It may alter the texture of the buns... I haven’t done a gluten free version but please give it a try and let me know how it goes.

Hi Chef Would freezing half the dough for later use be a good idea? I'm the only one with a sweet tooth in this house 😅

Make half a batch like I did ... trust me, your family will dig in once they smell the goodness 😉 You can definitely freeze the raw buns (without the topping). To cook from frozen... thaw the buns completely at room temperature then bake as per the recipe, enjoy! 😊
