I just finished making this jelly with a couple of tweaks. I ran my watermelon through the juicer then strained through a flour sack towel to catch any stray pulp or seeds. I used one box of pectin and put a half tablespoon of unsalted butter in to reduce foam. I also water bathed mine for 10 minutes. I got 6 half pints and a baby food jar for the fridge. Yum!! Thanks for the great video!!!

I tried 2 other recipes for watermelon jelly before i found your video. Neither of those recipes gave me the beautiful red jelly i was hunting for. I tried making it your way on my third attempt and it turned out perfectly! I do however water bath my jellies, so i processed mine for 15 mins in my water bath canner. Thanks for a great recipe!

My aunt Lula Cobb from South Carolina use to send my grandparents a box of homemade goodies every year on Christmas. One of them was watermelon jelly. A great fruit cake, bread and butter pickles, pickled watermelon Rhine 🍉 😋

Fantastic recipe, performed as advertised. Family LOVES this jelly! Got 3 seeded watermelons. Cut enough of the ends off to stand upright in a large stainless bowl. Used a paint mixer from Walmart to liquidity the inside and poured directly into a flour sifter. Liquefied all strained matter again then wrung out more juice with cheese cloth for a total of 4 gallons of juice. Filtered out another pint of matter through fine filter cloth for pure juice. Deviated from instructions using citric acid and ReaLemon juice from a bottle. Used an electronic Ph meter for precise measuring. 16 batches in total for a yield of 54 pints. Family loves it sooo much I hope this lasts a year... not likely. Great recipe and video. Thank you for sharing!

I grow watermelon each year, but this one.. As we were told by the old ones, to stay clear of this kind of fruits and veggies.. But, next year, I will be trying your " Useful knowledge recipe ".. Just finished a small batch. Waiting for the pings! Haven't tried this way of canning jam, I've always used water bath. But this is so much easier! Especially since I usually only do 6 to 7 jars at a time. Thank you so much for sharing your recipe and knowledge.

I only have Sure-Jell for Less or No Sugar Needed (pink box) pectin. Will this produce the same results as you had with the Sure-Jell in the yellow box?

How long with the jelly keep by boiling the containers? How long would it keep without doing that if you expect to consume it within a few weeks?

Hi. The process that I use is the open kettle method that was once the recommended method before water bath (boiling the jars) became recommended. These jars will last a year in the pantry. Thanks and good question.

Hi. They will last at least 12-18 months in the pantry. I just finished eating up everything that I canned last summer. I have canned tomatoes that are from 2020. This is a real old timey canning method that can be found in the old canning books call open kettle method. Thanks and good question!

FancyTruth. You could add some. The issue is that peppers are not acidic and could raise the ph to the point that pressure canning would be required. This is why most peppers are canned in vinegar.

Please there was a lot more left in the melon rind. And when you put it in the strainer press more down and you will get more juice out of it. But u will still be trying it out. Thanks.

I made this today....jelled wonderfully....but 2 of the jars havent sealed. Im hoping they eventually seal, but if they dont...what do i do?

Did your last 2 jars eventually seal? Sometimes I get one that takes a little longer. If not you can keep them in the refrigerator.

@@useful.knowledge they did! So i tried this process with my dill garlic pickles...and they didnt seal...ended up wbc...i think its cuz they were cold packed and the brine didnt stay hoy enough.

Hi. I’ve tried doubling jelly recipes and it’s a 50/50. I quit doing it because of had some batches fail to gel. I just do back to back batches now.

Hi. Honestly I would do two batches. I tried a double of some pineapple jelly one time and it didn’t set. I had no good explanation as to why.

I am just one person, how long will this jelly safely last if it is not water bath canned? I will give some away, but I need to be sure it will be as safe as long as canned jelly (1 year?).

Hi. Yes, this last at least a year in the pantry. The is the open kettle method that was once the recommended method before water bath became recommended. The open kettle method was the recommended method up to the mid 1980’s. I use it for all of my jellies, jams, and tomatoes. The key is simple. Get the hot jelly it the hot jars quickly after turning off the heat and then get the lids on.

Can you use the pulp? I heard that this is too sweet with 4 1/2 cups of sugar, will it still work with less sugar? But this is a great video and I like this recipe

Hi. This tastes like a watermelon jolly rancher. It could be too sweet for some people but it’s the norm for any jelly. Reducing the sugar could cause it not to gel. If I was going to reduce it, 4 cups would be what I would use. Thanks and all the best making the jelly!!

