I'm 80 years old last month... and I've got three sisters. Mama always told us each of us had a job to do to help "provide" for the family. There was no allowances. We didn't have the money. I know kids who did nothing and got $20 a week. When I was in school there was a lot of money. It would go a long way, but anyway, you do a lot of work with that and maybe your family doesn't realize it.... maybe they do, but gardening and putting food by... is only part of your part of helping "provide" for the family. One of my favorites that my mom did was tomato preserves. I can't find anything like it in the store. She put a thin slice of lemon in each jar. I've tried store-bought ones all the time, and I can't find any like that. i like this video... brought back some good memories.

Just emailed you that recipe. You may want to Cut it in half though as Grandma Purcell use to always cook and Can for an army. If I had to guess I'd say that recipe is for 30 to 48 pints? I may be wrong? Let me know!

I just found your channel and I am now a subscriber. One thing I always feel bad about is when you apologize for your world/life. Never apologize for lighting or for the mess. You are a real person with a real life. I personally want to see this, so I know I am not the only one with dirty dishes in the sink and a disorderly cupboard. Also, I learn a lot more when the presenter is sharing their life. Thank you!!

Have you tested your basement for Raydon? You can likely get testers at Walmart or hardware stores. It's especially important, since you have a dirt floor. You don't want that radioactive dust breathed in by you or your family! It can cause lung cancer and other lung diseases. You should wear masks when working in the root cellar or your basement, and please get some tests! Prevention is the best answer!!

😮 Ray Don is Llewellyn's crazy 3rd cousin and I don't want him in my basement either..the fellows a nut ! 🤣 but seriously Radon gas is a thing and very important to know about as it can be very health damaging, I would seriously doubt that they would have a problem with it at their house thou..it depends a lot on the soil composition. It was very good of you to point it out thou It is an issue in some locations. God bless you.

I was real surprised to see you pressure canning tomatoes. I got a secret to making pasta sauce, blend up your tomatoes with zucchini and herbs. Cook it a while with herbs to marry the flavors. The zucchini takes up the taste of the tomatoes and thickens it right up without having to cook it down forever. That 1870s Homestead showed me that trick. I tried it and now I make my own sauce.

I like to pressure can tomatoes vs water bath, just a little quicker IMO anyways :) I may have to give that zucchini trick a try with my sauce!

Your pantry reminds me of Mama and especially Grandma. They did a lot of canning especially Grandma. That's the first canned sausage I've seen in years. You have every right to be proud of your canned stuff. As Daddy used to say, "it will be better than a snowball this winter."

Do not apologize for your dirt cellar. It reminds me of my childhood home. I really wish I had in or at least a section of one. I is one of the best food storage areas there is. Thank you for sharing.

My dad dug out our basement by shovel and wheelbarrow and then he put bricks up basement was four feet approximately around smaller than the house because the foundation was out further than that it used to flood every time our creek got up high in the winter and filled with water there was pea gravel our freezer was always up on bricks and as a kid I used to go down there and play in the water every winter it was so much fun I even got a toad one time and let it go down there and mum wasn't too pleased because all she heard all that ear wasn't told Crooked and laid her down the years he cemented it and put it in sub pumps but I can imagine how much work that was digging that out all by hand😁😁Oh yeah the reason why I used to flood every year is because the drain from the basement used to go out to the Creek so when the Creek got overflowing it used to come into the basement

I would love to know how to can pork ribs. I have not ever done that but it sounds yummy. I don't know why, but I love pantry tours. I enjoy seeing what people have in their pantry, and if there is something I have not heard of, I want the recipe. It also gives me confidence that my food is ok if it separates or if food has siphoned out or some other thing that didn't go exactly like it was supposed to. I love to look at my jars of food once I am done canning. To me, they are like a beautiful piece of art. I love your channel! Thank you for all you do!

