I was raised by my Grandmother, She water bath everything. Stove Top Pressure Canners always scared me. I was lucking enough during Covid Lockdown to purchase the Nesco Electric Canner. It still scared me, lol It sat in the box for 6 months. Finally at 63 years of age I put my Big Girl Pants on and tried a simple dry pack Chicken, Haven't looked back since :)

Thank you so much for repeating this video. We just started back into the world of canning this past summer after not canning for probably twenty years. We have the Presto 23 pressure canner and it was so easy to use. We followed the Ball Blue Book of canning and your videos and didn't have any problems at all. It is so rewarding as we now have a full pantry.

It's just like how I took care of my dad without schooling at all yet I was his primary care giver and his instructions were followed to the letter so you canning cheese sauce as long as you have I've listened

Didn't even know it, I am a rebel canner. Never gotten sick on anything I have canned. I like the idea of pressure canning cheese. I am going to have to try canning the cheese .

I have eaten my home canned food that was 12-15 years old and it was perfectly good. I would say to eat soft fruits like peaches within a year only because they get mushy. But other things like veggies & meat have lasted a long time for me.

I've only been canning for a couple of years now by the hot water bath. I've worked my way through your canning playlist, took notes and canned as I went along. But now I think I'll get a pressure canner do that I can do more, branch out, and definitely canning cheese. These videos are invaluable, Tessie. Thank you, again.

Hey Tessie, I'm so excited to tell you that I just watched you on my son's 65 inch tv and I could see you and your cheese so good... I even saw the words on the can label. Now I'm on my phone to comment and thumbs up but I just had to tell you about how good you look on the big screen. I'm over at his house to dog sit my grand-fur-baby until very late tonight so I'm going to watch more of your videos while I'm here but I will still use my phone to comment because it's way to hard to do on the big tv. When I get my pressure canner one day I will can this same cheese exactly like you tell me because I trust you. I do love this Rico cheese but it is so expensive in the very small cans so it will save a lot of money buying the large can to re-can. This is a great video and I THANK YOU FOR MAKING IT. Tessie, thanks so much once again for sharing your expertise which you have developed over *decades* of canning experience. I am definitely not a gambling woman, but I would make a large bet that no one in your family has *ever* been made sick by eating something that you have canned. I believe that's due to the fact that you *know what you're doing* because you *understand the principles that underlie the process of canning*! It's as simple as that. Once someone grasps the how-things-work part of a task, that person can develop the confidence to be flexible when applying those principles. There are a lot of men who have not been formally trained in plumbing or wiring, but who truly understand what is involved in electrical or plumbing jobs. They can do safe repairs at home. You're in that situation with canning. I have to admit that I'm not well informed on the controversies that are going on in the 21st century canning community. (My mother and grandmother learned the way you did, Tessie -- from other women in the family and from publications like the Ball Canning Guide.) Outside of one episode where a few people on another channel took offense at your very kind and sensible caution about water bathing and when it should or shouldn't be used, I am clueless as to what the current controversies are. But if there are people who are saying that pressure canning is *always* dangerous and that water bath canning is always 100% safe as long as you do it for long enough... well, that is just plain false. (Which is what you're saying here! 😀 ) Tessie I love personalities like yours -- who really do think outside the box. We are told by so many people (usually through advertizing and social media) that we are not intelligent enough to figure things out for ourselves, to educate our children or even to vote! It's good to see that after becoming thoroughly familiar with things, some of us can still think and act for ourselves! As a person who home schooled her kids the way you did, and didn't always think, act, dress or believe exactly like everyone else, I say: "Hurray for Tessie! Stay strong!"

Thanks for mentioning self regulating pressure canners. I've never heard of such a thing, & fear of exploding canners has kept me out of the realm of ever thinking I could be a canner. Hmm, thanks.

Thank you for this video, Tessie. You explained everything so clearly and thoroughly. I used to be afraid to pressure can (it was just what you said - I feared it would blow up in my kitchen.) until last spring when I finally took out the canner I was given during Covid and decided to just do it. I was gifted a Nesco canner; and now that I've gotten over my initial nervousness, it couldn't be easier to use! Since then, I have tried many different recipes and even taught my sister how to water bath and pressure can food. I, too, have a small comfort zone with canning and follow safety guidelines closely. Your canning videos have been a tremendous resource for me. Thank you, again!

