Tonight, I am canning corned beef and potatoes. Aldi had the beef for between $12-$15 a package. I fill my pantry with a years worth. It is so delicious for breakfast.

Canned chicken in bone broth and survived…lol. Thank you for your video on pressure canning chicken. I opened a can after 24 hours to see how it tasted. It is soft like long cooked chicken but tasty. So nice to be able to put jarred chicken in my pantry.

Bonnie Johns Northern California, Sonoma county. I just picked up bone in chicken breast $ 1.47. I de boned 28 lbs and put them in pint jars hot packed. I just got my pressure cooker canner presto The big one. I'm so glad I found you, I would never have had the balls to pull this off with out you 😊! Going back for more Chicken breast tomorrow. I just canned butter in the 1/2 pint jars, 20 jars, 8 lb. butter. I bought 3 cases since that's all there was. No pints, just regular mouth quarts. Maybe 10 cases of those. 2 flats of wide and regular lids. Every time I see them I pick up a couple so I've got a good stash. That's called preparing, not hoarding. I'd like to say the off season of canning is why there aren't jar but I can't. My store always had a ton no matter the time of year. Think I'll be checking every time I go from now on. I canned chicken thighs I bought at Sam's. .98 a pound. I left the bones and shin on. Marked the jars for soup. should have a lot of flavor with bones and skin.

I do the same, I put about 4 Tablespoons of bullion water in my 1 Gallon jars. I like the flavor and it gives just a bit more liquid as well.

The chicken in small jars is a good idea for sandwiches. I think I would also use them IN CASE things deteriorate to the point that pet food is impossible to get or in a pinch. The small jar is more than enough to keep my Ragdoll cat from standing on me and screaming in my face for food in a pinch! Alot of people have said they are having some difficulties right now finding certain pet foods. I could never deal with having to make my pets go hungry. I know it's silly, but I just couldn't. Even though my girls are still at home (they are 22 and 19), the small jars are great because they are in and out to school or doing whatever kids do! I was making too much food for awhile because it was portioned out for 4 and then someone or two someone's wouldn't be here for dinner. Or one wants tuna salad and the other wants chicken salad etc. Small jars will allow them to make up something quickly, without making a huge mess or waste! God Bless 🥰

Now that lids aren't so scarce I'm back to canning in half pints too. I'd given that up as 'frivolous' during the shortage but those large jars of meat are just too hard to get through for only two people. I've even been doing pork and beef cubes in this size too. You had some very clever flavoring ideas, thank you for sharing the inspiration Linda.

I love canning in half pints. For the two of us, it is perfect for two hot bbq sandwiches on a bun for lunch. I do beef, chicken and pork. I found rump roast to can this week for 3.99 pound at Winn Dixie (NE Florida).

I was able to get whole chickens for $5, so I am working the prep today while I have a full canner of barbeque chicken processing. But I wanted the rest of it for just chicken in half pints. So perfect for sandwiches or a small meal like you mentioned. So I was so happy to see your video on doing this very thing. Thanks again. Half pints are the way to go for quick meals for one person. I do teriyaki or butter chicken this way as well since you serve it over rice so you don’t need too much chicken

I canned 1.89 chicken breast And similarly priced breakfast sausage 2 weeks ago , 24 pints of each. I think that's my most recent canning project. But we've been eating what I've canned - made 2 big cranberry coffee cakes with jarred cranberry sauce I canned in December. Chicken salad with my canned chicken and for one breakfast last week I served home canned potatoes with breakfast sausage.

When you think about it , if you eat one jar a week you have nearly a year's worth of chicken or sausage. Now, combine that with canned ground meat and roast chunks and the like and you become pretty protein secure. People who are alone tend to get frustrated with the waste and suffer food fatigue eating the same thing all week. This could be a game changer. I have been hitting up thrift stores for canning jars. Usually .25 each.

I ad water to mine too. I also ad a 1/2 tsp of bullion. I lucked out & got bone in chicken breasts at WALLY'S for $1.32 #. They were the same day date. I came home & jarred them up the next morning. Cooked bones & made broth with that. Then used the broth to make chicken veggie soup with half of it. Had 3 qts & 1 pint left of the broth. Processed that today. Thanks so much. I enjoy your videos.

I've been canning LOTS of half pints. Spinach, meats, beans... everything. It's my favorite size to can and I have a lot of quarts that are sitting untouched. A little goes a long way.

Prices are increasing every week. I've been fermenting this past week. I have plenty of canned meats but I'm going to ferment asparagus for salads for Easter.they were .79 cents per pound. Limit 3. The Ball Blue Book reads (in hot jars) to ladle hot water or hot broth to 1-inch head space for raw pack chicken. Just a little more effort than the no-liquid method of the NCHFP, but I have always preferred the final results.

Great video ! I canned up a bunch of chicken last fall in quarts family of 5 here. I like the idea with the spicy stuff in smaller jars though as we have a couple that can't hack the heat. I just finished my second batch of navy beans about 45 minutes ago so its time to take those out of the canner.

We are two seniors and don't need huge quantities so I always like small jars. ( We don't eat the same thing always) I was getting stumped when canning, recipes always give the times for pints or quarts. I never knew if I had to adjust the time. Chicken is good for salads, in pasta, curry, soups, sandwiches, Chilli, etc.

I found 1/4 pints that are perfect for me. They great size one person and can used for sandwiches , noodles, shelf salads and tastes so much better then the canned meats. The flavors are much better. And canned meatloaves in 1/2 pint and wide mouth pints. For the garden season ahead. Just reheat and mashed potatoes and canned veggies.

Most of my canning of meat is in half pint jars. I usually will load 6 to 10 half pints, and maybe a couple full pints. It's a great for 1 or 2 people.

Be brave Robin you can do it. I am 61 and just started a year ago. My first project was water bath strawberry pie filling. Went to use and every jars contents covered in mold. I got a pressure canner and started canning meats. Never looked back! Go for it!

I have always wondered if one could can in 1/2 pint jars. That is all I need but I've never found any information in all my research to state that it is safe. I think I was more worried about the jars being pressure canned for so long because I just always associate those smaller jars with jelly and jam so hot water bathing. Yesterday at Sam’s Club, we paid $2.98/Lb. For some nice chicken breasts. They are the nicest I have seen in a couple of months. A 2 lb. Top round last was $6.48, and 90/10 ground beef was $3.98/Lb. I am canning it all. Today I did some of the chicken in half-pints with chunky salsa.
