I love sesame oil. However you do have to be careful not to over heat. It has lower smoke temp than coconut oil. But boy is it yummy. I would have never known how simple making egg rolls was if it weren't for this video. Thank you for taking the time to show us.

Semi refined sesame oil and refined coconut oil have the same smoke point. Just love that flavor! :D

I’ve seen others stack the little squares with some oil brushed on to prevent sticking. Then they roll out all 12, stacked, at the same time. Those rolls look delicious!

Thanks for a low sodium version of the egg roll wrap. Recently started a low sodium lifestyle but I really love Asian foods. All the wraps the stores carry are high in sodium. Can’t wait to build some egg rolls soon.

Thank you so much for getting back to me so quick! I made a kimchi/sauerkraut/kind of highbred a few months back and that’s the way I like it best …it turns out delicious! It definitely has some spice with the habaneros and ghost pepper flakes that I added to it! I will be making me these egg wrappers sooner than later! Just wondering. I know people think fried food is unhealthy but I believe when one is using coconut oil, it is still pretty healthy. The only thing I see about it being unhealthy in that way is that you have heat it higher than cooking in other ways so some of the nutrients are being destroyed but as far as the egg rolls go, the inside of the egg roll where all the veggies and such are, is not getting that hot so one is still retaining a good amount ;)

Hello . When heating lipids the viscosity changes . This change in viscosity is not good for humans . Grape seed oil is the best if you are heating the oil. All oils when heated changes viscosity . Yes, you are correct and this is why I do not use oils such as olive oil as it will turn rancid at a lower heat, but coconut oil has a high smoke point and is a good one for frying in. Unrefined coconut oil and grapeseed oil are both 350° but UNrefined coconut oil has a smoke point of 450° and that is what I use. Also, I find that the coconut oil leaves a coating that helps preserve the crispiness of the item fried so even after it has been refrigerated, it still has some of the crunch the next day, unlike other oils

I have not used fresh home made wrappers, but have used the store bought ones and they freeze very well both fresh and cooked. So would think the fresh would freeze well too.

Did you say you cannot have rice flour? I think a white rice flour would be a good option to blend with the buckwheat. I have used rice flour and tapioca starch as a gluten free batter for almond fried chicken or coconut halibut. It turns out very light and crispy

Rain Country no. I heard those in the vid but I want food that doesn't head me towards diabetes. Rice flour & tapioca flour can do that if not balanced properly. The 3 flours I mentioned are all high in fiber & protein so don't do that. For crispy i just use a fine coating of kudzu (aka kuzu) powder ...and it helps give a use to those invasive plants!...

I believe as long as a person eats a balanced diet, they should not fear carbs, God gave them to us for a reason :)

Yep,. I understand that too, again, I still do not worry about it. When I was a kid, I used to worry I would become diabetic like my mom, grandmother and great grandmother, until I learned more about it. I knew I lived a healthy life style and that diabetes would not be an issue. Mom was in her thirties when she was diagnosed, grandmother was in her 40's. I am in my 50's and still not worried. Many Asian people eat white rice as a staple and have had very low numbers of diabetes. It is not just about the simple carbs, it is about much more than that.

Shhhh... when you make it yourself.. you know it is basically healthy as you know all that is in it.. Don't sweat the small stuff. I love egg rolls.. round works for me too, but if you cut the edges off.. You can either cut them pasta size and dry them.. They just dry right there on the plate.. or cut super skinny strips and throw them in the fat to dry and you have chow mien noodles.. (Or at least the crunchy kind you put on chop suey) or salad toppers. But knowing this is labor intensive - you do what you have time for.. I like to put thin slices of cheese in my egg rolls. I have to smile at your rolling pin, and I know you are an old school cook.. I love the rolling pins with handles on them.. Years ago they use to make them with a removable end that you could put ice in. I never had one but an interesting concept. Just another thing to clean. People today don't know just what an effort it is to make all these yummy things from scratch.. It is totally doable and so worth the effort.. It just takes planning..I was going to ask you tho if you drop them into your deep frying fat, or do you shallow fry it. They looks like you could just reach though the screen and - ummmm "ambrosia from the gods" . I guess that is why people buy them from the store.. instant gratification! LOL ~~ Thanks Heidi..

I prefer the handles on the rolling pins as well along with having a marble one. Patrick bought me this one years ago and it has always been my favorite - let alone that green is one of my favorite colors! haha! Like your idea for the chow mein noodles though I would guess I could run it through my pasta make ($3 garage sale find, stainless steel and looked to have never been used!) and it would cut it just as well as my other pasta noodles. The dough is pretty much the same anyway :D

I have one more question.... How is the spinning coming along. Hard to find the time I know.. and I am still waiting for that time since the holiday rush is over :/ i haven't done much this year... But you have a very unusual looking wheel and I am anxious to see it in motion.. It is quite beautiful.. And would love to see how it works. My hubby made me a second one last year for Christmas, a castle type w/ double treadle. .. and he was super jazzed about it (and me too of course) and is looking forward to the next ! LOL

It isn't coming along at all, things are slowly balancing out so I am not so crazy busy but of course, garden season is just around the corner so I am not sure if I will be able to make time for it until fall. I have to focus right now on the things I can make and sell as that is where our income is. BUT, I am starting to really get the urge to start putting that thing to work so hopefully I will be able to do that soon :)
