Big Lew! I made this today on my UDS following your instructions to a tee, and it came out damn delicious. While I’ve never eaten it before, there’s no doubt in my mind that this bacon like, salty, spicy, Smokey meat could make just about anything taste better. I used oak for smoke with regular kingsford briquettes, and held 190-210 for the first 3 hours, and maxed to 225 on the last hour.

I love to cook stuff with Tasso. I’ll be making red beans with some tomorrow. Glad you enjoyed it. You can make it country style ribs too or any other cut of pork but meat., The pork steaks are thin and easy to work with and don’t take too long to smoke or cure.

A few days ago I cut out the coppa muscle to make a capicola. I was thinking what the heck am I going to do with the rest of this pork butt. Brain cells out of nowhere I remembered this video. Cured 5 days and it's on the smoker as I type. Thank you and I wish you a much better 2021 and beyond.

@@BigLewBBQ I'll tell you another way to use it that I haven't seen anyone do. It was popular in the 70's & 80's, the older people used to dice it and add it to rice before you start cooking it. The rice came out smoky and flavored from all the seasoning. My Dad would make a pot of rice like that and eat it with over easy eggs for breakfast but it was good with any rice and gravy dish. I also like to use it when I cook shrimp or crawfish fettucine. Give those a try and I'm sure you'll like it. Rob

It isn’t very hard to make. The key ingredient is patience while you wait for it to cure 2-5 days in the fridge. I think 3 days is about right.

Tasso is excellent in lots of things. I got a pot of red beans & sausage cooking on the stove now with some this Tasso in it. We’re going to have red beans and rice and corn bread for lunch after church today.

You need to use your Googler machine. Type in the term “Tasso” , “Tasso ham” or “recipes with Tasso” then click images and see all the stuff that you can use tasso in. You could start a Tasso trend in the Pacific North West. Isn’t that where all the cool trends start anyway?

Use it as a seasoning meat. Greens, cabbage, beans, jambalaya, gumbo, gravies, sauces, dips, stews, etc. You can dice it small and use it as a topping for pizza or baked potatoes. Use it in just about anything that might call for diced ham or bacon bits or pieces. I suppose you could eat it as a snack food like jerky, but it is really salty and spicy.
