It's so inspiring the way absolutely nothing phases you. Dough springs back and won't make a circle? No problem. Just roll with it. Pizza-cutter snaps in two? "Oh well, it's had a good life. Let me grab a knife." I learn so much about how to react to the world, even the world beyond the kitchen, from watching you. Flat bread looks perfect, Kevin! I obtained my marble board, same size as yours, about a year ago on sale from Williams Sonoma. It was around 40 which was amazing. I was inspired by you. And this Christmas I was gifted with a KitchenAid pro mixer by my son! I rearranged my tiny kitchen and created a cooking and baking area...Mini Kevin? I think so!!! 😂

This is a recipe my son will want me to make very often! He LOVES pizza, but doesn't like a lot of veggies on his. By making these flat breads, I can make his "meatzza" and I can have whatever I want on mine!

I've made this and rubbed a bit of olive oil on the dough then sprinkled parmesan and garlic on it and baked in the oven.

Hi Kevin, I love flatbread and your video is fantastic! I made the flatbread today! My first time making flatbread. Kevin,the bread is so good, it was soft but a little chewy, nice mild flavor.And, just the right size for making a small pizza or a chalupa. Thank you for the recipe and your video.

You can get a marble tile like this at most any store that sells tile, that's where I got mine several years ago!. And probably cheaper than a kitchen store.

Ah-ha, love these tips. Olive oil rather than flour on the kneading surface, and a 'dampened' flour sack towel. Conversion calls for 1.25 tsp active dry yeast. Going to replay and get the measurements. Kevin Lee's flatbreads will add the perfect touch to the red lentil stew I'll soon be making, replacing the side of jasmine rice I usually serve. Should the flatbreads turn out as flexible as the one Kelvin Lee was waving at the camera, without a doubt, and to Hubby's delight, I will start making flatbread again. Thank you Kevin Lee. You seem to have a pretty light touch when kneading the dough. If you haven’t kneaded bread, it is wonderful to get a feel for what it should be, watching you. These are the steps that make one feel it is possible to achieve good results. Thanks.

Good morning from Germany.... Very good bread-recepie,that I will try out today.... I usually make my own bread....( using beer- instead of yeast)...I like the look of yours...and the idea -to turn it into a pizza,is clever... I enjoyed the video ....not only because of the recepie,but also,because of your charming way-when little incudents happen-like the pizza-,roller-breaking while filming. I've had the same thing happen to my pizza/pastry wheel not too long ago so I purchased and started using the rocker type pizza cutter. It's much faster, and I find that it doesn't tend to "push" the toppings along as you cut.

I bought my father-in-law a marble rolling pin around 35 years ago with that same pattern. He loved using it for rolling out pie crusts. Thanks for the great videos, Kevin, and Happy New Year to you and yours!

I have a slab of granite that came from a sink cut-out from a counter top --works great--love the pizza idea for the flatbread--or you can also buy a marble tile , which i used for years till i dropped it and it broke! :)

Wow! You do so much to prepare this dough to get it just right. How did you first learn to make this? Did it take a lot of time when you first made this flatbread from scratch to get it exactly how you are doing it on this video? Just have to ask you, do you now or have you worked as a chef for a restaurant? Seems like you are such a a natural in food preparation.

If i use self rising flour would i skip the yeast? Ive never made bread before.

Hi Daryl - For best success, use either regular all-purpose flour or "bread" flour (not self-rising) and yeast. You can use either "instant" or "active dry" yeast. Hope the bread turns out deliciously for you!

Your flatbread process is similar to my flour tortilla making. I found that if I let the dough balls rest covered for 20 minutes before I roll them out, they are much more cooperative. However, that would surely let your yeast explode!
