I’m with you on the food coloring. Are you the same way with eating cilantro? I have heard if cilantro taste funny to you that you could be a super taster. Which means you taste things that other people don’t but it does not mean that it’s not there because it is it’s. Your taste is more sensitive and you can taste it. I am glad I found your channel.

I actually don't mind cilantro. People who can't tolerate it, have a genetic trait that causes cilantro to taste like metal or soap. *But* people can have anywhere between 3 and 10 thousand taste buds, and people in the higher range, are generally more sensitive to things that are bitter. I can not stand bitter foods. :)

They came out beautiful. What is the vinegar for? Is not the lemon juice enough for acidity? Can you make it without the vinegar?

In this particular recipe, you need the extra acidity. I have a second watermelon jelly recipe that I am going to share next week, that uses the low/no sugar pectin and does not have the vinegar. It does have more lemon juice though.

I don't have White Wine Vinegar - I researched substitutions and I found that you can use Distilled White Vinegar or Apple Cider Vinegar - I wondered about your thoughts on that? Thanks. Also, If I wanted to leave some bits of watermelon flesh in the jelly is that okay?

I think I would go with the white, as the ACV may alter the flavor. Yes, bits of watermelon won’t hurt anything :)

Great video Constance, We were successful in growing some awesome tasting watermelons in our garden, so I’m going to be making watermelon jelly, I’m going to make a few jars of jam for my oldest grandson Noah, he likes the texture of jams better than jellies.😁 What are you going to do with the rest of those apples?? You *can* reduce the amount of sugar in jellies, but it can cause them to not set properly: That said, I actually have a second watermelon jelly recipe that I am sharing next week (I’ve already filmed it) that is for a low sugar jelly. Now you don’t get as much jelly, because of the lower volume of ingredients (sugar) but the flavor is even stronger.

There is a recipe for making natural food coloring. I think the red was made with beets. I have made beet jelly and that is good and very red. Could easily add some beet juice to color if you want a natural color. I know there has been warning about putting red food coloring in hummingbird feeders so it probably doesn't do any good for us humans either.

Exactly! My family is Ukrainian and Polish so make quite a few dishes with beets. This includes a chocolate beet cake my grandma has always made, and then I adapted the idea into chocolate beer cookies and have even made them into beet whoopie pies. I love watching people enjoy them and marvel at the color and then the look of shock and sometimes horror when I tell them the baking is chock-full of beets!🤣 We have also used it to tint icing all kinds of pretty colors.

Right now It is mainly for us, though I do give some away as gifts. I recently did a course and was certified so that I can sell some of my home preserves in the future if I want. I may do it down the road, but time will tell :)

I cannot stand food coloring either. Not in cake frosting, nothing. And I won't eat Red Velvet cake. It's bitter to me and a real turnoff, anyway. I mean maybe if someone substituted beet juice, but a whole bottle of dye? no thanks.
