When my daughter was in junior high school, she made these (with a little supervision by me) as a science oral-report project. We took photos of all the steps (dry the cherries, make the fondant, wrap the cherries, melt & temper the chocolate, dip the cherries, let them set for two weeks) and she did a write-up on each step. Her conclusion described the science behind why the fondant changes to liquid (the chemical reaction of invertase) and she brought the delicious treats to class for everyone to sample at the end of the presentation. Happy to say she earned an A on the report!!

That's awesome! My mom was a teacher and she often used food in her instructions. I'll never forget the fridge full of squid for one of her history lessons. They were creepy looking to me as a kid! The kids always loved learning and then eating the food.

@@camdenswife my husband developed a love of oriental foods due to his association with his Japanese auntie when he was growing up - and was always experimenting. When our daughter was in pre-k daycare operated by a friend, she pulled us aside when we went to pick our daughter up one day and asked us about the spider soup we fed her the day before. Apparently Joanna had gone into the daycare and was talking with her little friends, enthusiastically telling them how she had been fed spider soup for dinner. The various reactions from the children caught the caregiver's attention and she felt she had to speak with us about this situation - thinking she might have to file a report with child protective services. My husband and I broke out in a belly laugh and explained to her that, before serving soup the night before, my husband tossed in a couple of handfuls of small squid mantles, and Joanna was fascinated by it. The soup became nicknamed spider soup because of the appearance of the mantles after they had been in the hot soup for a little while. We still talk about that family joke and we still refer to my husband's soup as spider soup. He's come a long way from those early years and now is very well known in our area for his homemade kimchi.🤭

My grandma used to make these but she took a needle after dipping them and put a few drops of brandy in them before sealing the top with the chocolate swirl. The ones with the white swirl us kids could not eat. I was so glad when I turned 16 and got to have the adult chocolate covered cherries with the white swirl lol.

Those were my dad’s favorite, I bought them every year for him, sadly he passed in 2019, but I still buy them as a memory to him.

Brings back lots of wonderful memories! I’m 75 and this was a Christmas staple at our house we didn’t know anything about invertase but we mixed cream cheese and powdered sugar until it was the same consistency as what you have there. We did not cover the whole cherry we just flattened and put a band of it around the cherry and then dipped them in chocolate. In two weeks they were very very good and completely liquid inside except for the cherry.

That is interesting! I have never heard of using cream cheese, but I can only imagine that little bit of sour pairs well with the sweetness. Almost like a cheesecake center.

Ok so waiting 2 wks , MAKES THE LIQUID INSIDE ?!? that's very interesting. I wish my dad could know this . he always LOVED them and wondered what the liquid was. In Sicily they have a candy looks like a treasure box. With a cherry. But the liquid is alcohol. 😆 you will get buzz if you eat 2.

I’m 50 now. This is how I grew up making them at the holidays. We also used cream cheese. I still do to this day. We also do these with blue berries. Not as sweet but the perfect creaminess.

OMG!!...TWO WEEKS?...When I was pregnant with my first son, I walked into a department store...they had a display of Cella’s Chocolate Covered Cherries as soon as you walked in...I finished a whole box before I got to the register, to pay for that empty box😂😂 Thanks, Louise...I hope I can do it!🙂💕

Wait 2 weeks ??? Not a chance !!! A friend and I decided to tackle this homemade candy recipe together. It was very time consuming but we had fun with it. After the mess was cleaned up and our mini-master pieces were stored away for the 2 weeks to obtain the magic juice inside we washed our sticky hands and celebrated our new found candy making skills with a celebatory glass of wine. We toasted our glory and my friend said to me " You know what would really go great with this glass of wine ?. To which I replied " Chocolate covered Cherries ? "You guessed it" she said. And with that we were off the closest Rite-Aid. On the way back home we convinced ourselves that this "Impulse Purchase" was simply for testing and comparison reasons. Uh Huh...Right ! When I make mine, I roll the cherries in powdered sugar until they are well coated then dip them in the chocolate. ( I dip them twice cause I LOVE CHOCOLATE) Then I let them sit and the center turns to liquid.

