As a quick note on water chemistry, check your city's tap water quality report for if they use chlorine or chloramine for disinfection, if they use chloramine instead, letting it stand overnight will not cause the chloramine to evaporate which can cause all kinds of problems down the line!

If you grind the grain less it will be naturally clearer.. in Japan, Saké is graded by how finely ground the rice is for instance. I never grind anything, cause the yeast can get the nutrients by soaking stuff in enzymes, IE through osmosis. Natural spring water is probably the best water to use, but distilled water will give it a clearer, more "bright" look. Any dissolved solids in the water the yeast can't process will stay dissolved and cause it to be more murky. Yeast is active in the refrigerator, just less so and it also behaves differently. Lager, for instance, is beer fermented at a cooler temperature, which leads to a less "fruity" taste.

so they do not seem to be to concerned with dripping the sanitizing liquid into the fermenter. So I can guess that , thats OK ? I see when they are pouring into the fermentor and adding the airlock that its dripping from there glove.

We have two. Frigidaire and NewAire. Only the frigidaire fits a carboy AND a keg. I took dimensions and a tape measure to home depot and picked the one that would work the best.

You need to have it tested so you know the mineral content of it. Or just don't bother with water chemistry. If the water tastes good it will probably make good beer. Alternatively, you could get a reverse osmosis system which removes all minerals from the water (some RO systems come with a module to re-mineralize the water, you don't want to use that bit). Then you have a blank slate to add minerals to.

@@joshuarimes9239 Distilled water is completely void of minerals so you should still add some to get a good balance. Pilsners and lagers in general are best with water low in minerals but there should still be some.

Why use so much sanitizer solution? You can just prepare two liters of solution(even that's much), put everything you need to sanitize in the bucket, put the lid on and give it a good shake. Use less water and less StarSan

Why bother with pH when you can carry out an iodine test for starch? Drop a couple of drops of iodine into a spoonful of wort, if the solution does not turn blue, everything is fine.

Well you aren't going to get full conversion if the pH is wrong in the first place. The enzymes need a specific pH in order to convert the starches to sugars.

No, DO buy the $15 cheap pH meters. You can buy 20 of them for the same price as the big meter but they will do just fine for your needs and will last as long.
