Love the way you make the bacon without the "pink salt", that's what they call it over here. When I finally give it a shot, that's the traditional way I want to do it. Never heard of apple syrup, will have to search for that. Looks incredible, and the sandwich has me drooling, great job as always!

if you let it cure 14 days you will get more flavor into the meat. 7 days is just the minimum to get the belly properly cured.

I couldn’t agree more...no need for pink salt. Whenever I’ve made corned beef it is nitrate free. Sure, it doesn’t stay pink, but it still gets eaten quickly! Good luck with the new barn. It’s looking nice.

Some folks like bacon extra crispy. The bacon will burn because of the sugars in the brine. Have to cook at a lower temperature to get the bacon crispy without burning or less sugar in brine.
