Great video about making fruit liqueurs, but there is a method of making an infused liqueur in days rather than in months, and that is if you have a sous vide and set the temperature of the water bath to 150 F and submerge your tightly closed jar in the bath for 90 minutes, the heat will force the flavors and colors from the mulberries (or any berry) into the vodka. What I generally do is add the sugar after I am satisfied with the process, and that may still take another few days at room temperature to complete. Certainly, you can enjoy the liqueur immediately or you can allow the fruit to continue to macerate for another few weeks before you strain out the fruit. Another trick is to strain the fruit and then add enough water to the sugar to make a simple syrup (one to one ratio of liquid to sugar, so 1 cup of liquid to one cup of sugar but you then boil the syrup on the strained fruit to further flavor the syrup and then add that flavored syrup to the liqueur to sweeten. As you note, the fruit will have absorbed some of the vodka which is why the amount of water you need to add may be less than a cup as some of that absorbed vodka will drain into the pot. Note, that adding any water to the sugar will reduce the alcohol by volume of the vodka.

You definitely should. It’s a fantastic berry. The jam is wonderful too. I made 18 jars last year and I gave them as gifts for Xmas. Nothing like fresh fruit right in your or your mothers backyard. Happy berry picking.

@@suzyrebelo I would imagine I could use blackberries as well. There were free ones in WA state but now I am in Arizona and they are pretty expensive.

Hi Steve. I’ve never made it from dried fruit. I think it would taste very different from the fresh fruit. I know you can use dried fruits to make different liqueurs but I really don’t know the quantities or process to guide you. Sorry about that. This method works great with fresh cherries too. Hello. You can infuse into any spirit you like or fortified wine. The flavour will vary depending on what you use. I use vodka because it’s neutral in flavour allowing a lot of the berry flavour to come through. Alternatively, I have also dry vermouth to infuse the berries. This tastes really good too. Also, it is less alcohol and makes a nice sipping mulberry liqueur. Hope this helps and thanks for watching.

My daughter used to have 3 mulberry trees, at the t8me I lived overseas. I was so disappointed when she moved. I now have a neighbor with a mulberry tree and just gathered my first basket (using the tarp method is fantastic!
