If the cheese does not taste like mozzarella, try using rennet and citric acid. The cheese will be very hot out of the microwave, and make sure to get all of the juice out every time. Hope this helps!

Vinegar gives a strong taste, I didn't like it. I like using rennet and citric acid.

Don't microwave it. Turn up the heat off the whey and pop it back in there for a little bit, then stretch and fold.

Instead adding vinegar. Squeeze a lemon in there right before boiling. Then remove in a cheese cloth and rinse with water to remove the lemon flavour. Let it sit in the fridge for some time. And bam you have paneer

That my friend is not mozzarella. Mozzarella is stretchy and tastes different than this. This is paneer which doesn’t use rennet.

You have to stretch the curds to get the right texture. Mozzarella is "pasta filata" meaning string paste. What you made is not mozzarella

A cheese cloth. Strain the curds and milk through it, bundle up the curds, and squeeze out the excess liquid.
