Aye, a great recipe guide it is! I changed mine up slightly by using a dark roux of flour browned in butter until it's the color of dark caramel. Adds such a rich flavor to an already amazing pie.

@@JohnKirkwoodProFoodHomemade I still wonder about the meat, though, the first thing you showed! In the USA, you might look for chuck roast, beef shank, or brisket. I'm not sure just what "casserole beef steak" is, but those would be suitable, and each has its distinct flavor. I'm just curious as to what cut of beef that actually was, and why the Brits find that fungible when various slow-cook cuts are actually quite different in flavor and texture. (I'm in Texas BTW, and we take our beef seriously.)

@@JohnDlugosz any of the tough cuts that you would make a stew or casserole from. So he's leaving it up to you. If you like the flavour of a particular cut, go with that. Just make sure it is one of the tougher cuts. (And make sure it is visibly lean, no visible fat) Or use ground beef (aka: minced beef) (low fat) and simmer the same quantity and method as this video, but for only 10 minutes (this saves you 1 hour and 50 minutes, as this video is for 2 hrs simmering of the tough beef chunks) Or use 'pulled beef'...previously barbequed or roasted beef..... and adapt to suit this recipe/method. Optional: Mushroom, sauted onion, bacon bits or whatever may be added to suit your tastes.

As an Australian, I'm staggered that there are people who didn't know about steak pies and how amazing they are. We live off meat pies over here and steak pies are considered one of the best kinds you can get. If you want to really liven up the filling, you can toss in a tiny little bit of Guinness (or even a trace of Vegemite).

Between 1974 and 1979 my father worked at Vickers shipyards in Barrow-in-furness, England. It was a wonderful time and even though I was a child, I remember everything in great detail! I especially remember the foods among them, fish and chips and meat pie. Simply divine!

Although I live in Hungary, my daughters and their families still live in County Durham. It's lovely to hear a NE accent where I spent about 20 years. I never thought of using hot-water pastry for steak pies (I use it for pork pies of course) so I'll give it a go. They don't make meat pies in Hungary so I have to make them myself. Cannot buy them in shops.

Posting again!! I just made these and my fiancee HATES pastry!! These pies were INCREDIBLE, AND she asked for more! The beef taste was and consistency were amazing John! And the gravy with it's dark beef taste was unreal! I served them with a garlic mashed potatoes and mashed carrots and I was straining to find room.. I did have to give up credit to you cause I failed at this a couple of years ago and she was on to me. 😁 Wonderful recipe and she has requested this to be her Birthday dinner! Thank you my friend!

I prefer thickening with a roux. I'm American but 35 years ago I was the chef in a British restaurant here in Pennsylvania. I use to make beef and kidney pie and beef Wellington amongst other British dishes. Your meat pies look delicious!! Thanks for showing!!!

Hi John, I just came on here to tell you that I made your steak pies for dinner for my family and they were overwhelmingly delighted. They've asked me to repeat it again soon! I love the hot water crust. The flavor of the crust was so savory and went well with the saucy interior. No leakage at all. Also just to throw in a helpful comment: the ratio and your recipe works perfectly for a 12 cup cupcake pan as well, for the American crowd. (I actually squeezed 13). Thanks again for sharing it.

I’ve been watching several cooking channels for some time now, mostly American, but I’ve not been as inspired to try practically every recipe I see as I have yours. Not to mention adding to or changing out some of my kitchen supplies. I tried to adapt some of your measurements to American standard, but I tested one of my measuring cups like you did and got similar results, so, grams it is. At 65, I’ve become the chief cook and bottle washer of the household and your recipes have brought a refreshing change of pace around here. God bless, John.

I made this filling and gravy recipe for pies for our dinner last night. I used store bought crust and made them in my Wolfgang Puck pie maker. Next time I will make the crust in the recipe. I wanted to make 4 but there wasn't enough filling so I boiled some cubed potatoes and added them to the meat mixture while it was cooling and it was perfect. They were so delicious and thank you for showing us the gravy mix. I am so glad I found it on Amazon and will keep in on hand now. Again, thank you for your video!

New guy from Denmark here, I work as a chef.. Just found this channel last week while looking for English Muffin recipes. This looks good! We dont have anything called casserole beef here in south Alabama USA. But it looks like what we call Round Steak. It's a bit tough unless it's cooked long, low and slow. Most commonly we'll have the butcher run them it through the needler a couple times. Season, dust in flour, pan fry and serve with a brown gravey. Further west you go it becomes more and more milk gravey. By the time you hit mid Texas, it's pretty much milk gravey from there on... This looks delicious. I WILL be making this recipe!

Cool the pan in a sink of cool water - this is a "double cooler" - it's just like a double boiler, but removes heat instead of adding it. Great innovation!

Please let us know what you thought of the hot water crust. I'm afraid it would be tough, even rolling it out gently. The cold butter/lard version always makes for a tender, flakey crust. Thanks

How delightful! As a an American I may lack some of the culinary and cultural touchstones that would come from a dish like this but living in South Florida they remind me of Empanadas and Jamaican Beef patties, many of which contain very simply seasoned meat such as this, with a small amount of character defining spices. To say nothing of the succinct, calming, easy to follow presentation. Absolutely delightful and well done! I hope to try this recipe some day.

Here everything is absolutely wonderful! In the USA I was able to get guide sticks at an art supply store. Apparently people who make ceramics use them while working with clay. They are real handy for making cookies too.

You can't beat a good ashet pie (that's what we call individual steak pies in Glasgow), I find most of the frozen varieties to have very stringy fatty meat inside whereas a good one should have very little fat and the meat should be falling apart it's so tender

I got recommended this after your crumpet recipe turned up in my feed for the first time! Hands down the best pastry I have ever made. I'm just a home hobbyist, but I've put good effort into reading up on pastry and baking, testing lots of different recipes and even having a few attempts at puff pastry by hand. I followed the process closely and the measurements to the gram, and my first go came out practically perfect! I'll definately be keeping this one in mind and will make my way back through the archive. Great job John!