These are a tradition in Sicilly on religious holidays. This recipe is super close to my Nonna's (minus that inverted sugar stuff, I'll be trying that for sure, thanks for that tip). Nonna had some "Italian Granny trademark secrets" to make all this a bit faster...but this is the closest I've seen a modern take on these come to hers. She would've approved for sure :D ....tip for you, if you want to try - I have a feeling sometimes you get the odd "leaker", she used to use couverture chocolate to dip (sets up thinner, faster and with a more professional finish) and she would do two applications turning the cherry candy upside down on the second dip, just to make sure there were no holes or cracks in the bottom. Nothing worse than going to all this trouble and wait while you crave the heck out of them and then have them leak out. Really great job, I'm impressed, with both this and your channel. @@TheSaltedPepper any bulk-food store should have it in the chocolate section. It's amazing for anything you need to dip, no tempering needed and the perfect finish. All the best for 2021

I’ve used the exact same ingredients in the same quantity as Louise without having to add any additional cherry juice. I weighed each ball of fondant and found that between 10-15 grams is perfect. I tried to be conservative for most of them for a higher yield. I ended up with 21 finished cherries. I used the bottom of a drinking glass to flatten them and each was 3” in diameter when flattened. After having trouble with my chocolate I went to the store and bought the Ghiradelli melting wafers. They work much better and I will only use them for my candy making FROM NOW ON. Definitely worth the extra money you might spend..

I just have to say this I fell asleep watching another Ytb'r making Christmas candies (I've not been sleeping well gotta go back and finish watching hers lol) but I woke up to you making the peppermint patties I stayed bc they were my mom's favorite and well she made them a fave of mine so I will be making them someday.... but then I start watching this one and chocolate covered cherries have always been my favorite I prefer the liquidy kind opposed to the creamy ones but lets face it chocolate and cherries ya can never go wrong... and then I notice the date this was posted and I subbed this was posted on what was my mom's birthday and it made me smile so thank you for that the holidays have been a little hard the past 6 yrs and I miss my mom tremendously I'll be making these soon with my daughter as soon as I have my kitchen back :)

I “discovered” your tutorials by chance yesterday when you demonstrated how to make Peppermint Patties. Today this tutorial. I must comment on the fact that I love the style in which you present the information. Your step-by-step easy mannerism is reassuring that even I can successfully accomplish making this candy treat. I am becoming an avid fan. On a more personal note … This was my husband’s favorite candy. He would have loved to have me make a batch of these for him. 😀💕

This looks like a great alternative to the extremely expensive and extremely cheap cherry cordials I can find. I am thinking dip in white chocolate then dark.

Trader Joe has excellent chocolate covered cherries (from Hungary)just before Xmas. They sell out fast. Excellent taste. About $7 a box.

I’ve made these lots… I always dipped mine with a toothpick. That left a small hole . Then I took a hypodermic needle and pulled some cherry juice from the jar to squirt down in the hole that the toothpick left. That speeds up the liquefaction process and they are so delicious. Just melt a little more chocolate to cover the holes.

My hubby and I are watching this together! These are his all time favorite candies, and they are a rare treat since he has type 2 diabetes. When we try this I think I will use a fork from the thrift store and bend the handle up a bit to make a more user friendly angle. I have to work seated due to medical issues.

If your chocolate is streaking, the chocolate has gone out of temper. It happens with using chocolate chips because they are made to hold their shape when baking so they are dry. To keep that from happening add a small amount of shortening, or coconut oil or butter. Add in very small amounts so your chocolate will still harden when cool. Some people even use editable wax/paraffin. Love your videos! Those look very yummy.

I have made chocolate covered cherries from scratch over the years. I cooked the fondant, your method looks easier ;) I used a little corn starch on my hands if the fondant began to stick. I really want to try your method. Thank you for the video! (I used to have to hide the cherries in various spots or my husband would eat them up, he didn't think he should have to wait 2 weeks!)

I used to make chocolate covered cherries but instead of dipping I used the plastic candy molds. I used a good grade brush to brush chocolate in the mold add the cherry, top it wit fondant and the cover the bottom with chocolate. It worked well and less messy. It’s been years since I made them. I also made peanut butter cups same process with the molds and less messy.

Ive watched cooking and baking videos for ever. And I swear you are the best instructor i have ever watched. You are so real, you talk and explain to where its so easy to understand. You also explain everything and dont leave anything out. I wish you were around when i started baking. By the way, ive been looking for the way on how to make these chocolate covered cherries, but with peanuts in the chocolate. Its actually a candy bar in Quebec, Canada. And my exs mother use to make them for xmas. She used egg cartons as the mold and they came out exactly the same size as the candy bar in stores. And well this recipe is definitely probably going to help me Finally make these after Almost 25 years Of searching for a recipe

thank you for this. I attempted chocolate covered cherries a few years ago. My recipe was lacking in a lot of details. I had cherries and powdered sugar covered in chocolate but no liquid in the center. I can't wait to try to make them again. thank you thank you.

