WHERE I BUY BULK COCONUT FLAKES: www.azurestandard.com/
Azure Standard serves mostly the West Coast, including AK. You have to sign up to be able to see the prices of the items they have. They NEVER email me unless I have purchased something, so don't be afraid to sign up. Finding a drop off location usually requires a call into Azure, and can be tricky, but is well worth it if you even want to buy in bulk once a year (and have to drive a bit).
Recipe:
2 cups unsweetened flaked, coconut
4 cups boiling water
Directions:
Add coconut flakes to blender and pour boiling water over the coconut. Allow coconut to steep in water for about 5 minutes.
Blend for exactly 1 minute.
Strain using a nut bag.
Allow to cool, and wring out bag of coconut until it is as dry as possible.
Chill or use immediately.
Please note that the fat will harden on top of the coconut milk. Re-heat and mix if you'd like a coconut milk that is more of a canned coconut milk consistency. Or, remove coconut cream from the top of the refrigerated coconut milk, let soften on counter slightly and use in place of whipped cream.

Made my coconut milk following this recipie! It turned out DELICIOUS!!!! It ended up forming a good layer of fat on top!! This morning I used the coconut milk to cook my steel cut oats and that layer of fat was so firm! I left it to whip up later and use as a dip for strawberries!

Finally made coconut milk. I've been eyeing this recipe for months and I finally made it! So easy! Added a little piece of vanilla pod that got all blended up with the coconut yumm. Just tasted it now, still warm... sooo good! Delighted. I really dislike the coconut milk I find here in Italy. they always add sugar and stuff.. this is great! Thanks! Trying coconut flour next :)

I just made this used half the recipe, turned out so good, I'll start doing this more often. I like the idea that half of it is fat on the top, and it's not pasteurized. Instead of a nut milk bag I used a cheese cloth over a 4c glass measuring cup with the strainer underneath - easy and worked out great. I'm now making the coconut flour - thanks for both recipes!

Advice needed please. I am interested in making my own milks (almond, coconut, oat etc...) I wanted to make coconut milk this week. My only concern is that every recipe I have seen so far for making coconut milk asks for the coconuts to be mixed with hot/boiling water and then blended. Unfortunately, the type of blender I have does not allow me to blend hot contents unless I wish to burn myself...... Do you know how I can get around this issue? Can I let the coconuts sit in the hot water and then blend once its cooled, or does it have to blend hot ?

I like coconut milk because unlike other nut milks coconut milk is free (or very low) in oxylates. It does though seem to go bad faster, at least store bought as compared to the other nut milks - It starts to get frothy.

The canned coconut milk is basically the same thing, only with a lot less water added. They also add thickeners sometimes like guar gum or Xanthan gun. You could either add less water or refrigerate it and scoop the hardened fat off the top along with some of the water. Hope that helps!
