Well done. I used to transit in HK quite often, and sometimes had stop-overs for a few days just to enjoy the vibrant city, the very last time was 1/1/2020. Hopefully I can make it again before too long.

First, leave Cantonese name behind and use Mandarin name for English name stations. Taiwan may speak hokkien but don't use their pronunciation for location name for English

With my greatest respect, why would you want to do that? China uses Pinyin for station names in English, because Putonghua, or Mandarin, is the language everyone speaks. In Taiwan, not everyone knows or speaks Hokkien, and their most popular language is also Mandarin. In Hong Kong, however, everyone speaks Cantonese. I say this without any political intent, but it's simply a fact. You don't see people in the streets of Hong Kong communicating with Mandarin. Heck, you don't see government officials use Mandarin as a default.

@@Jeremy_Y Exactly. Using mandarin will just make things more difficult for many people, especially when foreigners ask for directions from locals who don't speak mandarin.

@@John7204. His meaning is that, Taiwan(whose mother tongue is hokkein), still uses mandarin pinyin as metro name; while Hong Kong should follow and rename all stations into mandarin pinyin
