When you transfer your filling from the mixer to the fridge, roll it into a thick log and wrap it in plastic. When it comes out well-cooled, you can just slice it into discs and dip them.

Here in England we call them peppermint creams and sometimes the cream is a mint green so if your filling milk is dark maybe could use a green food colouring , 👍

@@TheSaltedPepper I have had good luck putting most of the chocolate bits into a Ziploc bag, zipping the top almost closed and floating it in a pot of barely simmering water. Tempering is easy too if you save some out to add in after the rest has melted. When it is ready, it’s very easy to dry the bag off, snip off a corner of the bag and proceed with the recipe. It really does eliminate the mess of working with melted chocolate. I make chocolate turtles and also melt the caramels the same way. I am a new subscriber because of this peppermint patty recipe, and I also really enjoy the comments underneath. I plan to try making the peanut butter fudge using the method I found in a comment underneath.

If you want the whitest sweetened condensed milk, check the expiration date on the can. The longest dated will be whiter, the short dated or outdated, perfectly safe if the can is not damaged, will be darker caramel color. I have used this product for many years and for some recipes I actually prefer the short or close dated better for the slightly richer flavor. I have even used sweetened condensed milk up to a year or so out of date and it's even richer in flavor. The closer to the date it is, it will also be slightly thicker in consistency so adjust the powdered sugar accordingly. This recipe sounds wonderful, and I will definitely be trying it soon. Thanks! How is the best way to store these in the freezer. Do I wrap them with plastic or can I just stack then in a storage container in the freezer?

@@TheSaltedPepper You could tint the filling red or green for the holidays and use it in a truffle mold. Better than throwing it away. :o) Once I was trying to make huckleberry fudge using fresh huckleberries and the fudge was just too soft for fudge, so I use it as filling for truffles and it was so good. I sold them out at the Saturday Market. No one knew it was a blunder. hahaha.

I would love to make these in different flavors: Peppermint, Lemon, Orange, and add a bit of food coloring to make the mint ones green, lemon ones yellow, and Orange ones orange. It might be worth making some vanilla ones as well, and those could be beige with no problems. No end to the goodies you can make with different flavors available.

I love peppermint patties ❤ Here’s a bakers tip for making buttercream frosting White-add a small amount of purple food coloring-sparingly. It will probably work for your dark colored filling too.

Hi! Just so you know...you can freeze sweetened condensed milk! I freeze it in cubes, the put the cubes in a vacuum sealed bag in the freezer♡

I like it when it crystallizes around the edge of a partly used can of condensed milk,. Especially straight out of the fridge. Because it's non acidic, it doesn't ferment so is safe to leave in the tin. Equally nice on a piece of bread and butter.

When was a child in the u.k. one of the first things to come off rationing in the early years after the 2nd. World War was sugar.It was apparently one of the very first things that our food ministry decided would give us a ‘boost’ to have as the The nation had been without this for soo very many years.Peppermint creams were a great favourite sweetie/chocolate delight. They were made with royal icing that was left over after our Christmas cake had been decorated.The icing was rolled flat ,using fine icing sugar to prevent the sticking of the icing to the board. The small round shapes were left to slightly harden and the turned over to harden the base. These were then dipped in melted chocolate.( The darker the better!!).when the chocolate had hardened they were ready for us(we 3 children) to be given one. I slowly savoured mine to make it last as long as possible,but I suspect that my two brothers gobbled theirs up as fast as they could,hoping for a second one !!! . I celebrated my 75th. birthday on 5th of December and still remember this so vividly. This making of sweets ,all different flavours and type is a great way to get young children interested in home cooking. You could simply add a couple of drops of red food coloring to the 'darker' condensed milk and then you'd have a pink center to the patties.

I roll mine our under between two sheets of parchment to the right thickness and use a cookie cutter. perfect rounds every time.

Just some additional tips - Optimal kitchen temperature when tempering chocolate is cooler than 74 degrees F. The humidity should be 50% or less. There is a microwave tempering method which helps if you don’t have an electric double boiler. Last tip, check the percent of cocoa butter in your dipping chocolate. The higher the cocoa butter, the easier it is to temper and use. Great video! I love the peppermint patties too!

I'm definitely going to make these patties. I love a trick of Alton Brown's, where he uses a paper plates, the cheap kind, to add dry ingredients to the bowl. It cuts down on the mess and is really easy. Thank you

We usually roll the filling into a long roll and put it in the fridge then slice them into thin discs. So much easier than flattening them, and nice sharp edges. We also add a dab of green food colouring (Green for mint) to cover up any yellowing. We only have Eagle Brand here.

Sugars tend to darken as they cook down, which ends up looking like a faint yellow or beige. This is common in marshmallows, and it's why Kraft and other manufacturers add a tiny bit of blue food coloring to their product (didn't you ever wonder why blue food coloring is used in a product that has no traces of blue in it?). Blue is roughly complimentary to yellow/beige, and can "correct" for the yellowness and pull the final color of the product back to a neutral white.

