Learn how to make HK style mango pancakes. While the name suggests it's a pancake, it's really more of a crepe! This asian dessert starts off with a thin pancake which is then layered with delicious whipped cream and fresh mango. It is then wrapped up into a roll, resembling a beautiful yellow pillow. This mango pancake is bound to please your tastebuds and impress any friends or family.
If you've never had or made an asian dessert before, this is a great place to start! It's easy to make and can be whipped up in just 10 minutes! It's a fast dessert recipe that can be used any time you want a little treat.
While other people may dye their batter with food colouring for the yellow colour, this recipe uses custard powder to give it a natural yellow tint.
note: this recipe makes 2 crepes / pancakes that are 8inch wide.

Instructions:
1. Melt butter
2. In a large mixing bowl, add flour, custard powder and powdered sugar.
3. Then add milk, egg and the melted butter. Whisk until it is combined and relatively lump free
4. To ensure we get smooth pancakes, strain the batter through a sieve.
5. Head over to the stove, grab a pan (mine is 8 inch) and turn it on low heat. Add some oil so the pancake doesn't stick. Pour half of the batter into the pan, slightly tilting the pan around as you go to ensure it is evenly distributed throughout.
6. Cook the pancake on low heat until bubbles start to form and the top is set. DO NOT FLIP THE PANCAKE.
7. Transfer the pancake to a wire rack to cool then repeat with the rest of the batter.
8. Once the pancakes are complete, we can start to prep the filling of this hong kong dessert. Grab a bowl and combine heavy cream, powdered sugar and vanilla extract. Mix with a hand mixer until stiff peaks form. Set it aside.
9. Grab a mango and slice it into two halves, getting as close to the seed as you can without cutting the actual seed. Grab each half and scoop out the flesh using the spoon. One half of the mango will be used for each crepe.
10. Assembly time! Grab a crepe and make sure the smooth side is facing DOWN. Add a dollop of whipped cream near the middle/bottom of the crepe then place the mango on top.
Fold up the bottom of the crepe, covering the mango. Fold in the two sides. Then fold the whole crepe over until it reaches the end of the crepe.
11. Chill the mango pancake for 30 minutes before serving. This chill time will give the cream some time to sit and it helps hold its shape. You can skip this step if you're eating it yourself. I wouldn't skip if I were serving it for guests since it really helps with the presentation.
12. Cut in half to serve. Garnish with more whipped cream if desired.
