The traditional Caesar dressing always has Worcestershire in it it’s how they do it in the restaurant where it originated from and it’s incredibly delicious.

2 cloves garlic 4 oil packed anchovies ½t coarse salt - smash together w fork - half lemon juice 1t dijon mustard - wisk - 1 yolk or mayo ½-¼t pepper ½c olive oil

Good Job! I was lucky enough to have this made tableside by a 90 year old man who worked at Caesars in Tijuana for 40 years. Of note, the Cardini bottled salad dressing available in grocery stores doesn't have a drop of Olive Oil in it and includes corn syrup! It also has an overwhelming egg taste to it! Unbelievable!!!

Great video! A few months ago, I took some inspiration from Subway and started making a Caesar chicken wrap. Everything possible, including the tortilla, is made from scratch. The dressing is made exactly the same way as it is in this video, even down to the wooden bowl, though I make thinner croutons and add tomatoes when they're available from my garden. As a side note, one of the guys I used to work with once asked me which jarred hollandaise sauce was the best. He then laughed at the horrified expression that the thought of jarred hollandaise inspired.

Its funny bc once you start making your own fast food inspired recipes at home and start honing your cooking skills, eating out loses its appeal unless you go to a fine dining expensive place! Ive cooked for years and can no longer eat fast food and typical restaurants bc every time it tastes like garbage. Low quality ingredients etc etc. ,

I just made this and followed the instructions unbelievable and on point. Authentic Caesar is harder to find in cali due to litigation risk for raw eggs and the anchovy. But in the Midwest it was so good and I can’t take another mayo caesar out here again.

I tried the quick method and (to my surprise) it was an instant pleaser. I had my doubts about the mix of acidity and Worcestershire sauce and salty cheese but once in the salad the ingredients blend wonderfully. Two points of critic: the American habit of using cups instead of grams or centiliters. Could you mention both measure systems? The link did not connect to a recipe but to a lot of Martha Stewart links. How can I get the recipe. Anyway: congratulations with the tone and way of presentation, clear and pleasing.

I just dine at the original Caesar's restaurant in Tijuana last weekend. We got a Cesar salad made in our table. Very beautiful restaurant. Baked bone marrow is also one of their specialties there 😋👍❤

Wow I love that! What's the name of this restaurant?! I would love the recipe for the baked bone marrow. A friend of a friend was making bone marrow soup to help with recovering from Covid-19 this year and it worked. Its an amazing nutritive.

This takes me back. Thanks, Thomas! My mother made a real Caesar salad in the 60s and 70s, anchovies, raw egg and all. She used a large wooden salad bowl and our set had smaller individual wooden bowls for each of us at the table also. Before she began she rubbed garlic cloves in all the bowls -- that would sometimes be my job. I haven't had such a delicious Caesar since! This was before bottles of so-called Caesar dressing and before it became popular in restaurants in our area.

@@barbryll8596 Hi Barb. I did a few times in the 80s and maybe early 90s. To be honest, the majority of people I cook for would prefer the blander version. Maybe I will make it again sometime this year for the right group. :)

I love Caesar salad and love anchovies - I can eat it straight from the jar! -But with a wife who is not thrilled with these little fish, how much worcestershire sauce is equivalent to 4 achovies? Thanks!

One of the main ingredients of Worcestershire sauce is anchovies, I use soy sauce instead to get that umami flavor.

The thing I noticed about MS is that they're not progressive. I personally really love sarah, Thomas, and shirah (they're really the only reason why I keep watching the channel) but if you notice, their recipes aren't great. They're very....one dimension Western style cooking.

When they make the dressing table side they use forks to smash everything together. Consider this/how it's done table side at restaurants the 'traditional' method.

@A J When I say progressive, I really mean incorporating different cultures and methods into the cooking process. Perhaps I am clumping all of "Western" style cooking as if it's one dimensional, I wouldn't really know as I admittedly can't tell very well. Hell, if they're not speaking in a weird language I can't tell, then the food's either British or American to me haha! But take a look at other channels that are doing better. Say, Bon Apetite. They study, use all sort of ingredients, learn all sorts of tools, etc. You can actually see people of different cultures there. Who in the food business have not heard of a mortar and pestle at this point? If you want to be fancy and do that thingamajiggy at the table, sure, but why go through that trouble in the kitchen? Especially since you want the garlic and anchovies to be "dissolved" into the dressing. At this point, I would've expected MS (being a test kitchen as well) to be better. They are, by no means, new to the field. This ceasar salad seems very traditional. I don't know, but sure, I'll give you that. Perhaps that's what they're going for. Fine. What about their Pad Thai? What about their Lo Mien? I'm not familiar with Western food but I am at least familiar with a lot of Asian food and I can honestly, tell you, they seem pretty meh and not at all traditional. This isn't about race or nationality. I am commenting on their quality as a test kitchen. As much as I like their personalities, they're not doing good (internationally, on KZbin) for several reasons, I'm sure. But I'm simply just pointing out one of the many.

i dont want to criticize about using 2 forks, it is the traditional way of making paste out of something, way before pestle and mortar, and also knife to make a paste as well. and again, it is my opinion, since i am used to use pestle and mortar, i mean it's for the other viewer (if they read this comment), they can experiment by themselves. Joseph was showing us how back then they made paste, and yeah this method is still used if you order tableside caesar salad. so stop comment wars against thai, asian things. you guys are missing out the point. Thanks.

