A walk through how to make Homemade Potato Skins using the Ninja Foodi 2 Basket Air Fryer (of course you can make them in the Ninja Foodi and/or Ninja Foodi Grill too!) These make a delicious appetizer or just a comfort food to snack on. You can also make in bulk and freeze for a later time. Whatever you decide, I’m certain you’ll love them! *What I used...
4 large russet potatoes (aka Idaho potatoes)
avocado oil
olive oil
Italian seasoning
salt & pepper to taste
1 cup chopped bacon (pre-cooked)
1-2 cups shredded cheddar cheese (depending how much cheese you like)
sour cream & chives or scallions optional
*Rinse and dry potatoes. Rub with olive oil (or oil of your liking) Poke each potato with a fork. I used the Ninja 2 basket Air Fryer but you can certainly use the other Ninja gadgets like the Foodi, grill, oven etc. I used the "Bake" option at 360° for 48 minutes. Use a thermometer to check doneness, final temp should read between 205°-212° for perfectly done potatoes. Remove, let cool a bit, cut in half, scoop out the middle (set aside for a serving of delicious mashed potatoes!) Next I placed 4 halves in each air fry basket snugly (had 8 total halves). Spritz with avocado oil, salt & pepper to taste, and sprinkled Italian seasoning.*optional*. Air fried on 390° for 14 minutes, at about 12 minutes in (or your desired brownness) I added my cheddar cheese and bacon, continued to Air Fry until cheese was fully melted (about 2-3 minutes) Let cool a bit and Enjoy with some sour cream & chives (or scallions) That's it! Enjoy! :)