Sorry, forgot to answer your pulp question. Jelly doesn’t have pulp which is why the pulp was a removed to have the just the juice. If you leave the pulp in, it’s going to be a jam. Unfortunately, I can’t answer how it would set if at all because I’ve never tried to perfect a recipe for watermelon jam.

I was taught the when canning, you should use bottled lemon juice because lemons are not always uniformly acidic.

Hi. The open kettle method which I use was the recommended method before water bath became recommended. I was taught this as a child and still use it every summer. You can definitely water bath if you’d like to but it’s only going to get to 212 deg in the water so I really do t think the seals are any better. The shelf life is at least 12-18 months.

Momma B's Crochet Kitchen. Hi. Yes you can definitely water bath. I was a child of the 1970’s and 80’s. I learned to can before open kettle became not recommended so I still can the way I was taught. All the best making the jelly.

@@useful.knowledge the first batch is setting now that it’s been 24 hours, the second batch I put in pan and reboiled and canned. We will see if it helps. This was a first for me. Just started making jelly! I love it. A little costly though! I made banana jelly! Was very good.

Ok sounds good. I haven’t had setting issues with that recipe but sometimes it happens. I blame it on the sure jell because I have had Pineapple Jelly simply not gel and the next batch set up perfectly. I actually have not heard of banana jelly. I will check it out. Thanks!

I made this recipe and I followed it pretty well. the jelly instead of coming together with the pectin it became more like a watermelon syrup. What did I do wrong?

Ok. I’m going to ask some questions about following the recipe to see if I can help. Did you add the lemon juice? Did you add two sure jell packages? What type of sure jell or pectin did you use? Did you reduce the sugar? Let me know and we will try to figure it out?

Hi. You could but that product has sodium benzoate, sodium metabisulfite and sodium sulfite in it. This is why I just squeeze my own.

Great video can you tell me the weight of each pectin you put in as I’m from the uk and we don’t have that brand and the weight of ours my be different also here’s a question...can you make jam from the strained flesh? X

Hi. It’s a 49g package of pectin. That would actually probably work for watermelon jam. I’m thinking that you would take some of the juice and flesh and use the jelly recipe to make jam.

Why not just slice off the rind in abt 30 secs ? Then u have a whole melon u can chop up easy Same way u do fruit platters

Hi. I think you could. I would just match up the amount of liquid pectin to the amount of dry that I used.

THAT is very interesting! However, I have a question; does this really have a flavour of a watermelon? Not to diminish all the work that went into making this, I just wonder because there are many jellies made of all sorts of fruits/vegetables/wild plants and so far, most that I tried to make, in the end, just taste like jellied sugar with pretty color. No flavour, just sweet and pretty looking. Thank you for a great video. I remember this method of canning :-)

@@useful.knowledge Thank you kindly. I don't know what or how jolly rancher is/tastes like :-) I do like watermelons so, I will give it a try in a near future (have to wait to buy sweet watermelon). I am curious now :-) I appreciate your time for writing back. The jelly sure looks rich in color and very appetizing.

@@useful.knowledge Hello again. I don't mean to pester you but perhaps you can help again? I scrolled through comments and I also wonder if I could use pectin powder made by Certo ( 2 packets, 49 grams each) like you suggested to a person from UK ? Unfortunately, all I can find where I live, is either Certo powdered pectin, liquid pectin , no boil liquid pectin, freezer pectin... Jeezzz.....got pecting coming out of my ass...LOL (no offence!), just trying to find one that would work :-) Thank you

@@kirkstinson7316 Thank you! I did managed to get that pectin-thing but I didn't like the taste of my jelly. Maybe the watermelon wasn't sweet enough? It didn't even have watermelon fragrance. It was way too sweet, and I like sweets. Will try again when melons are in season. Thank again :-)

Hi. It’s the open kettle method that I’ve been doing since I was a child. The key is to get the hot jelly in the hot jars quickly and get the lids on.

Hi. The jelly ends up tasting like a watermelon jolly rancher. You have to increase the acidity in order for it to be able to set as a jelly as to be able to can it.

A 1/4 tsp butter cuts down on foam Also I would a few drops of red food coloring, but hey that’s just me

Hi. I think that would work. Just check to see how much concentrate is require to match the fresh lemon juice in the video.

Hi. Watermelon is not acidic so that’s why there is concern and it can’t be canned stand alone. Notice in the video that the lemon juice and pectin reduces the ph and makes the jelly acidic. The sugar is also a preservative.

I didn’t waste. My chickens ate it. They love watermelon. It taste like watermelon jolly rancher.

@@useful.knowledge actually, I wasn't insinuating that you wasted it. I was fishing for ideas on how to use it up. I found watermelon rind candy and watermelon fruit leather.