Thanks for sharing this again! I was able to get the big cheese cans and have been hesitant to open one. Pressure canning is scary at first but thanks to you and Alaska Prepper I have been canning for a little over a year with the Tfal canner. I really appreciate all you share with us!

I've canned butter this year following your video on it and so glad I did and butter here was 'on sale' for $4.74 a pound last week! I bought all my butter when it was on sale for between .99 - 1.59 a pound. And now it's shelf stable. I got 2 of those cans of nacho cheese sauce from my food pantry for free, so as soon as I get more jelly jars this week, it's getting canned as well! Thanks Tessie for all you do!

I learned pressure canning on KZbin. I bought a waterbath setup last year. Never used it. It intimidated me. In July I bought an Instant Pot Max with the canning setting. It stayed in the box 2 months. I finally got it going. Pressure Canning is amazing. I bought the Nesco smart canner too. Also got a stovetop Presto for backup. I want another Nesco.

Hi Tessie. I bought a 23 quart Presto pressure canner a few years ago because of you. I have a glass top stove so I think that is the only kind that works on it. I brought it off of Amazon for a little over $100 canadian. Now the same thing sells for well over $200 canadian! Sadly, I haven't used it as a pressure canner yet, I've only used it as a water bath canner because it works as that as well if you don't put it under pressure and fill the water up over the jars. I might try beans one day soon. What I really wanted to mention was did you know that there is a weight they sell that will keep the pressure at either 5, 10 or 15 pounds depending on how many rings you use? I love that idea if not having to constantly worry about regulating the pressure. It jiggles to let off steam if the pressure builds up too high. Have you ever used one of those weights? They also sell them on Amazon. Thanks for all your great videos.

I have froze it and then used it in recipes but not eaten it straight from the jar.

Yes! I get a similar brand canned cheese sauce (la preferida) and I freeze half the can and for me it works. I freeze it in a tight tupper ware and typically use it with a month

Thanks for sharing your spot on advice, I get so darn mad seeing people, can food's like meat in a waterbath canner, even if they do it for 3 to 5 hour's I still would not be comfortable. When I'm finished pressure canning my meat your in it about 150 minutes. I have a Presto brand canner and from the time you turn your canner on until you turn it off from 20 minute's to get to pressure 10 minutes to vent then you put your weight on then 90 minute's of canning . It takes around 20 minute's for the top to drops down and it sits for another 10 minutes to cool down before you take the lid off that's 2 hours and 20 minute's. I can't even imagine spending another 2 hour's making sure the temperature stays boiling hard, and adding hot water to keep your jars covered, it's not worth it . Not to mention that you have to cook your meat, add hot broth wipe your rims add the lid and ring adds another 2 hour's so your in it around 4 hour's, depending on if it's 8 jars or 16, you may need to add another because your cooking lot's of meat, canning is a LOT of work.

I watched some videos on pressure canning and wanted to can broth because I always make so much of it and it takes up my entire freezer. So, I decided I had to learn. I love it, but have the presto and have to watch it constantly. Now I got one of the instant pot ones that is made for pressure canning after watching a lot of reviews about that to make sure that it was good and would pressure can properly. I watched Rose Red Homestead on that as she has reviews on it. I can only can 4 pint jars at a time, but when I have small batches that is so perfect to use and even when I have a larger batch, being able to go do other things and not have to watch the canner is perfect for me. I will just have to do a batch and then another one. I don't mind that at all. It was great in the summer when I wasn't getting a lot of green beans at a time. I didn't have to fire up my presto canner and could just easily start a batch before I went to bed and they would be ready when I got up. But, it was hard to get more than 4 jars at a time of the green beans. So this was great for that. The electric pressure canner has sure helped with time management on canning a lot.

I have been doing this for a few years. I buy mine from Sam’s club. I guess I have been doing it differently from you. I do thin mine down with water and can in half pints. I pressure can for 30 minutes and use just a hair under an inch of head space. I’ve had them on my shelf for at least 6 months and never have had a problem. I have six kids and six grandchildren and some of my kids are younger than my grandkids. We eat a lot of food at my house. I have a lot of people at my house and the kids love nachos. It’s so much more economical to split up that number 9 can up so as not to waste. I also can milk. I have canned whole and 2 percent. Never a problem. I am just using up a jar of milk canned for almost 3 years and made peanut butter fudge with it. No problem at all! Blessings from Aledo Texas!

