What you have made is NOT Glucose! You have instead made an invert sugar syrup, which contains the same ratio of Glucose to Fructose as does Sucrose. The only difference is that the Glucose and Fructose molecules are no longer bound together, thanks to the acid and heat. By the way, invert sugar is metabolized much faster than Sucrose because the Glucose and Fructose molecules are independently metabolized. This is similar to the way High Fructose Corn Syrup is metabolized but slightly slower because HFCS has a higher Fructose-to-Glucose ratio, and your body metabolizes Fructose faster than it does Glucose. This means your Blood Glucose measurement skyrockets when you eat invert sugar, but the invert sugar rocket lags behind HFCS rocket by a small margin. Pay attention, diabetics. Please stop calling this "Glucose."
