Big Lew! I made this today on my UDS following your instructions to a tee, and it came out damn delicious. While I’ve never eaten it before, there’s no doubt in my mind that this bacon like, salty, spicy, Smokey meat could make just about anything taste better. I used oak for smoke with regular kingsford briquettes, and held 190-210 for the first 3 hours, and maxed to 225 on the last hour.

I love to cook stuff with Tasso. I’ll be making red beans with some tomorrow. Glad you enjoyed it. You can make it country style ribs too or any other cut of pork but meat., The pork steaks are thin and easy to work with and don’t take too long to smoke or cure.

A few days ago I cut out the coppa muscle to make a capicola. I was thinking what the heck am I going to do with the rest of this pork butt. Brain cells out of nowhere I remembered this video. Cured 5 days and it's on the smoker as I type. Thank you and I wish you a much better 2021 and beyond.

Looking so good! I like to use pecan wood too! Some call it pee can but you and I know better lol!

They can keep their pee cans away from my barbecue pits, that is just unsanitary!

BTW I mentioned it is good in gumbo at the 0:57 mark. Tasso is also good on pizza.

@@BigLewBBQ I'll tell you another way to use it that I haven't seen anyone do. It was popular in the 70's & 80's, the older people used to dice it and add it to rice before you start cooking it. The rice came out smoky and flavored from all the seasoning. My Dad would make a pot of rice like that and eat it with over easy eggs for breakfast but it was good with any rice and gravy dish. I also like to use it when I cook shrimp or crawfish fettucine. Give those a try and I'm sure you'll like it. Rob

Man watching you add all the spices and everything was making my spit glands drool woo that's some spicy goodies that was delicious looking.... me and the kids are actually eating pressure canned pork butt as we speak for breakfast that is so delicious and Tinder it's just undescribable

I’m always seeing recipes that call for Tasso and I have a hard time finding it around here, but pork butts are everywhere. Thanks for this video.

It isn’t very hard to make. The key ingredient is patience while you wait for it to cure 2-5 days in the fridge. I think 3 days is about right.

I have never tried Tasso Big Lew ! This looks amazing. Tasso and bean soup instead of ham and bean comes to mind for me ! Great video Big Lew !

Tasso is excellent in lots of things. I got a pot of red beans & sausage cooking on the stove now with some this Tasso in it. We’re going to have red beans and rice and corn bread for lunch after church today.

Great video Big Lew, that looks fantastic. I'm gonna give this a try. You might already know this but whenever I make sauces or glazes and contaminate them I boil them to kill anything. That way you don't have to throw it away. Just a little FYI. Have a great day brother.

You need to use your Googler machine. Type in the term “Tasso” , “Tasso ham” or “recipes with Tasso” then click images and see all the stuff that you can use tasso in. You could start a Tasso trend in the Pacific North West. Isn’t that where all the cool trends start anyway?

This seems like the most legit tasso recipe, I ever watched, but I'm not an expert. Hoss your delivery is really polished. Were you in broadcasting of some sorts before KZbin?

Hey Big Lew, I'm new here, and that Tasso looks delicious! I've never heard of it before so I had to look it up :) And since we love pork in al forms, I'll have to give this a try! Use it as a seasoning meat. Greens, cabbage, beans, jambalaya, gumbo, gravies, sauces, dips, stews, etc. You can dice it small and use it as a topping for pizza or baked potatoes. Use it in just about anything that might call for diced ham or bacon bits or pieces. I suppose you could eat it as a snack food like jerky, but it is really salty and spicy.