It really burns my bacon that they add blue food coloring to marshmallows. My dad died from stomach cancer and it's a pain to find candy that isn't full of harmful, unnecessary "extras", like dye. I know it makes them white, but sugar turns golden when it caramelizes so I legitimately enjoy candy that has caramal colored tones.

@@1MissEllyLove the dyes in question are food grade and safe for consumption at the microscopically tiny amounts used in foods. Ethanol, on the other hand, is a group-1 carcinogen (known for a fact to cause cancer) and people guzzle it down by the liter every day.

@@BarryPiper I think you underestimate the amount of candy American kids eat 🤣 I know I, as an only child, ate enough to cause me to vomit on more than one occasion so "miniscule amount" really only can be such if you stick to the serving suggestion, and I have never met a kid who has 😅😂 I don't drink alcohol, smoke, or use products with artificial fragrance (if you really want to point fingers at cancer causers) either but when people put food coloring in foods meant for children, it bothers me because kids don't know any better and adults are teaching them it's fine, when it's actually harmful. It's totally unnecessary and encourages the toxic culture of Looks over Substance. I like my treats to actually be treats, not something harmful or feel guilty about enjoying, something I'm trying to teach my kids. Hence why we don't eat dye and enjoy our caramel colored, organic, homemade candies 😉 Feel free to put whatever amounts of whatever you want in your own food and body, but after watching my dad's horrific death I personally highly value food that hasn't been adulterated by artificial food colorings.

@@southerncatlady6680 ethanol is the chemical name for the alcohol found in beer, wine, liquor, etc. Often present at concentrations of 10-20% (beer & wine) or as high as 95% (Everclear is 95% ethanol by volume). The IARC lists ethanol as a group-1 carcinogen. Contrast that with food additives like preservatives, conditioners and colorants that are found in foods at concentrations far lower than a fraction of a percent. People are freaking out about the wrong things.

I’m going to try this recipe again, I’ve done it once, but this time I am going to add cocoa powder to the mint filling. I’ll be using about a quarter cup cocoa for 1 cup of sugar. I am also probably going to increase the condensed milk, but I will just add as I go to get the right consistency. So I’m going to have chocolate mint peppermint patties. I’ll let you know how it goes

Have you ever tried rolling out the cold paste like cookie dough and then using a round cookie cutter to form the patties? You could even make different shapes! Also, if you placed the dipped patties on a cooling rack (with parchment lined tray underneath) after dipping you could avoid the pooling and the subsequent "need" to trim the excess (or just leave them rustic!)

Nestle has a lactose free condensed milk too. It is just as good and the same color. I made fudge with it and the extra pound I gained was worth it.

Look fantastic and yummy :) Food for thought on the parchment paper, I find it easier to sit flat in pan by turning the pan upside down and forming the parchment on it and then flip it and you will see a huge difference in how it fits in your sheet pan, a lot less struggling with the roll ups. You can also scrunch it all into a ball, then undo it. It will fit into the trays much more easily, but won't leave the smooth finish to the bottoms of the patties.

Or, you could use a small round cookie/biscuit cutter to shape the patties and then use the same one to trim the chocolate coating later.

First of all, this recipe is divine. Way better than store bought. Here are my other takeaways. At Christmas time, Andes candies sells a peppermint version. I added them to the dough. They are softer than crushed candy canes and lend great flavor and color. I use Merkins coating chocolate when I’m too lazy to temper chocolate. The ‘dark’ version tastes more like hot cocoa than true chocolate but I like it. I tried doing a 50/50 blend with Ghirardelli’s baking chips and the flavor was better but although they did firm up at room temperature, there was no snap. Soft coating melts too fast in your hand so I went with 100% merkins. DON’T use your rubber edged paddle if it is plastic as this dough is so stiff that it broke mine. Second time I’ve done that. First time was with royal icing. Sigh. They are definitely easier to dip when frozen and they thaw quickly. For the left over chocolate, I spread it on parchment and sprinkle with crushed pecans, coconut, and cranberries. Sort of a trail mix bark. I had to hide these peppermint Pattie’s from my husband. He would have eaten them all. My only complaint is that the recipe only made 61 instead of 62 candies! ;) thank you for this video

I put Dove dark chocolate in a Pyrex measuring cup in the microwave to melt then I dip whole ripe strawberries in it. So easy! Maybe this will work for dipping candy. Good luck.

The closest I ever came to death by choking came as a result of my passionate love for these things....... thank (Highest Power) my mom was right there in the kitchen....... I was telling her some story that had me pretty wound up, I breathed in a chunk and everything about being alive screeched to a halt. When my dad got sober in the 80's, Peppermint Patties were his replacement of choice....... ALWAYS many bags of them in refrigerator :) I'd eat them til my esophagus was smoldering, and just eat more trying to put out the flames :) Can't wait to give this a try....... Christmas gift idea :)

Quick, sweet, and to the point! no excessive talking or clanging of utencils on the pots...., which I appreciate because I wear earplugs awhile listening. These look delicious!

