Today we make Peach Wine using peaches that after we will use for Peach jam.

Peaches 3 kg
Lemon 1
Water 4 litres
Sugar 1 kg

I press my peaches in a fruit press. Then take the juice and add pectic enzyme (to clear the juice of cloudy particles) Add some sugar if you want a stronger ABV (alcohol by volume) Next add Lemon juice to lower the pH. After that add black tea for tannins. Then I add wine yeast. And that’s pretty much it, to make good wine. I use the left over peach material from pressing the juice to make a second wine that I distill into peach brandy. 🍑 😊

I bought some but I bought them for a cobbi🤣🤣🤣. When I was young ( 19 to 21) I use to drink a wine called Peach Creek. It was my favorite. Nowadays and shortly after (age 24 on) I could no longer drink wine. It gives me heartburn. I'd love to make this wine if I could drink it and I would even though but none of us drink alcohol.i do cook with wine though. I bet peach wine would be good in many dishes especially desserts❣️❣️❣️

Amazing video as usual my friend Andrea😊. Will definitely gonna try this in peach season. It's may be because of yeast alcohol intolerance ur wine becomes flat or may be due to leak flip top bottle. Anyway ur videos are always less complicated and very informative. N also u never include high end expensive equipments..... still you deliver great wine at end. Ur simplicity has made u famous.I learn to make beautiful wines n champagne from ur tutorials. Your efforts to make such beautiful tutorial videos are highly appreciated. This isjust about halfway towards a bellini… less sweet but there’s peach flavour. Seems delicious to me! What you can do after fermentation to ensure you get sparkling wine no matter which yeast you use, is to seed your finished wine with a very small amount of champagne yeast. Champagne yeast is usually a ‘bayanus’ strain, and those are often so-called ‘killer yeasts’. Any viable yeast in you wine serves, in addition to the added priming sugars, as food for the champagne yeast. It might take a little longer for you wine to become sparkling because you add so little and it needs to establish itself. But that’s also depending on general the conditions (acidity, temperature,…). But on the whole, after 2-4 weeks you should have sparkling wine at a higher success rate. I always keep champagne yeast on hand for priming wine an if I have even the slightest doubt it’ll go sparkling I use it.

I think you mentioned adding almonds somewhere in the video. Almonds contain emulsin, which breaks down cellulose; so if you're leaving the peach skin, the almond enzyme is beneficial.

Hello brother, In my experience it’s difficult to get something with that high an alcohol content to sparkle. Usually by the time the original fermentation has taken place the yeast has reached its maximum threshold for what it can tolerate alcohol wise. I have gotten carbonation in something around 11.6-12 by adding champagne yeast just before bottling. But that can effect the taste of your final product.

Yes. I’ve had the same experience. Alcohol will slow down yeast activity. I’ve tried adding a little bit of champagne yeast and sugar (or dextrose) at the end for carbonation, but it sours the final product somewhat.

Yeah true but ur wine would be cloudy as all the sediment will settle down at bottom n after de cocking it will get mixed in ur wine. So home made champagne is always cloudy. Anybody having the solution for this please share

I dare you to make a batch of white (green if you prefer) wild grape wine. I've managed one once. It was super dry and ultra nutty with short but extra crispy finish. It's just pure hand-drawn juice, no commercial yeast added for the WIN!

Hello again from the UK. I noticed in your video that you did not transfer a little yeast from the fermenter to the bottles after adding 10g of priming sugar and therefore the wine failed to carbonate after 3 weeks of conditioning. Nice video. X

What if you used an immersion blender to puree the cooked peaches and then added that to the fermenter? Would that have deepened the color, added more natural sugars, and given the wine a more peach-forward flavor?

You don’t need to blend it because it will be difficult to filter, if you add the fruit in the fermenter you will have the same result 👍🏼 but not peach jam 😉

I guess no sparkling in addition to sweetness, means there were no secondary fermentation. I think your yeast did not live (or stalled) after primary fermentation.... but it will always taste good my dear.

Your recipe has 1kg of sugar, but I don't see in the video when you add that. Except the sugar packets in the bottles. Did I miss when it was added to the peach mixture or the fermenter?
