Grind settings will vary depending on the coffee bean. A good grind setting to start from is about 10 and work your way down if the extraction is too fast. On the barista pro aim for about 25-30 seconds for a double shot. A scale comes in handy to measure 18-20g of coffee in your basket.

A good rule of thumb is grinder finer if it's sour and grind courser if it's bitter. Aim for a brew time of 25-30 seconds from when press the start button. Looks for a 2:1 ratio. If you're using 18g of coffee, you want 36g of liquid. Another important note is to increase the temp for lighter roasts, it helps with sourness, and decrease the temp setting for darker roasts, it helps with bitterness. Every grinder is different, and every coffee requires a different grind.

@@tzhaki2354 well for the breville touch, there are settings and they're pretty uniform from what i've used in comparison to my aunts. My inner boars are now at 4 and i just use hottest settings for good pour and just alternate grind settings on my grinder. Usually for dark/medium roasts for me somewhere between 11-14 has been a good range for good shots with those settings, getting the 1:2 ratio.

@@ivanr9408 Don't use hottest setting all the time, you can overextract darker and medium roasted coffees easily, I think that's why your shot time is so short. Turn your temp down and grind finer then play around with grind size from there.

Easy to have such crema if you use coffee beans blended with a higher amount of Robusta and on beans that were roasted within the last couple of days. Does not necessarily mean it s going to be tasty

I believe the paper causes the same effect that a pressurized basket does. So I’m starting to believe it’s fake cream. Can you see the difference with and without a paper filter? I do notice more with the paper myself.

@@Destinyirus278 above comment is not true. The crema on the coffee shot comes naturally when the dose/yield and extraction are all set properly. For a machine like this the basket size is 18g, so that is your dose, the yield should be approximately 1:2 ratio which should give an espresso shot of approximately 36g. Next is ensuring extraction time is correct, which should take between 25-30 seconds. If all of these things remain consistent then natural crema should form and the coffee should taste heaps better.

They don't because you likely don't have the same beans, you don't have the same grinder, you don't have the same machine, and you very likely don't have the same climate. Instead of calling people selfish, why don't you learn something and figure it out yourself. I'll even help: fresh beans, 18 grams (assuming you have an appropriately sized basket, because that's another variable), 36 grams of espresso out, in 25-30 seconds. Grind so fine that it chokes the machine. Go gradually coarser until it doesn't, and gets you that 25-30 seconds. THAT is the starting point you want, not criticising others.

If I go one size finer on the grinder, it chores and taste super bitter, if I go one size coarser it flows too fast (under 20sec) and taste super sour. I'm at loss. I'm stuck between two sizes and I already trying changing the dose up and down as well. I can't get that sweet spot. What do we do when we get stuck between too fast and too slow between two grinder numbers beside each other? Assuming the grinder can make 0.5 adjustment 😅

@@erjonhiseni7502 probably need to do a finer grind. A grind that’s too course let’s water run through the ground too easily, resulting in a watery, thin, and sour shot. I use a semi-cheap grinder, the Breville Smart Grinder Pro, with my also semi-cheap machine, Breville Duo Temp Pro. Grind setting 8 - 10 depending on the bean does me well, even though the grinder manual recommends 12 which gives a sour and thin espresso shot.