And don't forget that water in the chocolate will make it seize so be careful with the steam. I usually use my microwave on hi for 1 min. and then add 20 secs after each stir until I get it melted good.

I don't know how I got a perfect batch because this was a comedy of errors (my doing, not your recipe). Eagle Brand cond. milk is only type here, no choices, but 300g only which is only 10oz so knew I was going to have to tinker. Forgot the butter but added it at the end and mixed that in. Then the new bottle of pure Mint-Peppermint extract ran down the side of the bottle rather than into the tsp. Eventually I got some in. Then powdered sugar had to be eyeballed because of smaller condensed milk proportions so kept adding in 1/2 cup bits. Your description was perfect on how it should feel, so that saved me. I didn't even have to chill because was not sticking. Shaped balls and then flattened with a glass bottom and placed layers on to cookie sheet separated with parchment paper to freezer. I know we have to TASTE the white mixture and of course had to do that many times to confirm it was perfect. In the freezer now and chocolate nearly melted so soon will be finishing them off. I used semi-sweet chips and a lot of unsweetened baking chocolate and tasted that to make sure it is just right too. I've only ever found them online and needed to wait about 10 days for them to get here by mail with other essentials. I've had the After Eight and Russell Stover brands and yours by far exceed in taste! I also love that I can keep them in the freezer and nibble. Next time I will roll them out on parchment paper on cookie trays, freeze, pour chocolate over, and cut into squares like the After Eight brand. Time to dip. I will never be able to thank you enough for this excellent recipe and demo!

Can't believe I haven't made these in 8 months! Made a big batch today and in the fridge for tomorrow's chocolate dipping session. I have had 2 little taste checks of the fondant to make sure they are good though. Still perfect. I now measure out the condensed milk in cups so it is 1 3/4 cups so need more than one 300 ml small can. I found that the coconut oil made all the difference in having the chocolate just right for dipping.

these look awesome, going to try it soon,, if anyone likes fudge, get a 12oz can of vanilla icing and a 12oz can of peanut butter, put both in a bowl and nuke in the microwave for approx 1-2 minutes , poof fudge easy and perfect,I pour mine into a square glass pan and put in the fridge so they setup faster, you can do perfect chocolate fudge by using small bag of semi sweets mixed with a can of condensed milk, same way.,... yummy easy fudge

@John Hill. Do you know if the icing and the condensed milk are perhaps interchangeable? I mean, have you also tried using condensed milk with the peanut butter? Yours is a great tip! I have made both peanut butter fudge and chocolate fudge for years, stirring with a spoon forever at the stove.

This looks so good! My dad loves peppermint patties, so I think he would appreciate these. Also, if you don't want any coconut flavor if you have to add coconut oil to the chocolate, you can use refined coconut oil instead. It's basically the same thing, but the coconut flavor and aroma has been removed.

Parchment paper can be tamed by crushing it into a ball. When you spread it out it will fit your baking sheet/roasting pan/etc. easily.

If cutting the recipe and wondering what to do with a half can of milk? Pour the leftover milk into a small jar, attach lid and place jar in a water bath in your crock pot and let it cook and then you will have delicious eye rolling heavenly carmel. Amazing!!!

I Can not wait to try these. My husband love’s peppermint patties, thank you! I giggled when you said if you made a half a batch you wouldn’t know what to do with the rest of the sweetened condensed milk.. it has to be the hardest thing for me to open a can and not keep tasting when using it in a recipe... my first thought was ... what would I do with the leftover half??? 🤔 a spoon, and try to pace myself for the next few days! 🤣😂🤣

I'm SO GLAD this was recommended to me because I LOVE Peppermint Patties! I tried to make them a few years ago, but that recipe was just awful and I ended up throwing everything away. This recipe looks great! And I know it will work because you made them for us on video. This will be a January project for me. And I know what you mean about steam burns! I'm a quilter, so I'm always using my iron with a LOT of steam. I've been burned by steam more times than I can count. Just the other day I was pressing a small item and a blast of steam hit one of my fingers and went under my fingernail. WOW that was painful!!! Because of this video, you have a new subscriber. ME!!! Thank you for sharing this tutorial!

​@xyzsame4081 No, it looked like the chocolate had "bloom" from not being tempered. Chocolate chips often look like that if they've been stored awhile. Not appealing.

I guess you could use a pale green food color to disguise the beige? Christmas colors ? Personally they could be any color, I'd enjoy😁❤

I'd add some chocolate to the beige filling? That would disguise the beige (could try powdered chocolate with the icing sugar) and make it a double chocolate patty. I'd eat it beige too since these are my favorite treat. Not a traditional look, but neither is the beige.

Sweetened condensed milk darkens with age even though it is still within the "use by" date. It also darkens if left in a hot location while still in the can. Darker doesn't mean bad, just darker!

You can make carmel With it... my mom would put the entire cab in a pot of simmering water... simmer it for a while (not sure exactly how long) when the van cools you can open it up and have a soft set carmel...

This was just purchased, of course it still could be old. I never said it was bad, but it definitely made a beige fondant which is not what most people would prefer in their peppermint patties.
