossal mess! I don't know what went wrong, but I doubt that I'll ever do thighs again. I have no trouble with chicken breast, hamburger, stews, etc.

Question: I have an American canner. Mine says to have 2-3" of water. This allows room for steam which is what pressurizes the canner. Did I see your water to the top of your jars?

I've done thighs bone-in skin on several times....2 thighs to a pint jar and only leave skin on one thigh (my preference) and add a little water or broth of choice. Bone-in in pint jars only requires 65 minutes processing time.

@@TEXASdaughter I've only canned legs in pints. 3 or 4... Really depends on size of leg. I had to break off the end of bone to get some of them in the jar (I saw another youtuber do it). I also canned legs and thighs together.

I usually can bone in chicken thighs but I will look for boneless to go on sale and gets some of those on the shelf. How do you can your hamburger? Do you do burger raw pack or par cooked? Can we get some cooking videos to go with them, taco some or chicken tortilla soup? I loved the ugly chicken videos! I have the old tatler lids too.

Par cook (2/3 done) ground meats otherwise they turn into hockey pucks and may have density issues that make them unsafe. :)
