As you could tell, my baozis were not perfect. You can watch @小高姐的magic ingredients KZbin video: steamed Chinese buns, for a better detailed tutorial.
Just in case you need it. Here is the recipe I used.
Filling:
500g grounded pork/beef/chicken/lamb
1 tsp salt
100g ginger green onion water
1/4 tsp white pepper powder
1 tbsp light soy sauce
1 tbsp dark soy sauce
1/8 tsp five spice powder
1 tsp sesame oil
5g minced ginger
50g chopped green onions
Mix well
Skin:
Melt 10g sugar and 5g yeast with 270g warm water (about 85F).
Add the yeast water into 500g flour
Add 8g pork oil or vegetable oil into the flour.
Knead the dough for 10 minutes.
Wrap with a plastic wrap.
Let it rest for 1 hour.
My house was at 75F that day. May need to have it rest for a longer time if it’s getting cooler.
Knead the dough again until smooth.
Cut it into 12 portions.
Make baozi.
Let the baozis rest for another 1 hour, they will keep growing bigger.
Steam over high heat for 15 minutes.

why do people even make these "x liKEs aNd x COmmEntS????? leT mE fiX thAt!!!!!" replies. it's stupid..like you aren't contributing anything at all. you're not even saying something funny or clever, you just want to get your spot as the first/second/third reply on a top comment without having to think of anything to say.

As person of northern Chinese descent, thanks for giving this info to your viewers! Northern Chinese cooking and Southern Chinese cooking can vary quite drastically! (Also I’m pretty sure the way to make smooth dough is with cake flour but I could be mistaken. My mom’s baozi dough looks like cauliflower too cuz she uses all purpose flour 😂)

I'm curious what's the difference from northern and southern
@typicallyusual6984
@typicallyusual6984 Жыл бұрын
@@tamiacook6080 Northern food is far less spicy, to start with. Northern Chinese usually eat baozi and jiaozi (meat buns and dumplings) during Chinese New Year’s and Southern Chinese tend to eat tang yuan. Stature-wise northerners tend to be taller. Socially northerners tend to be a bit more similar southerners in America, in that we tend to be friendlier (think “southern hospitality”). Of course these are just general trends but there are many exceptions in terms of people, ethnicities (many minority Chinese groups), and specific provinces. And by north I mean more the northwest.

@Bonbon.G

@@tamiacook6080 um the difference is kinda culture and cuisine so if I’m not wrong the northerners eat flour-based dishes and southerners eat rice more often. Now if I’m correct then north eats salty, south eats sweet, east eats spicy and west is acidic

Hi Ms. Shi! Don't worry, your cauliflower dough is just fine!! The secret is to let it rest for an hour when you reach the cauliflower dough stage. Once it's rested, your dough should be soft, and ready for you to kneed it. This is when it turns smooth!! It takes a little while to kneed and become REALLY smooth, (around 5-8 minutes) so if you get tired, you can use a stand mixer. :)

You've got cauliflower dough because the gluten is only partially activated. You need to knead it longer until it feels tight, springy, and almost starts to tear when it stretches. I like using my stand mixer cuz I'm lazy and like the consistent results.

baozi is more common in northern china. they grow wheat, so the staple is noodles and bao and other doughy things like jiaozi. southern china is coastal and has more rivers, so it has rice as staple. source: I also cannot make bao

i dont think you knead the dough enough. could be seen right before proofing that it needs more kneading. a good indicator to know when to stop is when the dough looks smooth and its springy and elastic (a test is to take a small amount and try to stretch it as thing as possible without breaking), if so, that means that the dough is ready to be proofed :)
