If you are just trying to remove the lock cylinder from this vehicle there is no need to remove the door panel. Remove the black rubber plug on the side of the door, then remove one 10mm bolt and the lock cylinder will come right out. Be careful not to drop that bolt in the door and you're good to go

How difficult is it to swap out the oem speakers for a fresh set, I just want to buy them from Honda and swap them myself but I’m not sure if they’re plug and play or require actual electrical work.

If you are taking off the door to swap out doors you do NOT need to take off the whole panel at least in a newer model 2011 and newer!

Should you avoid doing this when your car is really cold?

I would suggest warming up the car before taking off the door panel. When its below freezing your chances of breaking something increases.
