Vegetable Soup for a Cold Winter Day

Oh my! I am happy to hear you weren’t injured falling. How scary that must have been (and unexpected!) This recipe reminds me of my grandmother’s vegetable beef soup she made when I was a child. We lived in Michigan, back then, and had very cold winters. My grandmother sometimes made a double batch and canned it. Thank you for posting 🙂

I'm so glad you and Mr. Fox weren't hurt when you fell! The ground is so deceptive lately. Many ice patches at the horse barn. My horse and I were walking very slowly and carefully yesterday - she's no fool! Keep safe and cozy in the coming days!

Good Morning, Mr. Kevin. I am so sorry you and Mr. Fox had a spill. BUT I am grateful you both did not get hurt. Still, it is not fun at all taking a fall in the cold. Please be careful. I will definitely be making this today --it's -2F here! My husband slipped on an icy sidewalk a few years ago and broke his leg badly. He was in a cast almost the whole summer. So be careful out there! Edited to say I have a pot on the stove as I type! I didn't have quite the same ingredients (no leeks, green beans, tomato puree) but made do with onion frozen peas and tomato paste. I also used up some mushrooms and added some wild rice. It smells incredible! Thanks for the inspiration, Kevin!

Glad to hear you and Mr. Fox are ok after falling. The coating of ice yesterday was treacherous. Love the soup recipe! And the tip on using red potatoes. Also blanching and freezing celery...learned something new! Your soup will be a welcome lunch or supper with the temperature below 10 degrees tomorrow. Stay warm!

it is about 45 degrees here in az with loads of wind--my chimes have been going nonstop for the past few days--there is nothing better than a pot of soup on a cold winter day--this combination sounds great!--i make leftover soup where i clean out my fridge --usually turns out great! -glad to here that you both are ok after the falls! --please stay safe and warm :)-- i know that 45 is not near as bad as the temps across the country but for a desert rat i'm cold so again be safe and stay warm :)

Kevin! I made this tonite for my wife and myself for dinner. It was delicious! I used vegetable broth instead of beef bullion to keep it meatless and low sodium. Best part..???? Leftovers!!!😎

Get some Yak Trax. They're rubber straps with metal springs that fit around your footwear to keep from slipping. Not that expensive either. Glad no one's hurt. I didn't know I had to blanche the celery before freezing, I'll assume the green peppers will too. I can freeze them rather than make pepper jelly when the guy up the street makes deliveries from his garden. Stay safe.

Dangerous sidewalks here too. Several folks have had slips or falls. Very little traffic in our village, walking in the street is actually less slippery and much safer here.
