Good job being clear, thorough and simple. I might suggest adding the regulatory element in the country or region. AVAs in the United States and the appellation systems in France, Italy and Spain [as well as the rest of the "new" wine world], have a rating like AOCa for top Spanish wines and Gran Cru for top French wines, and within these levels are minimum requirements for aging, both in oak and in bottles before being released for sale.

I'm going to make wine with the berry of the Curry or Murrayah Tree. It's the size of a currant but is mostly one or two big seeds. This will be challenging to crush. I was wondering if they could be cooked in a moderate amount of fruit juice and lightly mashed so as to not add the seed flavor to the wine.

Normally, its done where grapes are not fully ripe/sugar content is low or also to increase the alcohol percentage. Adding sugar can also help counterbalance the acidity and create a more harmonious flavor profile.
