I think tortillas are my favorite of all, because the recipe is so forgiving and "flexible" Recipe as promised: Yield :50-60 6in Tortilla width mix dry ingredients 1st 8 1/4cup fresh milled spelt flour 4-6 tsp salt (depending on how salty your feeling that day lol) 3tsp baking powder (I make my own corn-free baking powder) mix wet ingredients 2nd 12TBS EVOO (extra virgin olive oil) 4.5TBS maple syrup 1 1/3 Cup HOT water (may need an extra 1-2TBS of water to mix in later in the process if your dough is too dry) KNEED for 5 min ( can be done via mixer or the good ol' fashioned way, ya hands and some elbow grease) Pinch and roll desirable sized ball- Rest for 20 min (I like to cover mine w a tea towel in a warmer area of the kitchen, like the stove) Roll em to your desired size and thickness and throw 'em on the comal (the special smooth flat cast iron skillet that makes everything taste better) We prefer to cook them lightly on both sides the 1st round, so that they are still flexible and get a good toast for a re-heat w leftovers!