My Granny and Granddaddy had a large storm pit they stored all their canned goods initially it stayed cool there in the hottest weather I loved canned sausage have not had any in many years I have seen green beans that had been canned 12 or more years that were still very good

I've already been really thinking about what I want to grow next year, basing that on what we really eat and use the most. I canned bread and butter pickles for the first time this past year and I LOVE them! I will definitely make more of them. I will probably grow even more cucumbers next year because I also use them in my morning smoothies because they are so refreshing. But I won't grow green beans because I have plenty on my shelf that I need to use first. The only thing I'm still working on finding more ways to use is my canned pork butt or shoulder. I have never tried it in tacos, but I will try that soon. I make sweet, pickled coleslaw using my red and green cabbage and shredded carrots and I love putting that on my tacos.

Awesome job👍🤠❣️👍. Great that you don't have to pay for that at a store. Ive never tried canned meats, might have to give it a go👍. When my mimi was alive we had a converbelt going, ine made pie crust, one filled,one sugar cinnamon butterd,one put the lid on and we had apple pie in the freezer when we wanted pies. We cut our corn n froze in bags along with squash. Maybe put jams on bottom shelfs..cooler. we did freezer jams. Thanks for sharing. Everyone cans what they like and family needs👍❣️👍🤠. Did you have a video on the Rotel tomatoes? I am only canning up what I am buying most frequently at the stores. Trying to “reverse” the grocery shopping process. If the store can make it shelf stable, So can I lol. We use a lot of rotel. And we had tomatoes out the ears this year too! Hoping next year we are just as blessed. We are in the construction process of our new hoop house.

My mother always put a grape leaf in the top of her dill pickles. They were always crisp and it didn't matter if they were 1 year old or 5 years old. You might try it on a few jars and see if it works for you.

We canned the majority of our food growing up and I continued for a few years. My mama always kept at least one or two years behind in stock for hard year of bad crop. Also we did not have big canning pots just the old school way. Love your story ❤❤

Root cellar looks nicely stocked for winter! Have ya counted how many jars are in the root cellar? Would love to know what it takes for a family of 4. Give the Amish made lids a try by Superb. Lehman sells them in bulk for a good price. These have a tighter seal like ball use to be 50 yrs ago. I use a lot of tattler lids too. It saves money and when the lid supply dwindles accidentally or on purpose, I still have lids. Keep up the great work!

Once they are sealed the ring doesn't serve and purpose so we take them off and use them on other jars

Yes we make and season our own sausage 😊 it holds its flavor pretty well, it’s not as strong as frozen sausage but you can definitely still taste the seasoning

Looks awesome... thanks for the inspiration( ive found alot of that thru yalls vids). i was up past midnight canning pork shoulder lastnight, gettin ready for round 2 today. roasted whole in the oven (on 1st batch for future BBQ sauce meals) and cut up for a hot pack. today is cube and roast for gravy and taco/sandwich meals. i might do some of it as raw pack to try as i havent done that yet. (Started with 54 lbs)

Can you soak potatoes overnight before canning to soak out some of the starch or would that ruin the quality? Just curious. I soak mine when I make homemade potato chips and I just wondered. Thanks ❤Leslie Florence Alabama

Yes you absolutely can and that is honestly best practice to get some of that extra starch out, most of the time I don’t because it’s not a have to, but I do empty the water and wash the canned potatoes before we eat them

Do you have a recipe for the pulled pork sauce? My husband and I live in NC for 8 years. My oldest two were born there. We just butchered 3 hogs about a month ago. I canned all the little pieces of meat instead of making ground pork. I canned 28 quart jars so far. Hopefully this evening I will finish the last round in the presser canner. Pulled pork was a favorite of mine, but have not found the right recipe. If you have recipe I would really appreciate it.

I don’t have a recipe, but there is a local company here that makes wonderful bbq sauce, it’s called McMaster’s Hawg Sauce. Not sure if it can be purchased online but it’s our favorite

When you can your pickles do you use a fermentation process or white vinegar? Momma used to can fruit and vegetables but used vinegar in her pickles. I have found that canbbage, pickles and some other vegetables are better for you is fermenting them. I’d love to learn how to ferment cabbage and cucumbers.

I can see you have some tattler lids for your jars. Have you experienced any failures with these? I have found mine to be hit or miss sometimes. Knew an old timer that used a fine file to rough the rim so the seal can grip it better. Never tried that however as i didn't want to risk loosing my glass...
