What is organic baking powder?
Baking powder is a product used to leavened baked goods. It's a quick alternative to yeast and includes three ingredients: Baking soda, a starch and an acid. The acid activates the baking soda and the starch keeps the two ingredients from reacting during storage.
All commercial baking powder's I've found online contain monocalcium phosphate as the acid and non-organic starch.
Ideally, I'd like to purchase an organic baking powder. I’ve searched for organic baking powder for a while and haven’t been able to find one to buy.
How does baking powder work to leaven baked goods?
Here's deeper look at why recipes call for baking powder:
The baking soda is what causes baked goods to leaven, or rise, when introduced to heat.
Some recipes call for just baking soda, and this is because there is already acid in the recipe. However, most recipes don't already have acid in the recipe which is why many recipes call for baking powder.
This is a mixture which includes the acid and baking soda together. When the baking soda and acid come in contact they create the leavening effect. The starch in the baking powder prevents the acid and baking soda from reacting while in the container.
Once liquid is added, the starch dissolves and the acid and baking soda can combine and do their magic.
Why use organic baking powder?
I love baking but don’t want to use commercial baking powder because of the ingredients.
I also like to follow an alkaline diet and commercial baking powder is not good for this. So, I decided to just make my own using organic cornstarch, natural baking soda, and cream of tartar.
Natural baking soda
For this recipe, I like to use natural baking soda. The natural baking soda comes from the earth directly. There other type, most commonly used in commercial baking powder, is chemically treated.
My preferred brand is Bob's Red Mill which I purchase as a case on Amazon. Baking soda lasts quite a long time so I just store the extra in my food storage until ready to use.

Organic Cornstarch
I like to use organic cornstarch because it is non-gmo and usually better quality than non-organic cornstarch. My preferred brand for this is Anthony's Organic Cornstarch which I purchase on Amazon as well.

Cream of Tartar
The acid in this baking powder is cream of tartar. This is a natural byproduct of making wine. It activates the baking soda in the recipe.
Most commercial baking powders use a chemical process to make monocalcium phosphate as an acid in baking powder. Instead, I like to use Anthony's Premium Non-GMO Cream of Tartar.
