Used to make wine, lager, bitter and stout using the youngs kits from boots when I was 17yo back in the 80s in my bedroom it used to smell like a brewery. I used glucose powder instead of sugar as it takes away that homebrew taste.

Merry Christmas, mate. I've been making wine and beer for 20+ years - If you need any advice, feel free to ask. It's a cracking hobby and very rewarding. My all-grain beers are particularly impressive. With wines, I find that in general, the more you pay, the better the kit.

Hi there, I don't know if you can help. I've made my first ever batch using Young's kit and Bigger Jugs fermentation equipment. I have added the finings etc and 36 hours later the wine is clear but has a LOT of sedimentation at the bottom. Is this normal?

Do you have any tips for improving the mouthfeel/body of cheaper red wine kits? They're always quite watery and nothing like shop-bought wine? I've just got another kit (a 30-bottle Solomon Grundy one) and I've soaked 500g of raisins overnight, rinsed them off, blended slightly with a hand blender to chop them up a bit and added them to the fermenter just after I pitched the yeast...I've heard these can help). I'd love to hear any other tips you might have though?

I started using a blow off tube instead of an airlock. I made my own that use L bends so the tube comes out of the top of the demijohn at a right angle, all very smart if I say so myself! Each batch is being done better than the last. 🙂

I found finings to be so effective it wouldn't matter if it was stirred, but it needs to be degassed _somehow_ before finings is added.

Yes understand what you mean. It was a little tricky to get right. Prob better if you blended an aged wine.

I stopped drinking 6 months ago Fred, this was the first Christmas alcohol free, I was getting a bit silly mate, those 29 bottles you made and drank over months, for me at the point I was at would have taken me about 2 weeks to finish, I would probably have had 4-5 bottles every other day, one bottle strait after the other, as I was a rather bad Binge drinker. Very interesting video though mate.

cor fred you are a man of many talents ! I love your recommendation for 'bigger jugs' - i will be sure to try out bigger jugs ! Sorry to hear about your premature eruption. I enjoy a nice bottle of chianti, but being the bad person i am do enjoy a 'blue nun' once in a while :D

Thanks for the great tutorial I made my first wine batch a week ago with very poor results. it never mentioned in the instructions to add sugar maybe I am being thick because what I have in affect is alcohol free wine.

Hi. Yes without sugar you will have very little fermentation. Surprised it was not in the instruction.

I've had one of these kits since Christmas and I'm going to start it next week. Do you know if you could repeat the process but with adding fruit into the jug along with the sugar? I have rhubarb growing in my garden and if I can simply add some to the mix then I'd love to try it! Thanks for uploading this, very informative!

Fred: i would NEVER fill the brew barrel as full as that for the first two-three days, two thirds full allows for fermentation to froth up and not come over the top of the barrel. After it has settled a bit add warm water to the correct level. It will save you being in the dog house. Don't worry about air affecting the wine, it will replace it with CO2 in no time. After it calms down a bit top it up and it will ferment in no time. You are making it the expensive way though by buying the full kit. You can but the concentrate, finning. yeast, and any other additive you want separately, half the cost. You can use baby's bottle steriliser fluid to clean everything. A very good tasty wine to try making is Elderberry. Blackberry is also very good. Using concentrate is quicker. But don't fill the barrel to the top for the first two three days .EDIT: You also get a bigger air lock for barrels, that looks like one for a demijohn, barrel ones are almost twice the size but will still fit the rubber bung, it holds more water with less risk of the water being thrown out by the co2

Nothing can beat a blow off tube IMO. Then it can overflow as much as it wants - assuming you have the tube going into a big enough container to catch the amount of froth.

what happens if the water you pour in at the beginning is too hot? will it effect the fermentation.

I think thats where you end up. The kits a great for people starting out though.
