Wow. So I ran across an imstagram short of this video on fb. Found this KZbin video. I make my own yogurt and will be trying this recipe for sure. I love your bread pan too. I must have some of these. Thank you for the wonderful video, inspiration, and excitement for a new bread❤️

Hi! I made this yesterday and I’m so pleased with the result 🤩 It was my first attempt at making something else than “normal” SD bread. Thanks for sharing your recipes in such detail ❤️ One question? Do you bake with steam? I added a bit of boiling water and kept it in the oven for about 20 minutes but I didn’t know if it was necessary.

For yeasted dough, try this 600g bread flour 30g sugar 30g honey 5g instant yeast 10g salt 200g milk 200g yogurt 40g butter

All purpose flour has lower protein, it might be channeling to knead up to get the gluten and window pane, lower the hydration if you use AP flour.

Happy to see some nice bread recipes Chiew!! I’ve been making shokupan for a few weeks now and your video is very timely for me. Thank You. One question: is the reason for the final “tri-fold and roll” for creating layers, or is it for building-in more strength?

Thank you 😊. The shaping is for both the reason, strength of dough to bloom as well as giving more shreddy crumb than just round the dough as a ball.

Sourdough starter is cultivated from flour and water. You can refer the highlights in my Instagram page on how to make it from scratch and maintain it.

Hi, I want to make the yeasted version. Can I ask if my room temp is higher then 28c, for 1st proof, I should go for double in size? And for 2nd proof, test with usual method by lightly press dough n it should slowly bounce back? Thank u 🙏

For yeasted, first proof double the dough. Second proof can judge with the dough size in tin

Hi. I made this yesterday but the bread has a hint of sourness. Didn't use the sweet starter immediately after it has tripled. Could this be the reason for the slight sour taste in the loaves?

Yes possible. Also the stringer the starter the lesser the sour note.

糖硬种的糖是製造滲透壓(osmotic stress),壓抑菌(LAB)的繁殖,從而壓抑酸化。這是用在甜麵糰裡減少或去除酸性的一個辦法。和波兰种,汤种是不一样原理。

Yogurt yield soft and moist bread. SSS and yudane are two different thing. SSS is a starter that rises the dough while yudane is not.
