This is amazing to see Mr Lam's passion and sincerity towards traditional fish balls. Thank you very much Sam and Vienne for highlighting and sharing this legendary restaurant with us. Hope the traditional method of fish ball stays on and I wish to taste it on my next visit to Hong Kong. There is so much to learn from Mr Lam for food business or any business in general. His words of wisdom is for everyone across the world and not just Hong Kong. Congratulations for the arrival of Miya Evans :)

Thanks Satish as always for your great comment! Yes, Mr. Lam is indeed sincere and passionate about his fish balls and a true legend of traditional HK food in our eyes. He is determined to continue for as long as possible, so we are confident you will be able to try these on your next visit (providing, travel starts up again in the not too distant future)! Thank you for your kind words Satish, we are over the moon, and mummy and baby doing well :)

Great story from Mr. Lam. He said he used yellow eels to make his fish ball, but they look like belt fish to me and didn't specified amount of the fish pieces he used through out the day. Curry fish balls are one of its common street food there. The crispy fish skins would be a good topping for salads.
@HongKongHoods
@HongKongHoods 2 жыл бұрын
Thank you for watching and for your comment. To be more precise, the eel in question is a kind of pike conger eel found in southern China. As for using the fish skins as a salad topping, that sounds like a brilliant and delicious idea!

I think it's a shame that despite being traditionally hand crafted (and I know they do also make a lot using old machinery), there isn't that much premium added to the hand crafted stuff.
