I got advice from different people (family and friends) that I need to talk to my viewers in front of camera.. to be more connected with them... so I tried it. 2 1/2 cups plain flour 1 tsp salt mix a little add 2 tbsp cooking oil and 1 cup water at first, mix it roughly with a fork until the water gets mixed into the flour Once all the liquid is gone, start to kneed the dough with your hands until smooth, then kneed for 15 minutes be hand or in a bread machine until smooth and elastic Wrap in plastic wrap and leave overnight, then in the morning sprinkle some flour on the rolling mat and roll half of the dough 16*12 inch thin oval/rectangle. Then sprinkle a generous amount of flour on a work surface and more on top of dough sheet, start folding the dough 1.5 inch at a time, to form a flattened elongated rectangle. Cut the rolled dough into thin strips. Gently shake the noodles apart. Ty for the recipe, no disrespect meant by writing this down, using this for when I need to make this, thanks

Right I usually watch the videos while cooking but simultaneously having a comment as well is so helpful when you are in a hurry while cooking and don't have time to rewind or your hands are dirty 😂 thank you haha

Thank you Aeri! I love the way that owl bag came out too. Yes, I made 1 video so far but I never posted it. I don't know what stops me. I think I worry about little things like if my camera is good enough, or if the lighting is good and things like that. I'm not very comfortable in front of the camera either so you really just see my arms and hear my voice. lol But I think about it all the time and really want to start uploading so I probably will. You will probably be my only subscriber! :) Thank you for your support my friend!!

oh..that will be great to add in the kimchi jjigae.. just make sure that you precooked the noodles and wash them to remove extra starchy on the noodles.. so it will not turn your kimchi jjiae into porridge 😅 thanks 😍

If you are not that picky about texture of the noodles.. you can use..but it is definitely different from jajangmyeon noodles.

this particular noodles are good for kalguksu... or maybe jajangmyeon if you want (not quite the same but it can be edible) but not for ramen.. hehe the noodles will be too thick for ramen.. thanks

I've been making videos for years on KZbin. I don't know maybe if I practiced and could break the awkward feeling in front of camera more.. 악녕하세요 Aeri. I looked up the city where you live... and it's not too far from Jeju island and Busan.... I have no desire to go to Seoul. I want to see southern parts of Korea for some reason, I don't know why. Maybe because most people from the states go Seoul. I'm interested in seeing the beaches and landscapes of Korea more than the city's. I'm into peaceful and quiet places.

Yes, then you will love to see around my hometown.. actually not my hometown.. a little more southern part from my hometown..since there are many country sides with beautiful nature and delicious food... our hometown area is known for delicious food in Korea.. so you will be satisfied with many amazingly delicious Korean food over there. :)

Thank you very much...i ll definitely try it...but just one thing can these noodles be consumed often?? In India it is said that it is not good for health but in Korea, Japan and all such countries they eat noodles alot so is it this noodle or any other type?? I really wanted to know

Yes, wheat flour is not that healthy.. I think you have wheat flour food in India too... like naan or Samosa.. Do you eat them often? Our main carbohydrate group food in Korea is rice.. even the rice.. people try to eat healthier.. so Koreans eat brown rice or mixed grain rice.. or rice with beans cooked together.. We will eat sometimes for this kind of noodle dishes too..

The jajangmyeon noodles have different shape and texture..but.. if you are not that picky about the texture, why not.. you can use these noodles for jajangmyeon..

​@@aeriskitchen Thanks, yesterday I've tried the recipe for the first time - even if noodles werent used in kalguksu, but in a polish soup :D they were great, and super tasty. (cooked about 7-8 min in water and then about 10 min with soup)

I will keep it in the refrigerator for several days..and if it's longer than that, I will keep it freezer..but if you freeze, you need to completely thaw them later to use..

There is store bought rice flour noodles for this, but it is not easy to make it at home.. since the rice flour will not have elastic texture wheat flour when you knead the dough.... if I try, I might mix half of the wheat flour and half of rice flour to try this recipe.

I saw your comment that you found a video for jajangmyeon... in Korea.. we say both 자장면 (JaJangMyeon) or 짜장면 (JjaJangMyeon). so pick one that sounds more fun to use to pronunciate. 😉

Yes, you can... I suggest.. to spread them.. instead of all stick together..when it's soft... then.. once they are frozen.. you can put them in a bag .. stack together.. so when you cook the noodles later.. you will get better result..

If you go to a Korean grocery store, they sell thick noodles for "Jajangmyeon (자장면) / 우동 (Udon)" You can use it.

Yes you can freeze them.. but I will try to remove the extra flour as much as I can...and put the noodles on a wide flat surface as thin layer... then freeze them for 1 - 2 hours.. before I put the noodles in the zip lock bag or whatever you want to put in.. that way, the noodles will not be all tangled and become a big chunks instead of noodles.. when you cook them later.. once the noodles become harden... take out the layer...and put it in the storage bag or container.. you can eat it for over a month or even longer.. if you keep in the refrigerator, I will eat it in a week...

