I just finished making this jelly with a couple of tweaks. I ran my watermelon through the juicer then strained through a flour sack towel to catch any stray pulp or seeds. I used one box of pectin and put a half tablespoon of unsalted butter in to reduce foam. I also water bathed mine for 10 minutes. I got 6 half pints and a baby food jar for the fridge. Yum!! Thanks for the great video!!!

I tried 2 other recipes for watermelon jelly before i found your video. Neither of those recipes gave me the beautiful red jelly i was hunting for. I tried making it your way on my third attempt and it turned out perfectly! I do however water bath my jellies, so i processed mine for 15 mins in my water bath canner. Thanks for a great recipe!

Fantastic recipe, performed as advertised. Family LOVES this jelly! Got 3 seeded watermelons. Cut enough of the ends off to stand upright in a large stainless bowl. Used a paint mixer from Walmart to liquidity the inside and poured directly into a flour sifter. Liquefied all strained matter again then wrung out more juice with cheese cloth for a total of 4 gallons of juice. Filtered out another pint of matter through fine filter cloth for pure juice. Deviated from instructions using citric acid and ReaLemon juice from a bottle. Used an electronic Ph meter for precise measuring. 16 batches in total for a yield of 54 pints. Family loves it sooo much I hope this lasts a year... not likely. Great recipe and video. Thank you for sharing!

Hi. They will last at least 12-18 months in the pantry. I just finished eating up everything that I canned last summer. I have canned tomatoes that are from 2020. This is a real old timey canning method that can be found in the old canning books call open kettle method. Thanks and good question!

FancyTruth. You could add some. The issue is that peppers are not acidic and could raise the ph to the point that pressure canning would be required. This is why most peppers are canned in vinegar.

Hi. Yes, this last at least a year in the pantry. The is the open kettle method that was once the recommended method before water bath became recommended. The open kettle method was the recommended method up to the mid 1980’s. I use it for all of my jellies, jams, and tomatoes. The key is simple. Get the hot jelly it the hot jars quickly after turning off the heat and then get the lids on.

Hi. This tastes like a watermelon jolly rancher. It could be too sweet for some people but it’s the norm for any jelly. Reducing the sugar could cause it not to gel. If I was going to reduce it, 4 cups would be what I would use. Thanks and all the best making the jelly!!

Sorry, forgot to answer your pulp question. Jelly doesn’t have pulp which is why the pulp was a removed to have the just the juice. If you leave the pulp in, it’s going to be a jam. Unfortunately, I can’t answer how it would set if at all because I’ve never tried to perfect a recipe for watermelon jam.

Hi. The open kettle method which I use was the recommended method before water bath became recommended. I was taught this as a child and still use it every summer. You can definitely water bath if you’d like to but it’s only going to get to 212 deg in the water so I really do t think the seals are any better. The shelf life is at least 12-18 months.

Ok sounds good. I haven’t had setting issues with that recipe but sometimes it happens. I blame it on the sure jell because I have had Pineapple Jelly simply not gel and the next batch set up perfectly. I actually have not heard of banana jelly. I will check it out. Thanks!

THAT is very interesting! However, I have a question; does this really have a flavour of a watermelon? Not to diminish all the work that went into making this, I just wonder because there are many jellies made of all sorts of fruits/vegetables/wild plants and so far, most that I tried to make, in the end, just taste like jellied sugar with pretty color. No flavour, just sweet and pretty looking. Thank you for a great video. I remember this method of canning :-)

Unfortunately, all I can find where I live, is either Certo powdered pectin, liquid pectin , no boil liquid pectin, freezer pectin... Hi. Watermelon is not acidic so that’s why there is concern and it can’t be canned stand alone. Notice in the video that the lemon juice and pectin reduces the ph and makes the jelly acidic. The sugar is also a preservative.

Does this actually taste like watermelon? What did you do with all the watermelon meat and rinds? There must be some way to use that up too and not waste it.

I didn’t waste. My chickens ate it. They love watermelon. It taste like watermelon jolly rancher.

@@useful.knowledge actually, I wasn't insinuating that you wasted it. I was fishing for ideas on how to use it up. I found watermelon rind candy and watermelon fruit leather.

I didn’t take offense. It was a legit question. My grandmother made watermelon rind preserves. Those were awesome!!
