I love Ninfa’s! She started a restaurant dynasty her grandsons carry on. I had to go to the pantry and get my last bag of Beaver Nuggets to snack on! Now to make a pilgrimage to Houston once this Covid thing is over.

I was born and raised in NW Florida, and lived 5 yrs in New Orleans where I gave birth to 2 daughters, and helped restore a French Quarter bar called My Brother's Place to it's former glory. This was hilarious! Tim, you are a true, good Texas boy making Texas proud, and Darrell cracks me up with his food comas. I'm a Texan with deep Wisconsin roots. Watching Darrell eat Tex-Mex from Ninfas (yummy), drink sweet tea, and shopping at Buc-Ees is so funny. I love all members of Home Free but must admit that Tim Foust is my fav. I never thought Richard Sterban could be beat for best bass vocals but Tim did it! Keep making great music and enjoying Texas food. Try Buc-Ees chopped BBQ sandwich...it's good! Thanks for a good laugh!

Btw, please have your Booker/ manager get you guys a gig at the Golden State Theater in Monterey- old Art Deco style from the 20’s - Or the Sunset Theater in Carmel- a beautiful mid-sized venue in a gorgeous town. The chips that often come with chile con queso are flour tortillas which are cut up and fried. Sadly, most places give you too few of these so claiming one or more when dining with others is a highly contested event. Once they are gone, you then switch to the plain corn tortilla chips. Some Tex-Mex places make their own tortillas, some several times a day. Often, any excess or ones not at peak freshness get cut up and fried to make tortilla chips.

I moved to Ca 10 yrs ago. I miss tex- Mex. Everything looks so good. The closest to tex- Mex is on the border. Fajitas are my favorite. Enchiladas another favorite.

Texas is a different beast man. We’re technically part of the south, but honestly there’s a complete cultural difference between Texas and Mississippi. Texas, Oklahoma and New Mexico(and others) are more of a cowboy culture whereas the “south” is more of a hillbilly culture(speaking stereotypically of course). The key difference being that Texas can be way more socially progressive in places, and just more diverse in general, whereas that isn’t the case for the deep south or really most of the country. I’ve grown to love this state.

That wasn’t chili con queso he ordered, it was chile con queso. Chile is the general Spanish word for peppers. A popular chile dish is Chile Rellenos which usually uses a large but milder pepper, the Anaheim chile pepper. You prep them by charring the outside then peeling the skins off. You then slice them in half lengthwise and remove the seeds and stuff inside. You then stuff the peppers by adding a stick of cheese. Many just use cheddar but I suggest queso asadero, a white Mexican cheese for a more authentic flavor. These are then coated with flour then dipped in a basic egg & flour batter and fried in a pan with about 1” of oil, shortening, or (for a truly authentic flavor) lard.

oh LAWD, he went to Buc-ee's!!! I visit the Katy one at least once a week...my fave from the kitchen are the pulled pork wrap and the monster reuben on pretzel bun, then I load up on those Sizzlin' Saltines, the BBQ flavored cheese bits (basically BBQ flavored Cheetos), the Habanero pork rinds, and the Buc-O's (BBQ Funyons, basically)...I don't think I ever get out of there for under $40!

14:26 My daughter and I would be elbow deep in the pretty rocks. :o) I think she and I need to take a long trip from Maryland to Texas to find a Buc-ee's. (I used to live in Texas) yumm, fried okra! (as far as I am concerned - the ONLY way to eat okra) I have found that in many cases, when something tastes really good, it is often the water that can make the difference. I my mother's hometown in Wisconsin, there is a local cafe (the only one, I think) that makes the BEST coffee I have ever had. I am one of those people who usually likes a little coffee with my cream and sugar, and the coffee at this cafe is so good I can almost drink it black.
