So I cook recipes primarily from the 1940s, and I can probably shed some light on where this sort of thing comes from. Many recipes in the 1950 Betty Crocker cookbook involve making a white sauce out of butter, flour and milk. The recipes often call for miniscule quantities of spice, and rarely anything beyond salt and pepper, so I tend to add whatever smells good out of my moderately expansive spice rack (curry powder and rice go quite well with this sort of thing). Meats like chicken, tuna, crab, eggs (hard-boiled and mixed with the sauce on toast) or chipped beef are added, along with occasional vegetables like celery, peppers, etc. One recipe does include almonds and pimento. When everything has stewed in the sauce for around twenty minutes, the whole thing is placed in a 9×13 with breadcrumbs on top and baked for ~half an hour. The problem I see with Jack's interpretation of these types of recipes lies mostly in the fact that he relies on canned meat/vegetables/sauces like sour cream, and he doesn't get creative with adding complementary spices or other ingredients.

A bit late on the comment, but the deep fried butter at the state faire you mentioned (at least, assuming it's the one in the midwest I am from and that there aren't multiple state fairs with the same food options. You didn't mention it being on a stick, so I'm not 100% certain) was alright. It tasted like salted butter and batter as you would expect and I had to share it with friends to avoid an instant heart attack. At least they didn't put a bunch of powdered sugar on it like the deep fried candy bars.

I get where she is going with this. I grew up with dishes like this. Green bean casserole is of this ilk. To improve the dish I would: mix the beans, corn, pimentos, and cream soup. I would honestly say this sounds like a recipe that was developed by someone or something as a “classier” 1970/80s version green bean casserole. I’d bet Aunt Myrna got this from the back of a magazine and forgot to include salt and pepper or whatever in the various components. The whole composition, as well as the name just feels a bit too corporately developed to be independently developed by Aunt Myrna.
