These are milk flavoured cookies. They're meant to be a crisp cookie, so roll the dough out flat! They can be eaten on its own or made into a sandwich cookie. I personally like a whipped chocolate ganache filling. Not only is it easy to make (it's just 2 ingredients!) but it's delicious as well! The chocolate flavour compliments the milk flavour.
These can be cut into any shape, but I chose fish because I made this as part of my Lunar New Year baking. While the cookies themselves are not a traditional item that's made, fish is a popular item at new year dinner. The pronunciation of fish is "yu" which translates to surplus. It symbolizes wealth and prosperity for the new year hence the reason it's at the table every new year.
Instructions:
1. Melt butter in the microwave. Let it cool slightly.
2. In a bowl, mix together the melted butter, egg yolk and milk.
3. Sift in all the dry ingredients (flour, milk powder, powdered sugar and salt)
4. Mix everything together until a dough forms (optional: dye the dough if you want coloured fish)
5. Roll the dough out thin
6. Cover and refrigerate the dough for 1 hour
7. Cut shapes in the dough. Once you've cut all you can, ball up the remaining dough and roll it out flat again then continue to cut shapes until there's no more
8. Bake the cookies at 320F (160C) for 8-10 minutes. You want a crisp cookie!
9. Let the cookies cool and consume as is or fill it with whipped chocolate ganache.
whipped chocolate ganache:
1. In a small sauce pan, heat up the cream until it simmers
2. Place the chocolate in a bowl. Pour the hot cream overtop the chocolate
3. Let the mixture sit for 3 minutes then mix until it's well combined.
4. Cover the mixture. Place the plastic wrap directly onto the chocolate ganache to prevent a crust from forming.
5. Refrigerate for at least 2 hours
6. Using a hand mixer, mix the chocolate ganache until it's fluffy and has the consistency of cookie filling.
7. Fill the cookies with as much whipped chocolate ganache as you'd like
8. Enjoy! : )