I just heard that covering the cherries in powdered sugar and dipping is a shortcut, but I would do it this way because they are perfect!

You're a zen baker - I love your calm demeanor and no stress baking style. When I was a kid this was favorite and my Grandma would buy me a fancy box for Christmas. My favorite candy from See's Candies is their chocolate covered cherry. I'm going to try this recipe, although it could be dangerous. ;) Happy New Year!

Love your channel. I thought I would share a Cordial correction (pun intended). The liquid syrup in chocolate cordials is called "cordial". Cordials are fruity syrups that can be non-alcoholic (cordials) or alcoholic (cordial liqueur). The sweet syrupy liquid chocolate-covered cherries is literally a cherry cordial. Hence the name of the confection is technically chocolate-covered cherry cordials. Nougat is not liquid ever. Nougat is a solid fluffy, chewy confectionery which is made of chop nuts sugar/honey and egg whites and sometimes includes chop dried fruits. Nougat does not have to be covered with chocolate, but it can be. Cordial and nougat are not the same thing. Just thought I would share my cordial pun.

LOL! So, what do you call it when turns from a solid to liquid? I was really stuck with what to call the mixture. Probably fondant is a better choice. LOL

I like you. I like to ground up salted pistachio nuts and add them to the left over chocolate and then drop teaspoonfuls onto baking parchment to make little candies. Waste not, want not. I really love your videos!

Cut the 2 center prongs off of a plastic fork, leaving just the outside 2 prongs, and use that to lift your candies out of the chocolate. You don't have to shake it as much, and, I looks great.

Thank you for the tutorial. I grew up watching my mom make chocolates and she used to just dip them with a toothpick and then she used a pipette to cover the toothpick hole when she was done. As I got older I did some of the chocolates as well and I did the same thing as her and it seem to work well. I have a friend who loves these kind of chocolates with the cherries and I’m so happy I found your tutorial because now I’m going to make them for her for Christmas. This was awesome

Ohhhhh my gosh. Now I totally understand why it's called "invert sugar" as well as why they are sometimes called "cordial" cherries (if you use brandy)!!! Can't wait to give this recipe a whirl!

I'm so glad your video popped up! We LOVE chocolate covered cherries! 😍 So I had to watch it! 😅 ANYWAYS I just bought my kids what they need to make hot cocoa balls and we never used a double boiler or anything to melt Chocolate so I bought a little bowl to go over one of our existing pots but I thought the water would have to touch the top bowl! 🤦🏼‍♀️ I would have completely ruined all their chocolate! So thank you for that advise! 💕💝

I watched a family owned candy company make these. They threw syrup covered cherries in a container of powdered sugar, adding sugar as the syrup soaked it in, until it got a nice thick coat of powdered sugar around the cherry. Then they used a fork to quickly dip each coated cherry in chocolate, and walla done.

oh lordy...ladies ya roll the cherries with out stems in powder sugar..put them in freezer to get really cold , then cover with chocolate. No fondant required. Yes, they will make the liquid centers. Ya can get about 49 cherries per 1 pound jar of Maraschino cherry jar. The ones with fondant such as Queen Anne Cordial Cherries type,don't make the liquid centers. The Cella's Milk Chocolate Covered Cherries type do have the cherry liquid centers. I make them all the time with ease. I hope this helps ya all. Blessings, Merry Christams & Happy New Years!

I’m so happy to have found this recipe! My mother and grandmother used to make Reese’s peanut butter balls and used paraffin wax in the semi sweet morsels to dip them. Wonder if I could use paraffin wax instead of the wafers.

just a few remarks: 1. you are absolutely lovely and a joy to watch. 2. chocolate covered cherries are my favorite, too. 3. i once saw a professional candy maker make them by repeatedly panning drained cherries in powdered sugar until the juice stopped seeping through--this looks MUCH much easier and more reliable! 4. how on this green earth do you wait 2 weeks to DeVoUr them??? :)

The one that broke down, maybe you should have rolled it in sifted powder sugar, to get the outside to form better. Just a suggestion. Great idea you have.

