Honey Dijon Pork and Scalloped potatoes for 2

Hi everyone. Today’s recipes are scalloped potatoes, and honey Dijon pork.

Scalloped potatoes
2 tablespoons all purpose flour
1 1/4 cups of milk
1 garlic clove, minced
1 tsp of butter or margarine
1/4 teaspoon of salt
1/2 cup of shredded cheddar cheese
4 thin onion slices
Two medium potatoes, peeled and thinly sliced .
An sauce pan, stir flour and milk until smooth. Add garlic, butter and salt bring to a boil. Cook and stir for two minutes. Remove from the heat stir and cheese until melted in a greased 1 quart baking dish, layer, onions, and potatoes and poor. Cover and bake at 350° for 20 minutes, uncover and bake an additional 20 minutes longer or until the potatoes are tender.
Honey Dijon pork
Two boneless pork chops, 1/2 inch thick
1/4 teaspoon of salt
Dash of pepper
1 tablespoon of all purpose flour
1/2 cup of orange juice divided
1/2 cup of, honey
1 tablespoon Dijon mustard
1/4 teaspoon dried basil
2 medium carrots, cut into 1 inch pieces
1 small onion cut into eighths
1/2 a small green pepper cut into squares
1/2 a red pepper cut into squares
Sprinkle pork chops with salt and pepper, placed in a heavy oven proof skillet. In a small bowl, whisk flour and 2 tablespoons of orange juice until smooth, whisk in honey, mustard, basil, and remaining orange juice. Pour over chops. Place carrots and onions around the chops. Cover and bake at 350 for 30 minutes. Add peppers cover and bake 20 minutes longer or until vegetables are tender and pork is no longer pink.
I cooked the peppers at the same time as the carrots and the total cook time for both dishes at 350° was one hour and 10 minutes. To shorten the cook time keep both dishes, covered, and cook on 400° until cooked.

I love the idea to substitute a ham steak for the pork chops. Sometimes the chops can be a bit tough, no matter how they are cooked. I also like that these two dishes can be cooked in the oven at the same time. Trying to limit the time my oven is on. Did you have any suggestions for additional seasonings for the potatoes? This is a great meal with the cake for dessert.

Hi. Definitely salt, pepper. It called for one clove of garlic. I would add more or garlic powder. Sky is the limit on seasonings.
