Pasta Dough:
Flour - 2 cups
Eggs-2
Salt - 1 tbs
Oil-1 tbs
Filling:
Mozzarella- 1/4 cup
Parmesan - 1/4
Ricotta -1/2 cup
Parsley- 1 tbs
Basil- 2 tbs
Egg-1
We'll make the filling first
Remove most of the moisture from the
ricotta cheese with a clean cloth
Add the parmesan and mozzarella cheeses
Add the egg and parsley
Mix well
Tastes great!
Now it's time to make the dough
Put the flour on your counter
Make a 'bowl' in the center of the flour
Put the eggs, oil, and salt in the 'bowl'
Mix by hand until it is no longer sticky
Cut into 4 pieces
Roll them flat
You can keep rolling by hand until it is very thin . . .
. . . but an easier method is to use a pasta maker
Run through the pasta maker at the highest setting and
repeat a few times at a lower setting each time.
I stopped at thickness 2 on my machine.
I don't have a ravioli making tool so I will use this
3D printed empanada maker. Link in the description
Cut out the circles
Center it on the maker
Put some filling in the middle
Wet the edge
Close tightly
One ravioli made that won't open when cooking
Repeat those steps until you run out of dough to make circles
Take all your left over dough and smush it into a ball
Roll it flat and start the process all over

Cook in salted, boiling water for about 15 minutes
Drain in a colander
Serve with sauce