I can milk all the time….just use pint jars….as soon as the canner reaches pressure time for 5 to 15 minutes depending on how like evaporated milk you want it….some people turn off the heat as soon as pressure is reached…..been doing this for about 4 years and never had a problem…..thank you so much for the rescanning videos….going to start buying #10 cans…

At my local Walmart (Western Oregon) the price of Rico’s Nacho Cheese Sauce is up to $10.72 for the 107 oz can - definitely not a bargain for me any longer. I believe it was around $6.98 last year when I bought 3 cans. I might have to drive out to your store to stock up!

Canning cheese is not FDA approved yet they sell canned cheese and jars in store?!?! 🤔 make it make sense!!! They say they’ve never tested yet they let big corporations sell it to us!!! Again make it make sense! Thank you Tessie for the video. I’ll be trying it!!

I still boil my lids for pressure can or water bath. I find when I don't boil the lids they come unsealed, especially the ball lids.

I’ve found the same thing myself. If I boil the lids I have fewer sealing failures

I love canning just about everything. I can cheese in my pressure canner too but I didn't know they sold the number 10 cans at Walmart. Thank you for letting us know; I will be checking that out!

I always use my used hot canning water to soak the dirty dishes i used to can. Saves water, money, and time.

I'm so glad you showed this bc we use cheese sauce for everything..literally our burgers..I make breakfast burritos w it..on our eggs in general etc. We usually by Queso cheese..but I can add my own salsa to it cheaper. Ty so much for this! PS I'm actually eating pretzels w cheese lol

I thought you made it before. While doing the video you said pressure can it 35-45 Minutes. On the porch you said you canned the cheese for 1 hour. Which one would you recommend is the best? I would like to do this. Last night I canned cranberry sauce and tonight I am carmazling onions to can tomorrow. Always canning things year around. It is so relaxing and I love doing it.

It always gets me how people will watch you take something "OUT OF A CAN" and say it can not be canned. Then if you have a jar that doesn't seal... they say... put a new lid on it and reprocess it... "that is the standard". That is what you are doing... just reprocessing it. I wish USDA would get off the pot and just test dairy. There is canned milk, canned cheeses, canned sweetened condensed milk... milk in tetra packs... cheese sauces in foil pouches to make mac and cheese ect.

Hi Tessie, how tight do you put the lids on? Same as a lid and rings or slightly loser, then tighten after it comes out like tattlers or reuseable lids. Blessings from MN

No I tighten them as much as naturally to tighten it and then I don't retighten it when they cool

Tessie , when you pressure canned your milk , did you possibly wipe the rims of your jars with vinegar ? If so that is what made it curdle . It never curdles for me . I have heard that the reason USDA does not recommend/approve certain things is SOME ~ NOT ALL~ of those foods have simply not been tested by them . Soooo , canners like me & you will do the testing ~ haha ! 🤣 LOVE YOU !

No it was not that I've tried it a couple times and it curdles so I'm not sure what my problem is I'm gonna have to try it with raw milk maybe

@@HomesteadTessie , It shouldn't matter , I can regular milk , 1/2 & 1/2 , heavy cream , etc . One thing that makes a difference for me is - making sure the jars , milk & canner are @ room temperature . I only process them 5 minutes once they come to pressure ~ so you aren't cooking the milk . It does great & looks snow white .

My thought was its to much to go through before a batch goes bad? I already buy 16 oz cans of cheese sauce and freeze half of it because we cant go through it fast enough before it goes bad. That was my thought? I think its only good a few days to a week after opening?

Because of the consistency and it is so thick pressure canning it in smaller jars assures that the temperature has reached the high level throughout the sauce you can do pints if you wish it's just not what people are recommending

I think it's like any dense food, the internal temps won't get high enough in a pint jar.

Is there any chance you used a vinegar rag to wipe the rim on milk you canned? Just curious. I have canned milk following Miller Meadows method, and it turns out perfectly for me. (I use it only for cooking as a safety measure.)

I was kicked out out a canning group for sharing a recipe from Lehman’s store for pressure canned grape juice. They only went by the Ball canning book. Oops!
