Homemade Spam
Today we will make a homemade Spam. A very popular canned cooked pork around the world, because it's tasty and has a long shelf life. This is made of basic ingredients like ground pork, salt, sugar, pepper, potato starch, water and sodium nitrate(prague powder). Now they have different flavors of Spam. Like Hickory smoke, Hot and Spicy, Garlic, Chorizo, Tocino, Black pepper, Jalapeno, Spam with Cheese and etc.
I remember when I was a kid people from abroad returning home will bring Spam as souvenir for their relatives and friends. You can eat Spam immediately but personally it is best served fried. People are making different recipe using Spam. We have Fried rice Spam, Spam Musubi, pasta with Spam and more. Now a days Spam or any canned foods are considered a staple food but I suggest to eat in moderation because it is high in sodium.
ingredients:
1 kg ground pork shoulder/kasim, skin removed
1 1/2 tsp salt(more or less)
1/8 cup white sugar
1 tsp pepper
1 tsp prague powder(curing salt)
3 tbsp cornstarch
1/2 cup iced water
Procedure:
1) Combine ground pork, salt, white sugar, pepper, prague powder, cornstarch and iced water
2) Mix it until sticky and divide mixture into 4 parts
3) Cover and press to pack it tightly
4) Refrigerate overnight
5) Steam for 15-20min. over med. low heat
6) Cool completely and serve/fry it
