Have you run out of yeast? Where do you live is difficult to find it? Do you want to find an alternative to dry yeast? Here is the solution 😉
In fact, today we can prepare our homemade bread using a bunch of grapes instead of the classic yeast.
For this recipe I used:
- starter:
Grape juice 30 g
Flour 60 g
- dough
Water 380 g
Flour 500 g
Salt 10 g

@@Spectacular-cuoredicioccolato i'm also facing such issues. I'm working on it to improve patience. BTW, im making "soya chaap" nowadays which is indian version of vegan meat. The whole process takes 24 hours to complete and atleast another day in deep freezer to give it nice texture. But you have great satisfaction after you have it in dinner. Hundreds of recipes can be made out of it. Its basically gluten and powdered soya chunks. Marinade, butter and fresh cream gives it heavenly taste, that too if made in tandoor (brick oven with coal or firewood).

@@Spectacular-cuoredicioccolato It tastes and feels almost like chicken. Here people have it on some days when they cant have real chicken due to some beliefs. But most people like it regardless of their eating habits. Today i put it on pizza as toppings and called it "tandoori masala chaap pizza"(similar to pepperoni pizza). Here we also get tandoori chicken pizza and tandoori paneer pizza too at Domino's.

I am a classically trained and degreed French chef educated in the Escoffier tradition. I followed his instructions exactly with both the amount of ingredients and technique in obtaining the juice. I then put the mixture in the exact same type of glass. I did this three times. In 20 hours, all I had was low grade play dough.

Wow! That bread looks fantastic. Your dough is about 76% hydrated - That is a very challenging dough to work with , for people who have never baked bread before... but as you show the "crumb" (those holes, as this is called in the US) is "spectacular". And Alanuta asked if supermarket bought grapes can be used. I think it depends. Certainly, in the US, any fruit that is imported is radiated and so wild yeast might be destroyed, but any local fruit is likely to include wild yeast - so berries, for example, would likely be a great source of yeast. I have got to try to make a batch of this bread myself. Thanks, for sharing the recipe and the idea.

If you have doubt for absence of yeast in the grapes in your area, you can try using apples if organically grown in your area. a small piece of apple along with some water and a teaspoon of sugar and honey will do the same job as grapes. It may take 4-5 days to see the frothing liquid. You can strain the liquid and start feeding flour to it. Its equivalent to sourdough starter. That liquid can also be used to start a batch of wine too (without using flour).🙂

I just tried this recipe chef! It’s amazing !! My starter rose after 38 hours but was not as high as yours. My question is when is the starter ready if it was slow to develop ? Should it be double ?

Spectacular, well done! What type of grapes did you use? I recently made another starter from Concord grapes...but I didn't crush them. I just used 6-7 grapes in the flour and water. Amazingly, the starter had a grape jelly aroma! Love watching your recipes, thank you for sharing!

Ciao Andrea, I absolutely love your recipes. To make our bread, we buy Hard White Wheat Berries, and grind them to make flour. I am wondering if the flour we make (whole wheat flour) will work? Hello Andrea...I tried the grape juice and let it sit for 20 hours but I had no changes. I didn't wash the grapes because I wanted as much yeast as possible but it looks like it failed. I am still keeping it to ferment and see if it does something. In the meantime I just added yeast to the recipe so I will bake soon. Thank you. If you have any thoughts about the grapes please let me know. Also I have a request for you to make a recipe for crackers. I would love to see you make some. Thank you again!

Hola, Amigo.....I was going to make my wine, and you gave me some good advice ..that was a couple of months ago. Here in Peru my schedule doesn't always work out.........but I've got everything ready now anyway.......I'm going to make a banana, a strawberry, a pineapple and a mango wine for starters. I'm not sure how much pesticide goes onto things like strawberries and such here. Too much drama to find organic.. so if I soak my strawberries in water with bicarbonate of soda and vinegar will that do the trick ? what do you advise? ...salud..
