Wasn't that messy when you got hitched was it? I'm lucky got married at 21 and stayed married until she died of cancer 34 years later in 2014. No more women in my life since 2014. Life's good but I miss my wife. Thanksgiving was always a big thing for just the two of us.

I’m sorry you’re going through this. Don’t sit in that empty house. Go take a class at a community school. A few years ago I took a class on baking cakes and other things. I stopped because I just gave them away but my wife started making cakes for friends birthdays. Even an old guy like me enjoyed it. I was 60 at the time. I’m 66 now. Worst thing is to sit in an empty house. Get a pet to keep you company. Things will get better.

I like that you explain the reason *why* you do something and teach about flavor. Knowing how flavor works means I can substitute one ingredient for another. I don't have to go out of my way to buy it. Or worse, I'm in the middle of cooking and discover I don't have an ingredient.

Alton Brown and may I include Emerald Lagasse certainly deserve recognition for introducing millions to the science and fun of cooking. Chef JP is on another level. Yet it’s so simple even a child can do it. (Lucky for me). All 3 are in the same category as Julia Child. I’ve learned a ton from them all but Chef JP has helped me elevate my cooking skills tremendously.

I tried this recipe today. I didn’t have an orange so I used lemon zest ( with the grater up the correct way). I also didn’t have balsamic vinegar so I used balsamic salad dressing, which contained numerous herbs. Other than that, I followed your method exactly. Best carrots I’ve ever cooked. I am a 63 years old married man and had my wife doing the cooking for 35 years. In 2020 during the pandemic I started cooking from mere boredom. I discovered the big number of great YT chefs, of which one of my favorites is Chef Jean Pierre. Now, I look forward to the cooking every day. My wife and I finally have a common hobby. I am German and fortunately, from my place it is a just 20 minutes drive to France, where the supermarkets add to the variety of the german markets (they are good, but a whole, fresh rabbit is hard to find here). Thank you for your inspirating videos. I must watch my weight, though.

Regarding the cooking of certain vegetables, I had always been taught that if it grows underground, you start it in cold water, if it grows above ground, you throw it into boiling water... Yeah? Hey, chef, I'm definitely going to make it this year for Thanksgiving! One thing I've been seeing a lot from other KZbinrs is that instead of cooking the turkey whole, they butcher it and cook it in parts, so it takes less time. I'd love to see your version of this.

When I was small, Graham Kerr’s original TV show the galloping gourmet he did carrots with butter, sugar a little water and cognac. It was actually one of the very first things I learned to cook. I’m definitely gonna try this because it looks so good.

I made your carrots. I cooked them with 2 beef bullion cubes in the water(I always use beef Bullion cubes) then glazed with butter honey and orange concentrate

This is just what I need. I don't have any orange concentrate, but I have two oranges and a pound and a half of carrots, and everything else. I used to do something like this, but I would cut the carrots smaller and cook them in butter... then add honey. But I need to try the gastrique, because it's something new.

Thanks Chef! I have carrots from the garden to eat up so I made this (substituted with red wine vinegar for the vinegar and thyme for the herb) and it turned out really good! I was a bit skeptical about adding honey to something already sweet as a carrot but it really worked well.
