it is not approved not bc it's not safe but bc in all these years the USDA has never even bothered to test dairy.. period. why? hmm the dairy lobby has been very powerful since the 40's and they don't want you doing this. they want you buying it fresh weekly at current market prices. so in over 50 years the USDA has never done a single test on dairy. But that doesn't mean it isn't safe to do. it is safe. I can cream cheese, sour cream, oat milk soy milk, whipping cream both dairy and non dairy, coffee cream and silk coffee cream. all safely with no issues.

not sure but so far I have had two year sour cream, whipping cream that lasted about 8 months, soy milk that I've had for about a year, coffee cream for 2 years, So I think it depends on the dairy but most will stay a long time. we also store ours in our dark cool basement. The sour cream looks like it curdles but if you open it and give it a quick whip, it's as if it just came out of the container. for sure worth doing. hope that helps

Just a tip for all yall. It says stores 18 months on the lids. They are good for YEARS. I just opened a jar of my canned wild black raspberry jelly from 2015. It's perfectly fine. Same with deer I canned in 2016. Just a note.

I'm so glad you did this video. I bought 3 cans of cheddar cheese from Sam's and wanted to can them. We go through this every time we can something that isn't recommended. My logic; If it's already in a can or jar how can it be unsafe. I'm going for it. thanks!!!

I use cheese sauce for a nacho dip ~ 2 jars cheese, 1 pound burger, 2 cans ranch beans. Put it into the crockpot and meld all the flavors. Eat as a dip for Tostitos. This is a perfect, low-cost solution for always having the cheese on hand. Thank you.

Here I've been taking up valuable space in my freezer when I get one of those big cans of cheese sauce! I didn't know you could do this! Time to get a can of nacho cheese and do this!

I found my cheese but can I water bath if I add rotel ingredients to my cheese ? If so how does it change the time. I can use dehydrated ingreds. But I’d add the green chilis I guess from a can. Help plz .😊

Does boiling for 20 minutes once canned seal it better? Should you be able to push on the cap and make a popping sound?

Thank you so, so much for this. I've already done one can! Question... do you think it is okay to make my own cheese sauce, i.e. Velveeta, Rotel, cream cheese, nacho cheese soup mix, etc... ? We like the canned stuff, but we LOVE the other. Do you think it's okay to do that as long as I process it properly? Would I process it pretty much the same way, you think?

USDA "approvals"..... I've canned cheeses and kept on shelf for years. If you do it right, it stands up to time. USDA simply assumes that SOME people don't do it right, so they won't "approve" it. All you need to do....is do it right. You can simply learn, or just blindly do whatever the government tells you to do.

I saw some jalapeno cheese sauce that I want to get. 4 Big bags but need to figure out what I can do with to preserve it first. It's 4 146oz bags, which will keep in bags but when one is opened, then what?

I wonder, what is the sell by date on the #10 can, I ask cos I would've have assumed it would've lasted more than 12 months and by recanning would've extended the time. I'm very new to canning and would like to do long term foods. I absolutely loved this very informative video. TYSVM for posting!!!!!!

Rosa Espinal the #10 can has abouT a year for a best by date, I would say it would be fine in there much longer than that, as long as the can is in good condition, I would still eat it after quite a few years past. we only re-can so we don’t waste any... it’s only good for a week or so in the fridge once opened... we keep a few of the #10’s in the pantry and re can as we need them. 😉

Cheese whiz is basically Velveeta in a jar. And old English is all types of different cheese with stuff added in. I've done cream and brick cheese but it's been quite a while.

Yes. I have done this with Velveeta, or any block of American cheese. I have also added a can of rotel to my melted velveeta, it turned out awesome!

I have cheese sauce thinned down with milk and butter, that was left over from a large feeding... I'm going to try to can this... but the fats from butter require longer canning times. Probably more like 45 minutes in a pressure canner, but I don't know. Do you know anything about canning with milk and butter?

The Amish can milk and butter in a waterbath canner. Cheese is fatty, too unless it's skim milk cheese. I think there are different ways to do things and it depends on how comfortable you are doing things differently. Did you ever can it? How did it turn out?

I have a question ma'am. What if my cheese suddenly has water inside the jars weeks after i transfered them from the can . Its like the water and the cheese has separated eventhough i never add water to the cheese. Does this mean that my cheese are spoiled?

I realize this video is a year old so maybe no one will see this, but… I also have a couple of number 10 cans of applesauce I would never be able to eat myself before it spoils when I open it. Is there a way to re-can applesauce? Thank you.

If water bath for 20 minutes and lids seal, you can store in pantry.

Please answer this sincere question without thinking it is rude or challenging in any way. I am sincerely asking because I am not sure if I should do this, but I want to. What makes you believe it is safe to can cheese, and especially using water bath when it is low acid. I want to understand.

This cheese is already processed, I wouldn't do this with reg cheese.

I'm thinking yes, I would probably pressure can, unless it has citric acid on the label, then water bath will do it.

This needs to be water bathed to can, but I do use a break bleeder to seal up dry goods.

They take things off the approved list also, zucchini & summer squash used to be approved, but have been taken off the approved list... I pick up old canning books when I find them, they have loads of great info in there.

@@HomesteadCorner I've grabbed a couple vintage canning books also. I'm going to keep on canning all I grow and buy and do it as safe as possible. I canned 18 pints of cheese sauce today and will be canning jalapenos, last years rutabagas, tomatoes, peaches and a few cucumbers in the next days. Thanks for all of your help!

I am not being critical of Homestead Corner, because nearly every meteorologist, reporter, and speaker says this: "We have 'got' clean jars ... we have 'got' a front heading our way ...The word 'got' is not necessary here because "we have clean jars" and "we have a front closing in" which is not only proper but sounds better.

I don’t think I feel comfortable with water bath canning low acid foods. Low acid foods should be pressure canned for safety.

I’ve been canning cheddar cheese and cream cheese in a water bath for over 20 years. My mother did it my entire life.... cheese IS acidic!