Hi Kim, I didn't try to dry the noodles.. so I can not tell the result with confidence..but I can say.. you can freeze them though..

What is the cook time for boiling the noodles?

I do not cook the noodles all the way through for this.. so I cook them for about 5-7 minutes ... drain out the water.. washed them in cold water once to remove extra starchy.. then.. cook the cooked noodles in the kalguksu broth for another 5 minutes.. the temperatures are high for both times...and you add the noodles in the boiling water or broth..after you add the noodles.. the boiling water will lose it's hot temperature little bit.. so I count the time once the water or broth start to boil again... oops.. too long explanation.. so I will say.. it's about 10 -12 minutes total to cook these homemade noodles.. When I share my kimchi kalguksu video, I will put more accurate cooking time for you. thanks

If you make a big batch, maybe you can freeze them.. (In the freezer, you can keep it for over a month.. ) If you keep it in the refrigerator, I will keep it for a week.

Since there are different version of kalguksu, I made this homemade noodle video separately. That way, people don't have to watch the same part again and again whenever I make different kinds of kalguksu. Here are 2 kalguksu recipes links for you. @@aeriskitchen I watched kalgugsu recipe and later I realised its similar to my own country's (Nepal) dish called Thukkpa. Please try making Thukkpa 😊😊

Hi I tired making the gluten free Kalgusu noodles... Came out ok... I couldn't fold the dough for the cutting part... It kept falling apart when I tried to loosen the noodles up. So I cut them after I rolled the dough out. The texture was on the chewy side. I'm going to try it a different way next time. Wish I could load up pictures here.

Hi, let me say that I am by no means an experienced noodle maker.......but I do make bread. Which as you may know depends on the development of gluten, so some of the same principles apply. The gluten in wheat flour is what gives the noodles the stretch and elasticity. When developed, It also binds the structure of the dough together. So if you need/prefer gluten free, you need an extra “binding agent”. Something like zanthum gum. I have relatives and friends who are gluten free for health reasons. So I wanted to be able to make some breads, and other things that require flour. It became very important to REALLY understand the development of gluten. Which made me do a lot of reading LOL 😂. If you’re gluten free, you know QUITE well that achieving an IDENTICAL texture with a gluten free product like pasta......not going to happen. However, you can produce something good.😜👍🏽 So the zanthum gun will act as a binding agent, but the texture won’t be identical to that of standard flour. Because I also DIY, I’ve done quite a bit of research on natural/organic binders, emulsifiers etc. So perhaps Zanthum Gum or Guar Gum, would give you more elasticity? Or at least help prevent your noodles from crumbling. Do you mind me asking what you put your noodles in? I haven’t decided what I want to make with them. @@MsWagQ Hi it was pretty much straight forward . I used Bob mills 1 to 1 gluten free flour which has the binder in it already. I still need to experiment with it. I didn't mix any thing much with the noodles except for a little leftover homemade hot sauce from a stir fry dish I made. What I really want to make is the noodles with black bean sauce. Thanks for the advice. I'm thinking of trying a different brand of flour next time.

I think you can.. make sure that your noodles are fully dried so it will not go bad.. I think you still need to keep them in the freezer after dry though.. to make sure that you don't eat spoiled food..

Aeri Can I use gluten free flour? I'm going to try and use Bob's Red Mill 1 to 1 gluten free baking flour. I'll let you know if it comes out well.

안녕하세요! 에리. I love it. So easy. It's very similar to making homemade Italian pasta... Only difference is they use eggs in it. I would like to know if there's a receipt for gluten free homemade noodles. Are you from Busan? I noticed your accent is a little different. I want to go to the beaches in Busan and Jeju Island.

@@aeriskitchen That's so cool. I'm starting to find out there's many interesting places to see and things do on Jeju Island. I know someone in Busan which will make it easier to go there. When this will be ,I don't know with the corona 19 stuff happening. I wonder if things will go back to normal... ? Maybe not a 100%. We will see.

울엄마 국수하고 비슷하다. 예전엔 아마도 반죽에 기름을써서인지. 국수를 만들어 쓸려고 하는데 남편이 별로라했는데 건강생각하는지 Okay 를 했다는 !! 만들어서 보여줄께.... 아! 예전엔 오래동안 발로 밟았눈데.

oops... it is always a big challenge for me to speak in front of camera. I tried different times and I still feel awkward doing it.. 😭 Some people have natural talent for it?? or some people just keep practicing ??? I don't know..anyway.. believe or not.. I tried to cook and talk in front of camera several times before.. it was a total mess .. cooking.. filming by myself..and talking... 😂 I couldn't focus on any of them well... so for now.. I will start from talking for introduction or ending... Thanks for your advice.
