The weather in GZ is getting colder and colder lately. Now it is the best time for hot pot. If you want to make a good hot pot, you need a good hot pot soup base. In this video, I will show you how to make a spicy numbing hot pot soup base.

*INGREDIENTS FOR GROUND SPICES*
- 4 pieces of bay leaves [香叶] [Amazon Link: geni.us/iBJL2]
- 3 pieces of star anise [八角] [Amazon Link: geni.us/gwt35k]
- 6 pieces of white cardamom [白豆蔻] [Amazon Link: geni.us/xWs0QBY]
- 1 big stock of cinnamon, use scissors to cut it small [桂皮]
- 1 tsp of clove [丁香] [Amazon Link: geni.us/aKg6]
- 2 tbsp of Gancao [甘草] [Amazon Link: geni.us/6sh2v3L]
- 1/3 cup of Sichuan peppercorn [花椒] [Amazon Link: geni.us/Gw7LP]
- 1 tbsp of fennel seed [茴香] [Amazon link: geni.us/cWzNzT6]
- 1 tbsp of cumin seed [孜然] [Amazon Link: geni.us/aVvssvo]
- 1/3 cup of chili flake [辣椒粉] [Amazon Link: geni.us/iaYcD8Q]
*INGREDIENTS FOR CHILI BLENDS*
- 1.5 cup of red chilies [美人椒]
- 3/4 cup of garlic
- 1/2 cup of ginger
- 1/3 cup of face heaven chilies [朝天椒]
*OTHERS*
- 1 cup of Dou ban Jiang [豆瓣酱] [Amazon Link: geni.us/VSTo]
- 1/3 cup of spicy fermented soybean paste [香辣豆豉酱] [Amazon Link: geni.us/xa5AY]
- 1 tbsp of sugar
- 1 tbsp of salt
- 5 cup of canola oil + 1 cup of lard
*STEP BY STEP*
- Grind all the dry spices into powder (4 pieces of bay leaves, 3 pieces of star anise, 6 pieces of cardamom, 1 big stock of cinnamon, 2 tbsp of Gancao, 1/3 cup of Sichuan peppercorn)
- Put the spice powder in a bowl, then add in 1 tbsp of fennel seed, 1 tbsp of cumin seed, 1/3 cup of chili flake. Mix everything together until well combined.
- Besides the dried ingredients. You also need to grind some wet ingredients (1.5 cups of red chili Mei ren jiao, 3/4 cup of garlic, 1/2 cup of ginger, 1/3 cups of face heaven chili)
- Put the chili mixture and the ground spices in the wok. Add 1 cup of Dou ban Jiang, 1/3 cup of fermented soybean paste. Stir this on low heat until well combined. Add 1 tbsp of sugar and 1 tbsp of salt, keep mixing everything.
- At the same time, get another pot. Heat up 5 cups of canola oil and 1 cup of lard. Traditionally this is done with pure beef tallow. But I don’t like that much animal fat so I just did a little change. You can use pure canola oil, it is fine. Bring the oil to 350 degrees Fahrenheit.
- Then pour the hot oil into the wok. You should see it is bubbling a lot. That will wake up most of the flavor. And be careful, it is safer to do it in batches.
- Let it cook on low heat for about 20 minutes. Turn off the heat and wait until it cools down to room temperature.
- This is my recommendation for making the spicy hot pot: 2 cups of base + 8 to 10 cups of chicken broth. This recipe is enough for you to make 3 hot pot.
- You can save the base in the freezer for 1.5 months.

We've been making your recipe for years now. It became a tradition to eat Chinese Hot Pot on new year's eve, when we became a family and decided to find some traditions we want to cherish. So I always make enough to last us for a good part of the year so that we will look forward to eating our Hot Pot after the base is all eaten up. Today I made a noodle sauce with your base! I put in some more black bean paste, a little sugar and soy sauce. Sautéed some onions, minced beef, chives, lots of mushrooms and fresh tomatoes. Soo good! Thank you for your helpful videos. Even years later I am still watching them.

I made this soup base today. Luckily, I live close to a huge Asian market so every ingredient was available. OMG this was fantastic!! Absolutely perfect. I don't have the table top burner and I eat alone so I make everything on the stove then sit to eat like a soup. It was perfect, thank you!!

Thank you SO MUCH. I love spicy hot food and I've been wanting to try hot pot since I watched Anthony Bourdain try it. Sadly, there are very few Chinese or Asian restaurants where I live, so I decided I wanted to try making it myself. Recently I found Sichuan peppercorns for sale and decided to try making it, but all the recipes I found told me to use a pre-packaged soup base, which I don't have access to. So glad to see your video, with very clear and easy-to-follow instructions. You gained a subscriber!

Thank you so much Mandy for this video. It comes in handy for me as my family recently likes Mala Hotpot and we have been eating it for the past one month. :) We are using those pre-packed hotpot Chilli paste imported from China (I'm from Singapore) and I have reservations using them often. I believe there's some added preservatives and the oil used is not so ideal. There's also some synthetic taste to it. I actually fry the pre-packed paste in olive oil before putting it into the soup. Now with your recipe, I can make my own spicy hot pot soup base. yippee! 😁One suggestion as to how you can freeze them. Just scoop the amount you need for one hotpot serving and wrap it up with cling wrap before putting them into individual Ziplock bags. That's how I freeze my homemade curry paste for future use.

looks interesting - I doubt if it would spoil quickly, even at room temp. but, the freezer idea is probably better.

I took my temperature before and after eating a soup with homemade chili oil in it (I had a hunch), it rose almost 2 full degrees, but that's some of the best soup I've ever had.

Thank you so much! I've been looking for recipe that makes a numbing soup (ex. for beef noodle soup, dandan mian...) and I think the key is to grind up the SzeChuan peppercorn, is that right? If I want to soup to be more numbing, just grind more peppercorn?

I made a big batch of this several months ago. We've been eating "Hot Pot" soup almost every week with this base. I'm about to make more. I have to sub white cardamom pods for black. What change does that make? I also used Cao Pian for Gan Cao what is the difference in that flavor? Is it the same thing? I don't remember how I substituted Face of Heaven Chilies, but what is a good USA substitute for that? Thank you so much for a great recipe!!!

Lovely. I will try to make it since in asia, its easy to find those ingredients. May I ask how long can it last in room temperature and in fridge (not in freezer). Do you need to heat up those taken out from freezer?

Mandy if you pour base in to small muffin pan first then freeze it it is easier to transfer into plastic bags
