Instead of using dry ice put you base in a ziplock bad and put it in a bowl with a good amount of ice then put a towel on top and let it sit every 1 to 2 min check on it and replace the ice if it’s to watery. If you over froze just let it sit on you kitchen table 🙃 hope this helps stay home stay safe
@89krx8 жыл бұрын
awesome recipe. The dry ice sublimates goes from solid to gas without melting or a liquid intermediary (therefore dry ice) . So the science behind this icecream is not that it evaporates liquid from the ice or icecream mix. What happens is that dry ice being around -80C just causes rapid cooling of the mix. With constant shaking the crystals are smaller making it a soft serve.
@shiabehary87117 жыл бұрын
In my country we use very often dry or powder milk it is the most available milk in store whereas liquid milk we don't usually use it except in rare occasions or when needed.
@biggerbolderbaking7 жыл бұрын
Yes, and I know that this is so, it is what makes it so difficult for people who like to make my ice cream. Where I grew up there was no such thing as powdered milk, and it is still difficult to find this. we have fields full of cows! :)

WOW, how simple is that and this'll be a fun recipe to play with flavorings with!! I've never seen dry ice at the grocery but then again I've never looked for it. 2 years ago my husband bought me a stand mixer for my BDay, I used it once, hated it and gave it to a friend. I still use the Sunbeam Mix Master [repaired 2x over the years] my parents received as a wedding gift in 1946 and it's much easier to use.

An easier recipe -700grams of heavy cream -400 grams of sugar (don't use any less or the ice cream will not be soft and don't worry it also won't taste like pure sugar) -vanilla extract or cocoa powder (whichever flavour you prefer ......... Add your heavy cream in a pan on and stir in your sugar until its dissolved Add your vanilla extract ........ Take it out of the pan and put it in a container and store it in the freezer until its chill not frozen Take it out of the freezer of fridge and beat it until its a bit thick and DO NOT OVERMIX IT Put a sheet of parchment paper on top and close the container Put it back in the freezer to harden ........... When its has harden Take it out and put it in a piping bag and serve You also don't need a cone You could just put it in a small disposable cup

since dry ice isn't easily available here in my country, what I do is I whip the milk mixture in the stand mixer in the paddle until it doubles in volume. (I added some xanthan gum powder.) then I froze the mixture for 2 hours. after that, I churned it then returned to freeze for 1.5 hours. repeated the churning until desired consistency was reached. :)

I wouldn't generalize. It depends where you live. For me is easier to obtain liquid nitrogen. One has to be more careful with liquid nitrogen than with dry ice, but it is doable.

If you don't want to eat it immediately, just stick it in the freezer for about fifteen minutes, this will not change the "soft serve" consistency. Anything longer than that ( like an hour or more) I guess will make it much too hard.

@biggerbolderbaking8 жыл бұрын
No, dry ice is a dangerous thing in its' raw state, it would burn! This is a thing which is not widely available, and is used in catering kitchens to produce instant frozen desserts, so that will tell you how cold it is, it is a gas really, and evaporates on contact with the air. Science!! :)
