Honey Chipotle Chicken Grilled on Big Green Egg with a Honey Chipotle BBQ Sauce

Chicken leg quarters are excellent on the grill and are a great choice for feeding a lot of people on a budget. For this recipe I combine smoky chipotle peppers and honey to kick up the taste.
You can find Leg Quarters at any grocery store; the ones I bought were frozen in a 4lb bag. Just let them slow thaw in the refrigerator overnight and they’ll be ready to go the next day.
There’s not much trimming to do on the leg quarter, but I do remove any unwanted fat or skin from the bone side of the meat.
For the seasoning I’m using 1 cup of my AP Rub (Salt, Pepper, & Garlic), 1 Tablespoon of Ground Chipotle Pepper, and 1 teaspoon of Ground Cumin.
Place these ingredients in a ziplock bag and shake it to combine. Pour the rub into a dredge shaker and sprinkle the seasoning on all sides of the chicken.
Any grill or smoker set up for indirect heat can be used for this cook. I’m firing up my XL Big Green Egg with a good bed of Royal Oak Lump coal and a few chunks of pecan wood for smoke.
The cooking temp needs to be around 325⁰ to get the skin soft and bite through. Once it’s up to temp place the leg quarters directly on the cooking grate and insert a probe thermometer into the meat.
I use a Smoke by Thermoworks set up with the new wifi Gateway to watch these temps on my cellphone. It’s really handy when you’re away from the pit.
Once the internal temperature reaches 170⁰ it’s time to glaze. I use 2 cups of Killer Hogs The BBQ Sauce (any quality sauce can be substituted), ¼ cup of Honey, and 2 whole chipotle peppers in Adobe sauce.
Place these ingredients into a food processor and pulse until smooth. Brush over both sides of the leg quarters and continue to cook until the internal temp reaches 175⁰. Remove each one from the grill and allow them to cool for a few minutes before serving.
The smoky heat from the Chipotle Pepper and the sweetness from the Honey turn these leg quarters into something special!

Malcom has become my legend for getting the time and temperatures for all BBQ, I also love at the end how he got the perfect spot first try to cut and separate the leg from the thigh. Usually takes me a few corrections to get around the bone.

i tried this on my Weber genesis E330 gas grill. and it worked! i got some smoke going by using a smoke box and had the burners on the ends going enough to maintain the heat at 350 degrees. and i cooked it using indirect heat and just like you did malcom, i didnt have to turn them once! they had a real nice and uniform color all the way around (just like yours did ). very simple to make. and they were great!!

Love Malcom. One thing I’d say after cooking chicken for 22 years in the grill. Brine your chicken! If you brine it for 24 hours do it. If you can only brine for an hour or two do that. Brine is the key to your next step up the ladder.

Paul B Order his BBQ sauce. Also rubs. He's mastered the right combo of spices for flavor and just as important appearance. I use his sauce straight and in many combinations for just this reason. You sell the sizzle not the steak. People open the pan or foil and gasp. "Oh Lord that looks amazing" Link to his stuff above.

Tried this recipe this weekend with skin on chicken breast. Turned out great. I followed the sauce recipe and it was good, certainly could have doubled the chipotle peppers.

Man that chicken sure looks good. One of my favorite woods to smoke with is Pecan. We have several trees on my property that donate limbs each year thanks to storms. I'm always on the look out for Pecan wood. The only problem is trying to decide whether I smoke with it or turn it on my lathe. I heard you on the JT Show I just wish I could have made the drive up to Ridgeland but I was working last weekend.
