it is not approved not bc it's not safe but bc in all these years the USDA has never even bothered to test dairy.. period. why? hmm the dairy lobby has been very powerful since the 40's and they don't want you doing this. they want you buying it fresh weekly at current market prices. so in over 50 years the USDA has never done a single test on dairy. But that doesn't mean it isn't safe to do. it is safe. I can cream cheese, sour cream, oat milk soy milk, whipping cream both dairy and non dairy, coffee cream and silk coffee cream. all safely with no issues.

not sure but so far I have had two year sour cream, whipping cream that lasted about 8 months, soy milk that I've had for about a year, coffee cream for 2 years, So I think it depends on the dairy but most will stay a long time. we also store ours in our dark cool basement. The sour cream looks like it curdles but if you open it and give it a quick whip, it's as if it just came out of the container. for sure worth doing. hope that helps

Just a tip for all yall. It says stores 18 months on the lids. They are good for YEARS. I just opened a jar of my canned wild black raspberry jelly from 2015. It's perfectly fine. Same with deer I canned in 2016. Just a note.

I use cheese sauce for a nacho dip ~ 2 jars cheese, 1 pound burger, 2 cans ranch beans. Put it into the crockpot and meld all the flavors. Eat as a dip for Tostitos. This is a perfect, low-cost solution for always having the cheese on hand. Thank you.

USDA "approvals"..... I've canned cheeses and kept on shelf for years. If you do it right, it stands up to time. USDA simply assumes that SOME people don't do it right, so they won't "approve" it. All you need to do....is do it right. You can simply learn, or just blindly do whatever the government tells you to do.

I wonder, what is the sell by date on the #10 can, I ask cos I would've have assumed it would've lasted more than 12 months and by recanning would've extended the time. Rosa Espinal the #10 can has abouT a year for a best by date, I would say it would be fine in there much longer than that, as long as the can is in good condition, I would still eat it after quite a few years past. we only re-can so we don’t waste any... it’s only good for a week or so in the fridge once opened... we keep a few of the #10’s in the pantry and re can as we need them. 😉

Cheese whiz is basically Velveeta in a jar. And old English is all types of different cheese with stuff added in. I've done cream and brick cheese but it's been quite a while.

I have cheese sauce thinned down with milk and butter, that was left over from a large feeding... I'm going to try to can this... but the fats from butter require longer canning times. Probably more like 45 minutes in a pressure canner, but I don't know. Do you know anything about canning with milk and butter?

The Amish can milk and butter in a waterbath canner. Cheese is fatty, too unless it's skim milk cheese. I think there are different ways to do things and it depends on how comfortable you are doing things differently. Did you ever can it? How did it turn out?

They take things off the approved list also, zucchini & summer squash used to be approved, but have been taken off the approved list... I pick up old canning books when I find them, they have loads of great info in there.