Substitute anchovies with Worchestershire sauce which is an anchovy sauce. Substitute raw egg yolk with mayonnaise which is an emulsion of raw egg and oil.... Nice substitutions, I guess. xD

@@Electroblud Given the shelf life of mayo, I'm pretty sure it's as far from raw egg as it can get. I'm guessing the "substitutions" aren't so much about trading one ingredient for another as a matter of convenience. You can screw up the emulsion, so the mayo is safer, Worcestershire sauce is much more than just anchovies, so the flavor is far less intense. It absolutely makes sense to suggest these substitutions because they make things easier and people are more likely to actually try something new they've never made before.

In the restaurant biz, they will often pasteurize the eggs (or just buy pasteurized eggs, because that's a lot of time saved). If I'm making some at home, I don't bother to pasteurize. They actually mention the pasteurized egg yolks in the video... if you had watched it.

Sir, you did a great job of explaining multiple facets of this recipe. There was so much stuff out there that included and did not include certain things without explaining why they were added. In some cases it seemed they were necessary instead of optional. But, thanks to this video, I can now understand them. XD Good job, sir.

People “don’t like” anchovies because other people keep saying how bad they are when they’re not. It’s a stupid urban saying that keeps getting spread. They’re delicious. Most people have never had anchovies to know. But look at Caesar salad. It’s delicious AF and uses anchovies. This guy Is a tool for propagating a stupid stereotype

Worcester shire sauce contains anchovies. It’s the secret ingredient until you read the ingredients list on the label

ding174,thats what i thought when he said you can replace the Worcerster sauce for anchovies! Most peeps dont know thisabout Worcester suace and i use both a dash of Worcerster and a bit of anchovie paste! i just dont tell anyone there is anchovie paste in it! lol! you just gotta ask if anyone is allergic to anything if you don`t know them. I just tell everyone its classic Ceaser salad!

I’m thinking of making a “keto” Caesar salad by eliminating the croutons and adding fried golden halloumi cubes infused with a little bit of olive oil and garlic 😋

Maha Alshammeri , you can toast some cubed up ( Franz) brand keto bread spread with butter and parm cheese and broiled and make your croutons! My husband made those for us. been keto five years now! Love it!

I use olive oil with Carbon-60 which will help the oil absorb the flavors.

Excellent recipe. But.....we put all ingredients in the sauce into a large mouth mason jar then use an immersion blender to emulsify it. Very fast tastes the same. Also add a couple of drops of tabasco and a pinch of dried oregano. Always our favourite salad. With some chicken pieces in it we have a meal.

If you guys have fish sauce.. you can substitute it for the anchovies as well. Fish sauce is literally fermented anchovies brine.

Pam Owen We often just add a bag of steamed frozen peas to cooked pasta and coat with some olive oil and a bit of garlic salt. It’s quick and easy.

In the Philippines it's called dilis or baringon. And we fry then toss in sweet and spicy sauce. Hmmmm. Delicious

Best tip ever: to restart/revive a "broken" mayo, just use a little bit of mustard (instead of water or another egg or egg yolk), this will work every time, trust me, 100% success.

I totally agree with Renan Ribeiro in that Thomas should have his own KZbin Chanel. There by reintroducing the DIJON in the Cheat version, which adds unmistakable flavor aside from making an emulsion. Just one of the constant & flagrant mistakes that Martha Stewart is known for. D

Daniel Dumas yes I noticed that too...no Dijon in the cheat version... it’s a simple “pantry” item so I wonder why it was omitted. It adds a nice flavor kick.

Boy, you all should see what a Caesar salad in Australia looks like: limp “cos” lettuce (romaine), shaved Parmesan, weird looking bacon pieces, sliced cold chicken and a hard boiled egg.

This is great, most grocery store ceasar salad dressings I've seen don't use anchovy which kind of defeats the whole ceasar salad dressing

Make sure you remove most of the salt from the anchovies so it's not to salty. Then add a bunch of salt... If you don't like anchovies use Worcestershire sauce which is made from anchovies..

I've added Thai fish sauce when I don't have anchovies, and it works fairly well

I love this recipe. It's so easy and delicious- I could drink it. My sister dislikes caesar dressing, and she said that this was the best caaesar salad dressing she's ever had. Honestly, this is delicious- even better than restaurant style, table served casar salad at a steakhouse.

the reason is you want to add a coarse salt so that you can break down the ingredients (he actually says it) If you have ever muddled herbs with sugar its the same principal. The salt that its packed with has already has absorbed water, and is probably very finely ground so it would not work well.
