Lowest heat setting for my pan, same cherry sugar ratio but I ended up with bitter cherry toffee. The liquid became less and less and ended up so thick it wouldn’t stir. 1.5 hours is a long time for jam?

@@samanthaallix7253 Hi Samantha. It could be that your cherries had less juice than the ones I use. When you stir, check the consistency. If it doesn't feel too liquid, the jam is ready, even if you cooked it for less than 1.5 hours. Keep in mind that the jam will thicken a bit as it cools.

Squeeze half a lemon instead of citric acid. Use a straw to push out the Cherry seeds. Add a inch piece of papaya to help in the jam setting faster.

This is the best looking cherry jam out there. The consistency is just exactly right, in other videos it's always too runny or too solid, this is exactly what I was looking for! Thanks, I'll try converting my cherries into this sometimes soon. Does it store well?

Thanks Mark! That's the consistency we like best, it's easy to spread on a toast and it doesn't run all over the place. Yes, it stores super well, just make sure to pour it into the jar and close the lid when still super hot, and for good measure sterilize the jar beforehand (just boil it for 10 minutes and there will be no bacteria left on it). Enjoy making your jam!

It's not really required, the jam is hot enough to kill all the bacteria inside, but if you want to store it for a long time I strongly recommend to do it.

That’s the way I learned to make jams…just sterilize everything, put the jam in, tighten the lid well & turn it upside down on the counter, it also creates a vacuum, you hear the lids popping. And any that didn’t, we just used that one or 2 jars right away

Yes, you can! Honey is sweeter, so just use a little less than you would with sugar. Also, jam made with sugar has a very long shelf life (a year or more) due to its good preserving properties. If you make it with honey, the shelf life might be shorter (but who cares, it will be gone within a week).

You mean why I turned it upside down? It's to better sterilize the lid. The hot jam contacts with the lid and if there's still traces of bacteria it kills them. This step is optional if you sterilize the jar and the lid well, but we still do it sometimes as a precaution.

Yes, you can! Some things to keep in mind: - When using maple syrup in place of sugar, it's important to adjust the quantity because maple syrup is sweeter and has more liquid than granulated sugar - Use 3/4 cup of maple syrup for every 1 cup of sugar you're replacing - Squeeze some lemon juice for added pectin and tartness

Hey there! Citric acid is totally optional, but I find it gives the jam that extra tangy kick! Also it helps preserve the bright color of the jam. If you prefer a less tangy flavor, you can skip it and still enjoy delicious cherry jam. It can also be replaced with lemon juice if citric acid is not available.

Hey there, yes, the lowest possible. You can start on medium until it starts boiling, but from that point on it needs to be low.