70 years ago, when I was a little kid, my aunt worked in a high end candy factory. Expensive, hand dipped, chocolates have a “signature.” She taught me how to read a box of good candy. The shapes were indicative of whether it was a creme filling, nougat, caramel, jellied, etc., filling. The top swirl would be V for vanilla, O for orange, C for cherry, M for maple. The chocolate covered cherries were always recognizable!

Thank you for the tip of using the dehydrator function. I have the food flip oven. I normally blot the cherries as dry as I can but it's such a pain. I soaked my cherries in bourbon for three weeks so their nice and boozy! (My best friend asked if I could make bourbon soaked chocolate covered cherries). And I'm a bourbon girl living in Kentucky .

this was a great lesson for me! the video is excellent. at first i thought this was a long video, but i love the time you take to explain things. very important details. the comments i have read are also great, filled with memories and tips. i never considered making chocolate covered cherries before, ordinarily i just pick up a box whenever i see them in the store. but my aunt margaret (last remaining aunt on my mother's side) loved these, which is why i still buy them when i see them. i have time now, we're a few days before thanksgiving, i will accumulate the necessary ingredients to get started right after thankgiving. if i am successful in making these, i will be making 'Margaret's Chocolate Covered Cherries' to give to loved ones for the holiday season. meanwhile, i am going for a few more salted pepper tutorials to prepare for the holidays. thank you so much for your excellent video.

There are a lot of similarities between this recipe and my grandma's, that my mom made every Christmas. I have the hand written recipe packed safely away at the moment so I cannot compare but going off memory I know that there was wax added to the chocolate. My mom would also add food coloring to make some red and some green and then dip those without cherries to be eaten sooner. Us kids just loved 'em. 🍫🍒❤️

When I lived in a colder climate I made these every Thanksgiving to have them ready for Christmas. I haven’t been able to make them since I moved to South Carolina! I even cranked up the AC and it didn’t help. Mine just used corn syrup, butter and powdered sugar.

I don’t see any comments about Brach’s choc covered with cream filling! We got them at Xmas for decades. They stopped making the cream filled a few years ago. I wonder if this recipe could be adapted? Whoops!Spoke too soon. Delightful!

I am so excited to try out this recipe. these are my absolute favourite. I live in the UK and my Grampy, a retired US Airforce service man use to buy these for me from the base. Sadly over the years they became harder to find and to be honest I didn't know if I would ever taste again. They've never been sold her in the UK. This is a terrible job to have 🤣 there would be no way I could ever work in a factory making chocolate cover cherries… to much lost prevention. I use to buy them when I could find a good box mainly Russell Stoves was my go to. I got my son and his father hooked and my mother would buy me a box for all those special occasions. They are hard to find anymore. And I always wanted to make them. 3 years later I found the perfect video… thank you. I so glad you showed step by step cause reading how to do it didn’t alway makes sense and sounded like to much work… another thing I wanted to make was orange something chocolate cover another favorite flavor even blueberry, I can think of so many types of fruits to try except strawberries not a fan.. But I’ll stick to this recipe for now…👍🏻

I have made these a few times. Wow a lot goes into this little chocolate goodness..haha this last time I did use a full teaspoon..so hopefully the centers will get more liquid inside. I just tried one today..week 1. I will see how they are at week 2. Still taste good though.

I bought Invertase last year along with the fondant sugar that contains 8% Invertase because I was told to make great cherries you had to use the fondant sugar so THANK YOU!! Now I don't have to buy the sugar!! Much cheaper to make this way. 💝💝💝

These are wonderful, thanks for the detailed instructions. I always wanted to know how to make them. But for now I think I will just get down to Trader Joe's and get me a box of those wonderful Hungarian dark chocolate-coniac-cherries while they still sell them around Christmas time. Subscribed & notifications on. My first automation project was automating the melting of 1000 lbs of chocolate, in 5 lb bars from Ghirardelli. I found that the chocolate would be liquid @ 95-96.4 F, depending on the base oil makeup. 105 F would give us the viscosity for 'about' 20% (by weight) coating. We could melt 1000 lbs in 45-50 minutes, up from 8 hrs for 500 lbs. I'm gonna make some of these!

I bet you will do just fine! They aren't hard, but there are things to keep in mind. The most important is to have the cherries dry so the fondant sticks. Someone suggested rolling the cherries in powdered sugar before wrapping in fondant. I haven't tried that yet, but it sounds like it would work. The other thing is to make sure the fondant is 100% covered with the chocolate or the filling will leak out as it liquifies. I have lost 1-2 each batch for that reason. When I say lost, I mean I ate them!
